The combination of apple butter and dried apples adds layers of apple flavor to this hearty treat. Oats and whole-wheat flour amplify the satisfaction.

10 tablespoons unsalted butter, melted and cooled, plus more for greasing
1 cup white whole-wheat flour
1 cup rolled oats
2/3 cup firmly packed dark brown sugar
1/4 cup confectioners' sugar
1/4 teaspoon baking soda
Pinch fine sea salt
1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit
1/4 teaspoon ground cinnamon

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
  • Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

2 cups (300g) flour (, plain/all purpose)
1/2 cup (100g) white sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1/3 cup (30g) rolled oats (Note 1)
3 - 4 large granny smith apples (, cut into 0.7cm / 1/3" dice(~4 cups))
1/4 cup (35g) plain flour ((all purpose flour))
1/4 cup (50g) white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
Salted caramel sauce
Ice cream!

Steps:

  • Preheat oven to 180C/350.
  • Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
  • Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.
  • Add egg and mix.
  • Lightly press 2/3 of the mixture into the bottom of the pan.
  • Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.
  • Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.

1 1/2 cups quick-cooking oats
1 cup packed brown sugar
1/4 teaspoon salt
1 cup butter or margarine, melted
2 boxes (12 oz each) frozen harvest apples
2 cups chopped pecans, toasted
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray. In medium bowl, mix flour, oats, brown sugar and salt. Add melted butter, stirring until well mixed. Press two-thirds of the mixture in bottom of pan. Bake 12 to 14 minutes or until set.
  • Meanwhile, cook apples in microwave as directed on package. In medium bowl, mix apples, pecans and cinnamon; spoon over partially baked crust. Sprinkle with remaining oat mixture.
  • Bake 40 to 45 minutes or until lightly browned. Cool in pan on cooling rack 2 hours. Use foil to lift from pan. Cut into 6 rows by 4 rows.

3 cups all-purpose flour
1-1/2 cups old-fashioned oats
1-1/2 cups packed brown sugar
3/4 teaspoon baking soda
1-1/4 cups cold butter, divided
5 to 6 cups thinly sliced peeled apples
1 cup sugar
3 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13x9-in. baking dish. Arrange apples over top; set aside. , In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly; spread over apples. Sprinkle with reserved crumbs. , Bake at 350° for 35-45 minutes or until top is lightly browned.

3 cups dried apples, about 7 ounces
3/4 cup dried cherries, about 4 1/2 ounces
1 3/4 cups apple cider
3/4 cup plus 2 tablespoons packed light-brown sugar
1 teaspoon ground cinnamon
2 cups rolled oats
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 sticks (16 tablespoons) cold unsalted butter, cut into small pieces, plus more for dish

Steps:

  • Preheat oven to 375 degrees. Butter a 9-by-13-inch baking dish. Simmer apples, cherries, and cider in a covered saucepan, stirring occasionally, until fruits are softened and plump, about 5 minutes. Drain, reserving 2 tablespoons liquid. Let cool.
  • Coarsely chop fruit. Combine with 2 tablespoons sugar, 1/4 teaspoon cinnamon, and reserved cooking liquid.
  • Whisk together oats, flour, baking soda, salt, remaining 3/4 cup sugar, and remaining 3/4 teaspoon cinnamon in a large bowl. Cut in butter with a pastry blender or 2 knives until crumbs range in size from peas to gum balls. Press 4 cups of oat mixture into bottom of prepared dish. Spread fruit filling on top, leaving a 1/4-inch border on all sides. Sprinkle remaining oat mixture on top.
  • Bake until golden brown, about 35 minutes. Let cool in dish on a wire rack. Cut into 24 bars.

4 cups all-purpose flour
2 tablespoons white sugar
1 teaspoon salt
9 medium apples - peeled, cored and chopped
1 ½ cups white sugar
¼ cup all-purpose flour
¼ cup unsalted butter, melted
3 tablespoons milk
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a jelly roll pan with cooking spray.
  • Stir oil and milk for crust together in a bowl. Sift flour, sugar, and salt into the bowl; stir to combine. Set 1/3 of the crust mixture aside for crumble topping. Press remaining 2/3 crust mixture into the bottom and up the sides of the prepared pan.
  • Combine apples, sugar, flour, melted butter, milk, vanilla, and salt for the filling in a bowl. Spread out over the bottom crust, and crumble reserved crust mixture over top.
  • Bake in the preheated oven until crust and topping are golden brown, about 50 minutes. Remove from the oven and cool to room temperature, about 30 minutes, before cutting into 24 bars.

2 cups oats, uncooked
1 1/2 cups all-purpose flour
3/4 cup margarine, melted
1 cup brown sugar, firmly packed
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 cup applesauce
1/2 cup chopped nuts

Steps:

  • Preheat oven to 375°.
  • Grease a 13x9-inch baking pan.
  • Combine all ingredients EXCEPT applesauce and nuts; mix until crumbly.
  • Reserve 1 cup mixture. Press remaining mixture onto bottom of pan.
  • Bake 15 minutes; let cool.
  • Spread applesauce over partially baked crust; sprinkle with nuts.
  • Top with reserved 1 cup oat mixture.
  • Bake 13-15 minutes or until golden brown.

  • CRUMBLE: Position a rack in the center of the oven and preheat the oven to 350ºF. Mix the oats, flour, sugars, baking powder, and ground cinnamon together in a large bowl. Pour in the melted butter and stir to combine until you form a sand-like crumb. Press two-thirds of the prepared crumb mixture into the prepared pan. You want to make sure the crust is tightly packed in.
  • BAKE: Top with the apple mixture and sprinkle the remaining crumb mixture on top. Bake for 50-60 minutes. Remove from the oven and place on a wire rack for one hour. I usually stick mine in the refrigerator for a bit after that to cool them down completely before cutting into pieces.
