1 cup sugar
2 large eggs, room temperature
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder

1 can (14 ounces) whole-berry cranberry sauce
1/2 cup chopped walnuts
OPTIONAL GLAZE:
1/3 cup confectioners' sugar
1/2 teaspoon almond extract
2 to 4 teaspoons warm water

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition., Spoon a third of the batter into a greased 9-in. square baking pan. Top with a third of the cranberry sauce. Repeat layers twice. Sprinkle with walnuts. , Bake 60-65 minutes or until a toothpick inserted in cake portion comes out clean. Cool on a wire rack., For glaze, in a small bowl, mix confectioners' sugar, extract and enough water to reach a drizzling consistency. Spoon over cooled coffee cake.

Number Of Ingredients 15

For the streusel topping:
1 cup oats
3/4 cup white rice flour
1 cup brown sugar, well packed
1 cup chopped nuts (optional)
1/2 cup melted unsalted butter
Pinch of ground cinnamon
For the cake:
1 pound (grapefruit-size portion) Apple Cider Brioche
Unsalted butter, for greasing the pan
2 small apples (1 tart and 1 sweet), thinly sliced
1 pear, thinly sliced
3 tablespoons brown sugar
Grated zest of half an orange
1 1/2 cups streusel topping (above)

Steps:

  • Prepare the topping:
  • Combine all streusel ingredients in a bowl and mix until the butter is incorporated. Do not overmix-you want a crumbly texture. Set aside.
  • Assemble the cake:
  • Grease an 8- inch round spring-form pan with butter. Set aside.
  • Toss the apples, pear, brown sugar, and zest together in a small bowl and set aside.
  • Dust the surface of the refrigerated dough with flour and cut off a 1-pound (grapefruit-size) piece. Divide the dough in two equal pieces, dust with more flour and quickly shape them into rough balls.
  • Press the first piece of dough into the spring-form pan.
  • Top with half of the apple and pear mixture, then sprinkle half of the streusel topping over it. Repeat with the next layer of dough, apple and pear mixture, and streusel.
  • Allow the cake to rest for 60 minutes.
  • Preheat the oven to 350°F.
  • Bake the cake in the middle of the oven for 55 minutes.
  • Allow to sit for about 15 minutes, then remove it from the spring-form pan.
  • Allow to cool before serving.

  • Instructions:Preheat over to 325. Prepare pans. Sometimes I make this in loaf pans, sometimes as muffins, sometimes in ramekins. It's up to you.Mix apples and sugar in a large bowl and set aside. Mix eggs, oil and vanilla in a separate bowl. Combine flour, baking soda, cinnamon, allspice and salt with a fork in yet another bowl. Next, combine egg mixture with apples and sugar. Combine flour mixture with apple mixture. Mix thoroughly it's very chunky. Then add raisins, cranberries, nuts and butterscotch bits into mixture until evenly distributed. Bake for 25-30 minutes. You may need to bake a little longer for loaf or bundt pans. Check with toothpick. Serve warm or at room temp. For added moisture, drizzle with Bourbon Sauce. (see below.)Melt butter over medium heat. Add brown sugar and Bourbon. Simmer on low heat, stirring often to cook off some of the alcohol, about 5 minutes. Poke holes in surface of warm cake with wooden skewer and drizzle with sauce. Cover and let stand for a least an hour before serving. Most of his relatives are OK with canned, but not Michael, which is why he came up with this flavorful sauce. "This is my attempt to sway my family with the magic of bourbon," he says.

2 cups sugar
1/2 cup bourbon
2 cinnamon sticks
2 large coins peeled fresh ginger
Zest of 1 orange, plus juice of 4 oranges
1 pound (about 4 cups) cranberries, thawed if frozen
1 vanilla bean, split lengthwise and seeds scraped

Steps:

  • Combine the sugar and bourbon in a 1-quart saucepan, stirring well. Add the cinnamon sticks, ginger and orange zest and juice. Bring to a boil over medium heat, stirring to dissolve the sugar. Reduce the heat to medium low and simmer until the liquid begins to reduce a bit, 5 to 7 minutes.
  • Add the cranberries and vanilla bean and seeds to the pan and continue to simmer until the cranberries are soft and breaking apart and the sauce begins to thicken, 12 to 15 minutes. If desired, mash your cranberries with a sturdy whisk or potato masher, just to break them up, and simmer to thicken a little bit more, about 5 minutes.
  • Remove the pan from the heat and discard the cinnamon sticks, ginger pieces and vanilla bean. Let the sauce cool. Serve warm or at room temperature, or refrigerate for up to 10 days - the flavors only get better as they chill out in the fridge.

3/4 cup molasses

  • Meanwhile, stir butter, cornstarch and cinnamon in a cup until smooth. Reduce heat to low; whisk into cider mixture. Simmer 1 minute or until slightly thickened. Serve warm or room temperature.
