APPLE CIDER GELATIN SALAD

- In a small bowl, sprinkle gelatin over cold water; let stand for 1 minute. , In a large saucepan, bring cider to a boil; stir in the gelatin mixture and sugar until dissolved. stir in lemon juice, cloves and salt. Pour into a large bowl. Refrigerate until slightly thickened, about 1 hour., Fold in apples, walnuts and celery. Pour into a 1-qt.dish or individual dishes. Refrigerate until firm, about 2 hours., For topping, in a small bowl, combine the sour cream, mayonnaise and sugar until blended. Dollop over salad; sprinkle with cinnamon. Serve with cinnamon sticks if desired.

CINNAMON APPLESAUCE JELLO SALAD
I was looking for cool summer salad and found this one on the internet. This turned out really good although next time I may use Cool Whip instead of the cream cheese, since my hubby is not a big fan of cream cheese. The red hots give it a good taste, not at all hot just a good cinnamon flavor.

Steps:
- Dissolve 1/2 cup red cinnamon candies in 1 cup boiling water until all the red is off, leaving little white candies.
- Dissolve Jello with 2 cups boiling water. Mix together red liquid ONLY with Jello. Stir in applesauce.
- Chill until partially set. Add walnuts. Mix softened cream cheese, milk, mayonnaise and spoon onto top.
- Swirl through salad to marble.
- Chill to firm. Use a 9x13 inch pan.

- In a bowl, dissolve candies in water (reheat if necessary). Add gelatin; stir to dissolve. Stir in applesauce. Pour half into an 8-in. square pan that has been lightly coated with cooking spray. Refrigerate until firm. Cover and set remaining gelatin mixture aside at room temperature. , Meanwhile, combine the cream cheese, Miracle Whip, pecans and celery; spread over chilled gelatin mixture. Carefully pour remaining gelatin mixture over cream cheese layer. Chill overnight.

- Place water and red hots into a medium size pan. Whisk water and red hots constantly over medium heat till red hots are completely dissolved (remember to keep whisking because red hots like to stick at the bottom of pan). Bring to a boil and add jello; stir to dissolve 2 minutes. Take off heat and add applesauce. Pour mixture into a 8x8 inch glass baking dish or medium size glass bowl. Chill 4-5 hours or till set. When jello has set, beat heavy cream with mixer till almost stiff. Add sugar and vanilla and beat till stiff. Top jello with whipped cream and serve.

- Combine Red Hots and water in saucepan and boil until candies melt.
- Pour hot mixture over gelatin in mixing bowl. Stir well to dissolve the gelatin. Let mixture set until slightly thickened (about the consistency of raw egg whites).
- Beat thickened gelatin mixture with electric mixer until foamy.
- Add apple mixed with lemon juice, pecans (if using) and marshmallows.
- Fold in whipped topping.
- Pour into serving bowl, cover and refrigerate until serving time. This can also be made as a molded salad, if you like.

This is a good, easy, make-ahead salad. You can find cinnamon red-hots in the cake-mix aisle of the supermarket; their flavor is not overpowering in this salad. I like to serve this at holiday time. I got this recipe from my "cousin-in-law." Cooking time is actually chilling time.

- Dissolve the cinnamon red-hots in 1/2 cup of the boiling water. Dissolve the cherry jello in remaining 1 cup boiling water. Add the dissolved cinnamon water and refrigerate until the consistency of unbeaten egg whites.
- Fold in the chopped apples which you have tossed with a little lemon juice, celery and pecans. Pour into mold and refrigerate until set.
- NOTE: Sometimes I use only 1 cup total boiling water for dissolving the red-hots and jello. I then leave out the remaining ingredients and add a 16-ounce can of applesauce. Pour into a mold and refrigerate until set.

- Remove water from heat.
- Add both packages of jello and stir until completely dissolved.
- Add strained applesauce and mix well.
