Slow-Cooker Cranberry-Walnut Stuffed Apples image

This is the perfect dessert for a crisp autumn day. Be sure to use large baking apples such as Rome or Golden Delicious -they'll have just the right tenderness. Enjoy leftovers for breakfast the next day with a dollop of Greek yogurt.

3/4 cup walnuts, toasted and chopped
1/2 cup chopped dried cranberries
1/3 cup packed light brown sugar
1/3 cup rolled oats
3 tablespoons unsalted butter, cut into small pieces
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
Kosher salt
4 large or 6 medium firm baking apples (such as Rome, Golden Delicious or Honey Crisp)
1 cup apple cider
Vanilla ice cream and pure maple syrup, for serving

Steps:

  • Combine the walnuts, cranberries, brown sugar, oats, butter, lemon juice, cinnamon and 1/2 teaspoon salt in a small bowl and squeeze together until a wet and sandy mixture is formed.
  • Scoop the core out of each apple with a melon baller, taking care not to scoop completely through to the bottom or the sides. Stuff each apple with some of the cranberry-walnut mixture. Place the apples in the slow cooker insert and pour in the apple cider. Cover and cook on low until the apples are tender but still slightly firm, 3 to 4 hours depending on the size and type of apple. (If your apples are on the smaller size, check after 2 hours; they may cook faster.)
  • Serve each apple whole or cut in half in a bowl with a scoop of ice cream and a drizzle of maple syrup.

I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda

3/4 cup confectioners' sugar
FILLING:
1 package (8 ounces) fat-free cream cheese
2 tablespoons butter, softened
1/2 teaspoon almond extract
1 cup confectioners' sugar

Steps:

  • Let eggs stand at room temperature for 30 minutes. Line a 15x10x1-in. baking pan with waxed paper; coat with cooking spray and set aside. , In a large bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored. Combine the flour, baking powder, baking soda and salt; gradually add to yolk mixture and mix well (batter will be very thick). Fold in cranberries and pecans., In a large bowl with clean beaters, beat egg whites on medium speed until soft peaks form. 1/2 cup mascarpone cheese or 1/2 cup cream cheese, softened
1/4 cup butter, melted
1 tablespoon mascarpone cheese or 1 tablespoon cream cheese, softened
1 cup powdered sugar
1 -2 tablespoon milk

Steps:

  • Heat oven to 350°F Lightly spray 8- or 9-inch round cake pan with cooking spray.
  • In small bowl, mix cranberries and walnuts; set aside. In another small bowl, mix granulated sugar and cinnamon; set aside.
  • Separate dough into 10 biscuits; press each biscuit into 3-inch round. Place heaping 1 teaspoon of the mascarpone cheese on center of each biscuit. Bring all sides of dough up over filling, stretching gently if necessary, and gather in center above filling to form a ball; firmly pinch edges to seal. Roll each biscuit in melted butter, then roll in sugar-cinnamon mixture. Place 1 biscuit in center of pan. 1 cup whole berry cranberry sauce
1/4 cup sugar
1/4 cup water
3 tablespoons apple juice

1 teaspoon baking powder
1/4 teaspoon salt
3 eggs
3/4 cup sugar
1/3 cup water

8 ounces cream cheese
1 cup powdered sugar
1 teaspoon vanilla
4 tablespoons butter or 4 tablespoons margarine

Steps:

  • Preheat your oven to 375* F. Grease a jellyroll pan, line it with waxed paper, and grease the paper.
  • Combine apples, cranberry sauce, sugar, water, apple juice, lemon juice, cinnamon, and nutmeg in a non-reactive heavy-bottomed saucepan. Cook over medium heat, stirring until mixture thickens, about 6 minutes. Set aside to cool.
  • For cake:.
  • Sift together the flour, baking powder, and salt on a piece of waxed paper, set aside. Beat the eggs in medium bowl for 2 minutes. Gradually beat in sugar until thick and light in color, about 5 minutes. Stir in water and vanilla. Fold in flour mixture and ground walnuts.
