APPLE CREAM CHEESE BRAID DANISH

6 Tablespoons butter (softened)
1/4 cup water
1/2 cup milk (not skim- I used 2%)
3 Tbsp sugar
2 teaspoons active dry yeast
2 1/4 - 2 3/4 cups all-purpose flour
1/2 teaspoon salt
1 egg (lightly beaten)
2 medium-large apples (peeled and chopped)
1 Tablespoon butter
3 Tablespoon sugar
1 teaspoon cinnamon
1 Tablespoon cornstarch
8 ounces cream cheese (softened)
1/4 cup sugar
1 teaspoon Vanilla
1 teaspoon lemon juice
1 1/2 cup powdered sugar
5 5 1/2 teaspoons milk
1/4 teaspoon vanilla

Steps:

  • Heat butter, sugar, water and milk to 120F.
  • Combine 2 cups flour, salt and yeast in a medium bowl. Make a well in the center. Add butter mixture. Mix in additional 1/2 cup flour and egg. Knead on low speed for about 7-8 minutes scraping down bowl as needed. Add additional 1/2 cup of flour while kneading if necessary. Dough should be smooth.
  • Place dough in a greased bowl. Cover with plastic wrap. Let it rise for about an hour or until doubled in bulk.
  • Meanwhile, over low heat combine apples, butter, sugar, cinnamon and cornstarch. Heat until apples are softened, about 5-7 minutes. Set aside to cool.
  • In a small bowl combine cream cheese, sugar, vanilla and lemon juice. Mix until smooth.
  • After dough has doubled in bulk. On floured parchment or silicone mat roll out dough into a large rectangle about 12 x 10.
  • Spread cream cheese filling down the center. Arrange apple mixture on top.
  • Using a pizza cutter cut diagonally from end of dough towards center in 1 inch strips. Do this on both sides.
  • Starting on one side of the braid pull one strip up and over the braid. Repeat with the other side. Continue alternating until braid is complete.
  • Cover loosely with plastic. Let rise for about 30-40 minutes.
  • Bake at 350 for about 20-25 minutes or until braid is golden brown.
  • Combine powdered sugar, milk and vanilla. Drizzle over braid. Serve warm or allow to cool and then serve. Delicious either way.

1 tsp vanilla extract
2 tbsps sugar
8 ounces canned apple filling

Steps:

  • Heat oven to 350 degrees f.
  • Line a large pan with parchment paper.
  • In a medium-sized bowl add the cream cheese, extract, and sugar.
  • Beat cream cheese mixture until light and fluffy.
  • Unwrap cinnamon rolls and gently stretch each out making a small impression in the center of the dough.
  • Make sure each roll has at least 2 inches of space to spread on the sheet.
  • Add about 1 tablespoon of cream cheese filling to each cinnamon roll danish.
  • Repeat with about 1 tablespoon of apple filling.
  • Bake for 13 minutes at 350 degrees f.
  • Remove from oven and move danish to a cooling rack.
  • Add icing cup to microwave for 10 seconds to warm.
  • Using a spoon, add an even amount of icing to each.
  • Enjoy warm.

½ cup ground almonds
¼ cup white sugar
½ cup butter, chilled
¼ teaspoon almond extract
8 ounces cream cheese, softened
¼ cup white sugar

1 egg
⅓ cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
4 cups thinly sliced apples
⅓ cup blanched slivered almonds

Steps:

  • To make dough: in a small bowl, combine 1 cup flour, 1/2 cup ground almonds, and 1/4 cup sugar; cut in butter until crumbly. Add extract. Shape dough into a ball, gently press dough against the bottom and up the sides of a 9-inch springform or cake pan. Refrigerate for 30 minutes.
  • To make filling: in a medium-sized mixing bowl, beat cream cheese, 1/4 cup sugar, and cream of tartar until smooth. Add egg; beat on low just until combined. Pour over crust.
  • To make topping: in another medium-sized bowl, combine brown sugar, 1 tablespoon flour, and cinnamon. Add apples and stir until coated. Spoon over the filling. Sprinkle with 1/3 cup slivered almonds.
  • Bake at 350 degrees F (175 degrees C) for 40-45 minutes or until golden brown. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove from pan.

