2 cups all-purpose flour
1/2 cup yellow cornmeal
1/3 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup melted butter
1 apple, peeled and coarsely chopped
1/2 cup corn kernel

Steps:

  • Preheat oven to 425 degrees.
  • Spray muffin tin generously with nonstick spray.
  • In a large bowl, combine flour, cornmeal, sugar, baking powder and salt, blend well.
  • In a separate bowl, combine the milk, egg and butter.
  • Add the apple and corn to the liquid ingredients and then pour over the dry ingredients.
  • Mix lightly until all are slightly moist, the batter will be lumpy.
  • Fill muffin cups two-thirds full and bake about 30 minutes.
  • Tops will spring back when touched.

1/2 cup applesauce
1/4 cup milk
1 pkg. (8.5 oz.) corn muffin mix
4 fully cooked pork sausage patties, chopped
1 small Granny Smith apple, chopped
2 Tbsp. KRAFT Shredded Mild Cheddar Cheese

Steps:

  • Preheat oven to 400ºF. Beat egg, applesauce and milk in medium bowl with wire whisk until well blended. Add muffin mix; stir just until moistened. Stir in all remaining ingredients except cheese.
  • Spoon into six 2-1/2-inch muffin cups sprayed with cooking spray.
  • Bake 12 min. or until wooden toothpick inserted in centers comes out clean. Sprinkle with cheese. Bake an additional 3 min. or until cheese is melted. Cool in pan on wire rack 5 min. before removing muffins from pan. Cool to desired temperature.

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

1-1/2 cups shredded cheddar cheese, divided
1/3 cup grated Parmesan cheese
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
2 medium tart apples, peeled and chopped

Steps:

  • In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full.   • Heat oven to 375°F. Grease 8-inch square or round glass baking dish with shortening or cooking spray. In 12-inch skillet, melt 2 tablespoons butter over medium-high heat. Steps:

  • Preheat oven to 350°. Stir together apples and 1/4 cup brown sugar. In another bowl, combine cornbread mix, oats, cinnamon and remaining brown sugar.
