APPLE-CRUMBLE PARFAIT IN A JAR

Steps:
- Melt butter in large nonstick skillet on medium heat. Add apples; cook 8 min. or until crisp-tender, stirring occasionally. Add cinnamon and 1 Tbsp. honey; mix well. Cook and stir 2 min. or until apples are tender and lightly browned.
- Spoon into 4 (8-oz.) jars; cover with lids. Refrigerate 30 min.
- Mix cream cheese and remaining honey until blended; spoon over apples. Top with granola.

APPLE PIE IN A JAR
This is great to do when apples are abundant and can be used on waffles and ice cream too.

Steps:
- Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
- Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
- Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
- Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
- Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

- Preheat the oven to 375 degrees F (190 degrees C).
- Pile sliced apples in an 8x10-inch casserole dish. Mix water and lemon juice together and sprinkle over apples.
- Combine sugar, flour, cinnamon, nutmeg, and salt in a mixing bowl. Mix well using an electric mixer. Add butter pieces and mix until clumpy. Pour over apples, spreading to cover all but the outer edges.
- Bake in the preheated oven until bubbly and golden, about 45 minutes. Let cool slightly to thicken before serving in bowls.

- For compote:
- Cook apricots, sugar, and 1 cup water in a small heavy saucepan over low heat, stirring occasionally, until apricots are plump, soft, and just beginning to break down, about 30 minutes. Transfer compote to a small bowl and let cool completely. DO AHEAD: Can be made 1 week ahead. Cover and refrigerate.
- For crumble:
- Preheat oven to 350°F. Combine all ingredients in a large bowl. Rub mixture with your fingertips until butter is completely incorporated and mixture resembles wet sand. Spread out on a rimmed baking sheet.
- Bake, stirring occasionally, until golden brown, 15-17 minutes. Let cool completely. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
- For assembly:
- Scoop 2 tablespoons ice cream into each small jar or sturdy glass. Spoon 1 tablespoon apricot compote over ice cream and top with 1 tablespoon crumble. Repeat with remaining ingredients for 6 layers total. Freeze for 30 minutes to set.

- In a medium sized bowl, mix together oats, flour, sugar, cinnamon, and salt. Using a pastry cutter, fork, or your fingers, work the butter pieces into the mixture. Set aside.
- Cut each cored and peeled apple in half. Cut each half into thin slices (no larger than 1/4″ thickness). Place apple slices in a bowl and toss apples with lemon juice. Sprinkle with 1/2 cup brown sugar and toss to combine.
- Place canning jars on a large baking sheet. Divide apple slices among each jar. Top each jar of apples with about 1/3 cup of streusel. Divide any remaining streusel among all the jars. With the handle end of a spoon, press some of the streusel down into the apples.