1 (24 ounce) carton cottage cheese
3 apples - peeled, cored and thinly sliced
1 teaspoon lemon juice
1 (8 ounce) package cream cheese, at room temperature
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1 (17.5 ounce) package frozen puff pastry, thawed
3 tablespoons white sugar for decoration

Steps:

  • Place the cottage cheese in a strainer lined with cheesecloth or heavy-duty paper towels. Pat dry with paper towels and set aside for 5 to 10 minutes.
  • Place apples in a bowl, and sprinkle with lemon juice to prevent browning.
  • Combine the cream cheese, drained cottage cheese, 1/2 cup sugar, egg, and vanilla extract in the bowl of an electric mixer, and mix 1 to 2 minutes on high speed, until almost smooth.
  • Preheat an oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
  • Cut each of the puff pastry sheets into 9 pieces; you should have 18 total. Roll the pieces out, one at a time, to make 5 x 5-inch squares. To ensure the pastries puff up, avoid using too much pressure or rolling over the edges of the dough.
  • Place a square in front of you so that it looks like a diamond. Spoon a generous amount of cheese filling down the middle of each square, leaving 1/4 inch of room at the top and bottom edges. Fan out 4-5 slices of apple down the center of each cheese-filled square. Bring the left and right corners together to meet in the center and pinch to seal.
  • Transfer the Danish to a baking sheet and repeat with the remaining pastries. Sprinkle sugar over each bundle and bake in the preheated oven until the pastry is golden brown, about 20 minutes.

TOPPING:

2 1/4 teaspoons active dry yeast, 1/4 ounce package
1/4 cup warm water, read the yeast package for exact temp recommendations
5 cups all-purpose flour, plus additional for the work surface
1/4 cup granulated sugar
1 teaspoon salt
1 teaspoon lemon zest
1 cup cold butter, 2 sticks
1 cup milk, warmed to the same temp as the water
2 eggs, lightly beaten
2 cups chopped apples, preferably a tart variety
1/4 cup granulated sugar
1 teaspoon cinnamon
2 tablespoons melted butter
8 ounces cream cheese, softened
3/4 cup powdered sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/8 teaspoon salt
1 egg
1 tablespoon water

Steps:

  • In a liquid measuring cup, measure out the warm water and dissolve the yeast In a large bowl, whisk together the flour, sugar, salt, and lemon zest. Cut the cold butter into the flour mixture. Then incorporate the butter into the flour with your fingers until coarse crumbles form. Stir in the yeast/water mixture, the warmed milk, and the eggs. Turn the dough out onto a well-floured surface and knead for about 2 minutes. The dough will be tacky. Add a little flour as needed while you knead the dough. Form the dough into a ball, place in a bowl, cover, and refrigerate for at least 2 hours or overnight. Make your filling by stirring together the chopped apples, sugar, cinnamon, and melted butter. When you are ready to bake, preheat the oven to 400°F and butter a baking sheet, or line with parchment paper. Make the cream cheese filling by beating together the cream cheese, powdered sugar, egg yolk, vanilla, and salt. Punch down the dough and divide it in half. Cover the half you aren't working with. On a floured surface, stretch and roll the dough into a rectangle that's about 1/4-inch thick. Cut the dough down the middle lengthwise, and then cut it into 8 squares. Spoon a heaping tablespoon of the cream cheese mixture into the center of each square. Add a spoonful of the apples on top of the cream cheese. Pinch the 4 corners of the dough towards the center and press them together. They will expand when baked but this gives each piece an edge and some shape. Brush each piece with the egg wash, place 2 inches apart on the prepared baking sheet, and bake for 12-15 minutes. Repeat with the 2nd half of the dough. Cool the danish completely on a wire rack before serving.

