- In a large bowl, cream the butter, brown sugar and spices until light and fluffy. Beat in ice cream. Cover and freeze until firm., For each serving, place 1/3 cup ice cream mixture in a mug; add 2/3 cup cider. Stir in brandy if desired.

Steps:
- Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
- Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

Steps:
- Sprinkle a thin layer of sugar on a plate. Moisten the rim of a martini glass with grenadine syrup; hold glass upside down and dip rim into sugar. Add apple juice to glass; gently stir in liqueur and food coloring.

BOURBON CIDER SIPPER

- For the clove simple syrup: Combine the brown sugar, cloves and 1 cup water in a pan and heat until the sugar is dissolved. Allow to cool and sit for 2 to 3 hours; strain off the cloves before using. (Store any remaining syrup in a sealed jar, refrigerated, for up to 1 week.)
- For the cocktail: Add the bourbon, lemon juice and clove simple syrup to a shaker and add ice. Shake vigorously and pour into a highball glass. Top with hard cider--and if you're feeling fancy--garnish with an apple slice studded with a few whole cloves. That part is optional though. As are pants.

- Bring to a full boil, reduce heat to a simmer.
- Simmer for 2 hours.
- Cool to room temperature.
- Add Everclear and chill.
