APPLE CRANBERRY BREAD
Cranberries lend a burst of tart flavor and bright color to this quick bread sent in by Phyllis Schmalz of Kansas City, Kansas. Dotted with crunchy nuts, slices of the moist loaf are good for breakfast with a cup of coffee or as a snack anytime of the day.

- In a large bowl, combine the flour, sugar, baking powder, cinnamon, baking soda and salt;. In a small bowl, whisk eggs and oil. Stir into dry ingredients just until moistened (batter will be very thick). Fold in apples, cranberries and walnuts. , Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Steps:
- Preheat oven to 375 degrees.
- Unroll crescent dough and place in bottom of 9x13 inch baker.
- Lightly sprinkle with flour.
- Roll dough until perforations are sealed and dough is flat.
- Peel, core and slice apples. Cut into quarters.
- Combine sugar and spices in bowl. Add apples and toss lightly.
- Place apple mixture down center of dough, approximately 2-inches wide.
- Cut 10 slits, about 3/4 inch wide on each side of dough surrounding apple mixture alternating dough strips from one side to the other. Fold ends over to seal.
- Melt butter in Micro just until it liquefies; do not boil.
- Brush with butter. Bake 30 minutes.
- Cut and serve warm. Combine sugar and milk for glaze.
- Stir until smooth. Pour over warm braid.
APPLE-CRANBERRY PUFF PASTRY STRUDEL SLICES
This is so easy to make! Yield is only estimated, depending on how large you slice the strudel roll. This recipe can easily be doubled to make two rolls, and raisins can be used in place of dried cranberries.

Steps:
- Thaw the puff pastry sheet at room temperature for 30 minutes.
- Place the cranberries in a bowl and pour hot water to cover; let sit until plump (about 20 minutes).
- Set oven to 375 degrees.
- Lightly spray a baking sheet with cooking spray.
- In a small bowl whisk together egg and water; set aside.
- In a medium bowl combine sugar, flour, cinnamon, sliced apples, cranberrie (or raisins if using) juice from 1/2 lemon and lemon rind; toss to combine; set aside.
- Unfold the puff pastry onto a lightly-floured surface and roll into 16x12-inch rectangle.
- With the short end facing you, spoon apple mixture onto the bottom half of the rectangle to within 1-inch of edges.
- Starting at the short side roll up in jellyroll fashion.
- Place seam side down onto baking sheet, then tuck ends under to seal.
- Brush the roll with egg mixture.
- Cut several 2-inch slits about 2-inches apart on top.
- Bake for about 30-35 minutes or until golden.
- Cool on baking sheet on a wire rack for about 30 minutes (or more, do not slice before the 30 minutes or the filling will spread).
- Using a sharp serrated knife slice the baked strudel and serve warm sprinkled with confectioners sugar if desired.

CRANBERRY APPLE BREAD
This bread is a holiday favorite in our family. It's very festive and is a wonderful breakfast bread for Thanksgiving and Christmas morning. I like to prepare my bread batter ahead of time and thaw it out the night before I serve it. Just pop it in the oven in the morning and you have fresh breakfast bread. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch baking pan.
- Stir together apples, sugar and oil. Add egg; mix well. In a separate bowl, sift together flour, baking powder, baking soda and cinnamon. Stir flour mixture into wet ingredients, mixing just until dry ingredients are moist. Stir in cranberries and walnuts. Spread batter into prepared pan.
- Bake in preheated oven for 35 to 45 minutes, until toothpick inserted into center of loaf comes out clean.