2 packages cream cheese
⅓ cup sugar
1 teaspoon vanilla
1½ teaspoons lemon juice
2 cans no-sugar apple pie filling
⅓ cup butter (6 tablespoons), melted
⅓ cup sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Unroll the two packages of crescent roll dough and pat out in ungreased 11x15 jellyroll pan or cookie sheet with sides, pressing perforations together.
  • Place the cream cheese, vanilla, lemon and ⅓ cup sugar in medium mixing bowl. Beat until fluffy.

1/3 cup powdered sugar
1 egg yolk
1/2 teaspoon vanilla extract
2 (8 ounce) packages refrigerated crescent rolls
1 (21 ounce) can apple filling
1/2 cup all-purpose flour
1/3 cup packed brown sugar
1/2 cup old-fashioned rolled oats
1 teaspoon ground cinnamon
1/4 cup butter (softened)
optional caramel for drizzling

Steps:

  • Preheat oven to 350 degrees. Spray a 15" pizza pan or stone with cooking spray.
  • In a large bowl, mix together the cream cheese, powdered sugar, egg yolk, and vanilla until smooth. Set aside.
  • Unroll the crescent dough into triangles. Reserve 4 triangles for later. Arrange the triangles on the pizza pan or stone with the points pointing towards the center. Press seams together to form a circle. Using the bottom of the glass, cut a circle in the center and remove circle of dough.
  • Spread the cream cheese mixture on top of the crescent dough leaving a margin on the edges.
  • Spoon the apple filling evenly on top of the cream cheese filling.
  • Take reserved 4 triangles of crescent dough and cut each into 3 strips lengthwise. Take each strip of dough and twist it and drape it over the the filling connecting it on the center of the ring to the outside of the ring. Please note that this does not have to be exact. I had to use an extra triangle for my crescent circle so I only had 3 triangles to split up. Have fun and use your creativity.
  • For the crumble: Combine the flour, brown sugar, oats, cinnamon, and butter in a bowl. Mix well. I like to use my clean hands to get in there and mush it together until it's the texture of wet sand. Sprinkle topping evenly over the apples.
  • Bake for 20-25 minutes or until crescent dough is nice and golden.
  • Cut into slices and serve warm. Place a ramekin of caramel in the center for drizzling on top if desired.

1/2 tablespoon butter
1 large fuji apple (peeled and diced)
1/2 teaspoon cinnamon
2 tablespoons granulated sugar
1 tube crescent rolls
8 oz cream cheese (softened (1 package))
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 tablespoons all-purpose flour
1 cup powdered sugar
4 tablespoons heavy cream (plus more if needed)
splash vanilla extract

Steps:

  • Preheat oven to 375 degrees.
  • In a medium nonstick skillet, melt butter over medium-low heat. Add in apples, cinnamon, and sugar. Stir and cook until tender, 10-15 minutes.
  • While apples are cooking, in a small bowl, combine cream cheese, sugar, flour, and vanilla. Set aside.
  • Pop open crescent roll dough and unroll, leaving crescents in rectangles. On an ungreased baking sheet, lay the crescent roll rectangles together, lining them up width wise. The dough should be almost the entire length of a half sheet pan. Press edges together to even out edges and seal any holes. Cut 1/2 inch diagonal strips up each side of the dough. Carefully spread cream cheese filling down the center of the dough to be about 2-3 inches wide. Top with cooked apples.
  • Fold 1/2 inch dough pieces up over filling alternating sides to get a braided pattern. You may have excess dough once you reach the end of the danish, so fold them in as best as you can.
  • Bake for 20 minutes or until filling is set and the crescent dough is golden in color. Cool at least 20 minutes before removing from baking sheet.
  • Once danish has cooled, remove to a serving platter. In a small bowl, mix together powdered sugar, vanilla, and cream to create icing. You may need to add more cream to get the desired consistency. Drizzle icing over danish.
  • Cut into pieces and serve.

