In Scottsdale, Arizona, Christine Campos swirls convenient crescent roll dough with a spiced apple filling for homemade appeal. "The apple flavor is simply wonderful," she reports. "For an extra-special touch, drizzle the rolls with a confectioners' sugar glaze."

1/3 cup water
1/3 cup butter
1-1/3 cups sugar, divided
2 tubes (8 ounces each) refrigerated crescent rolls
3 cups finely chopped peeled tart apples
1 teaspoon apple pie spice

Steps:

  • In a saucepan, combine water, butter and 1 cup sugar; cook over medium heat until butter is melted and sugar is dissolved. Set aside., Unroll each tube of crescent roll dough into a rectangle; seal seams and perforations. , Combine the apples, pie spice and remaining sugar; sprinkle over dough to within 1 in. of edges. Roll up, jelly-roll style, starting with a long side. Cut into 1-in. rolls; place in a greased 13-in. x 9-in. x 1-in. baking dish. Pour syrup over rolls., Bake at 350° for 20-25 minutes or until golden brown. Serve warm.

1/2 cup butter or margarine
2 cups sugar
2 cups water
1 1/2 cups Gold Medal™ self-rising flour
1/2 cup shortening
1/3 cup milk
2 cups finely chopped peeled baking apples (2 medium)
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Place butter in 13x9-inch (3-quart) glass baking dish; place in oven to melt. In 2-quart saucepan, mix sugar and water. Heat over medium heat, stirring frequently, until sugar dissolves. Set aside.
  • Place flour in medium bowl. With pastry blender or fork, cut in shortening until mixture looks like coarse crumbs. Add milk; stir with fork just until mixture begins to pull away from side of bowl.
  • On lightly floured surface, knead dough just until smooth. Roll out dough to 12x10x1/4-inch rectangle.
  • In medium bowl, gently stir apples and cinnamon until coated. Sprinkle apples evenly over dough. Beginning with long side, roll up jelly-roll fashion. Cut into 16 slices, each about 1/2 inch thick. Arrange slices in baking dish over melted butter. Pour sugar syrup carefully around and over rolls. (This looks like too much liquid, but crust will absorb it.)
  • Bake 40 to 45 minutes or until golden brown. Cool 15 minutes before serving.

2 cups dry biscuit mix
1/3 cup milk
¼ cup sour cream
2 TBs soft margarine
½ up packed brown sugar
1 cup peeled, chopped apple
1 tsp ground cinnamon
2/3 cup icing sugar
1 TB water

Steps:

  • In large bowl, combine biscuit mix, milk and sour cream; mix gently until just combined. Turn dough onto floured surface, knead 8 to 10 times. Roll dough into 14 x 10 inch rectangle. Spread dough with margarine; sprinkle with brown sugar, apples and cinnamon. Roll up dough lengthwise, jelly-roll fashion. Slice into 12 pinwheels. Place each pinwheel, cut side up, in lightly greased muffin tin. Bake in 425 F oven for 15 minutes or until golden brown; cool 5 minutes before removing from pan. Combine icing sugar and water, adding enough water to make a spreadable icing. Carefully remove pinwheels from tin; spread with icing. Note: I use milk instead of water in the icing. I also add a dash of vanilla extract to the icing. The recipe doesn't call for nuts, but chopped pecans are delicious in the filling, too.

6 tablespoons molasses, divided

Steps:

  • Make baking powder biscuit dough according to package directions.
  • Knead on a floured board for 30 seconds.
  • Roll out a 1/2-inch thick oblong shape. Spread with butter.
  • Combine apples, nuts, raisins, sugar and cinnamon; mix well; spread on dough.
  • Pour 2 tablespoons molasses over all.
  • Roll up jelly-roll fashion, cut in 12 1-inch slices, place in greased baking pan about 1/2-inch apart.
  • Pour 1 teaspoon molasses on each pinwheel.
  • Bake at 400°F for 18 to 20 minutes or until golden brown.
  • Makes 12.

1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 cup finely chopped walnuts
1/2 cup dried currants
1 tablespoon butter or margarine, melted
3/4 cup powdered sugar
1/4 teaspoon vanilla
1 tablespoon milk

Steps:

  • Heat oven to 400°F. Line cookie sheet with parchment paper. In medium bowl, stir Bisquick mix and 1/2 cup milk until soft dough forms. Place dough on surface generously sprinkled with Bisquick mix; roll in Bisquick mix to coat. Knead 5 times.
  • Press or roll dough into 11x8-inch rectangle. Spread dough with 1 tablespoon softened butter. In small bowl, mix granulated sugar, cinnamon, walnuts and currants; sprinkle over top of dough; press in slightly. Starting with an 11-inch side, roll up dough tightly; seal edge. Cut into 3/4-inch slices. Place slices on cookie sheet. Brush slices with 1 tablespoon melted butter.
  • Bake 8 to 10 minutes or until golden brown. Remove from cookie sheet; cool 10 minutes.
  • Meanwhile, in small bowl, mix glaze ingredients, adding milk, 1 teaspoon at a time, until glaze is thin enough to drizzle. Drizzle glaze over warm pinwheels. Serve warm.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • In a large bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles coarse cornmeal. Add milk all at once to dry ingredients and stir with a fork until a soft dough is formed. Turn dough out onto lightly floured surface and knead gently 8 to 10 times. Roll out to a 12 inch square.
  • Gently spread butter over dough. Combine brown sugar, cinnamon and raisins. Sprinkle evenly on top of dough. Roll up dough lightly like a jelly-roll. Seal edge. Cut into twelve 1 inch thick pieces. Place in prepared muffin tins.
  • Bake in preheated oven for 14 to 18 minutes, until golden. Remove from heat immediately. Serve warm.