2.5 pound cooking apples, peeled (if desired), cored, and thinly sliced (about 7 cups)
2 tablespoon butter
1 cup granulated sugar, divided
2 tablespoon all-purpose flour
1 teaspoon ground cinnamon, divided
0.125 teaspoon ground nutmeg
1 8 ounce package cream cheese, softened
1 egg
1 teaspoon vanilla
Milk
2 tablespoon coarse sugar

Steps:

  • Preheat oven to 375°F. Lightly grease a 15x10x1-inch baking pan; set aside. On a lightly floured surface, unfold one pastry sheet and roll into a 15x10-inch rectangle. Transfer to the prepared baking pan, pressing dough to edges of pan. Bake in the preheated oven about 12 minutes or until golden brown (pastry will puff and shrink from sides of pan). Cool on a wire rack.
  • Meanwhile, in an extra-large skillet, cook apples in hot butter over medium heat about 8 minutes or just until crisp-tender, stirring occasionally.   • On a lightly floured surface, unfold the remaining pastry sheet and roll into about a 13x9-inch rectangle (make sure pastry is large enough to completely cover apple mixture). Place on top of apple mixture. Lightly press edges of top pastry to edges of bottom pastry. Lightly brush pastry with milk. Using a sharp knife, cut a few slits in pastry to allow steam to escape. In a small bowl, combine coarse sugar and the remaining 1/2 teaspoon cinnamon; sprinkle over pastry.

1 frozen puff pastry
1 apple, peeled and chopped
3 tbsp. brown sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon
8 oz. cream cheese
1 cup powdered sugar
1/3 cup heavy cream
Melted butter (1-2 tbsp)

Steps:

  • Cook apples, brown sugar, vanilla,and cinnamon in a saute pan over medium-high heat, stirring frequently, for 10 minutes. Remove from heat and set aside.
  • Beat together cream cheese, powdered sugar, and heavy cream until smooth.
  • Fold your puff pastry into thirds and then lay out flat on a baking sheet. If you made your own, cut into a large rectangle.
  • Cut slits on each side of your pastry, pointed upwards diagonally, in ½ inch increments.
  • Generously spread cheesecake mixture over the middle third, tuck in the top and bottom flap, and then "braid" up each pastry piece, alternating, until you get to the end.

  • Combine chopped apples, brown sugar, and sugar in a small saucepan over medium heat. Bring mixture to a boil. Reduce heat to medium-low, and allow to simmer for 15-20 minutes or until apples soften and mixture thickens. Remove from heat, and stir in cinnamon, nutmeg, allspice, cloves, and cardamom. Allow to cool.
  • Stir together cream cheese, sugar, and vanilla extract until well-combined. Set aside.
  • Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
  • Place sheets of puff pastry on a lightly floured surface and roll sheets out so that the length of the sheets is 10-12 inches long. (If the sheets have cracks in them, sprinkle cracks with a bit of water. Then roll out the sheets of puff pastry with a rolling pin to even out the cracks.) Cut 6 strips lengthwise per sheet. Take each strip and gently twist. Take each twist and coil it into a spiral. Tuck the end piece under the spiral. Press down the center of the pastry leaving about 1/4 inch all around on the sides.
  • Score the pressed down center with a knife. Poke a few holes in the center with fork or knife. This will keep the center from rising too much and making the filling fall out. Place on prepared baking sheet.
  • Fill each center with about 1 Tablespoon of cream cheese mixture. Top with a heaping Tablespoon of apple pie filling.
  • Whisk together egg and water. Brush edges of danishes with egg wash.
  • Bake for 20-25 minutes, or until edges are golden brown.
  • Remove to a wire rack to cool slightly.
  • While danishes are cooling, whisk together confectioner's sugar and half and half for optional glaze. Drizzle over slightly cooled danishes.
  • Allow glaze to set, and serve.
  • Store leftovers in the refrigerator for optimal freshness. Remove, and allow to come to room temperature before serving.
