The perfect fall breakfast casserole. Chopped apples, cinnamon and an easy drizzle to go on top. Enjoy!

1 loaf of bread (about 4 cups of cubed pieces), torn into bite-size pieces
6 eggs
1 ½ cups milk
1 cup heavy whipping cream
3 tablespoons maple syrup
2 tablespoons cinnamon
1½ cups diced apples (I used Granny Smith and did not peel)
a few tablespoons of powdered sugar and milk for the drizzle, optional

Steps:

  • Preheat oven to 350 degrees.
  • Arrange bread in a lightly greased 13 x 9 inch baking pan; set aside.
  • Beat with a whisk your eggs, milk, whipping cream, maple syrup, and cinnamon in a mixing bowl.
  • Next, stir in your chopped apple pieces
  • Finally, pour this apple mixture over your bread. Cover and refrigerate overnight or pop in the oven immediately and begin baking (see below).
  • The next morning, remove from fridge and pop in the oven and bake 45 to 55 minutes. (Check after about 30 minutes and if it's getting to brown on top, cover with foil and continue cooking.)
  • Remove from oven let stand 5 minutes before serving. (You can quickly whisk together a little powdered sugar and milk to make a glaze to pour over or you can pour a little more maple syrup down on top before serving if you like.)

250 ml (1 cup) milk
30 ml (2 tbsp) maple syrup (preferably golden syrup, for its delicate flavour)
5 ml (1 tsp) pure vanilla extract
8 slices bakery-style multigrain bread
Butter for the pan
225 g (1/2 lb) cheese (Cheddar, Brie, Swiss, Oka, etc.), sliced

Steps:

  • Set a pan on medium heat, melt the butter, and cook the apples in it for 5 minutes.
  • Add the cinnamon and 125 ml (1/2 cup) maple syrup, and cook 5 minutes more.
  • Meanwhile, beat the eggs with the milk, the 30 ml (2 tbsp) maple syrup, and the vanilla
  • Soak the bread slices in the egg mixture, a few minutes on each side.
  • Preheat a large pan on medium heat, melt a little butter, and fry each slice 3 minutes per side. Keep in a 150° C (300° F) oven while you do the remaining slices, or use two pans.
  • Serve sandwich-style: a slice of cheese between 2 slices of French toast, topped with apple sauce.

Steps:

  • Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
  • Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
  • Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.
  • In a large, heated nonstick skillet, melt about 1 tablespoon butter and saute the soaked bread until golden brown on each side, about 4 minutes. Place French toast on a plate and top with apple-maple mixture, plus more butter if you'd like!

1 loaf challah or brioche (1 pound), cut into about twelve 3/4-inch-thick slices
5 tablespoons unsalted butter
1 cup plus 2 tablespoons packed light-brown sugar, divided
Kosher salt (we use Diamond Crystal)
1 tablespoon fresh lemon juice
4 crisp apples, such as Gala, Braeburn, or Envy, peeled and cut into 1-inch wedges (about 5 1/2 cups)
6 large eggs, whisked
1 1/3 cups whole or 2 percent milk
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
Confectioners' sugar
Greek yogurt, toasted chopped pecans, and raspberries or pomegranate arils, for serving

Steps:

  • Spread bread slices on a baking sheet; let stand at least a few hours and up to overnight. Melt butter in a large ovenproof, nonreactive skillet (like an 11-to-12-inch enameled cast iron) over medium heat. Add 1 cup brown sugar, 1/4 teaspoon salt, and lemon juice. Cook, stirring, until sugar dissolves, then bring to a boil; cook 1 minute.
  • Add apples and cook, turning occasionally, until they begin to soften and brown a bit and liquid thickens, about 12 minutes. Let cool 30 minutes.

4 apples, peeled and thinly sliced
1 teaspoon lemon juice, or as needed
½ cup butter
2 ½ tablespoons all-purpose flour
½ cup brown sugar
½ cup white sugar
¼ cup water
9 eggs
¼ cup milk
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
1 loaf thick-cut bread
½ cup frozen butter

Steps:

  • Place apples in a bowl and drizzle with lemon juice to keep from browning.
  • Melt 1/2 cup butter in a large saucepan over medium heat; remove from heat. Stir flour into melted butter until smooth. Return saucepan to low heat; stir in brown sugar, white sugar, and water until sugars dissolve and mixture is smooth, 3 to 5 minutes. Increase heat to medium; cook and stir mixture until boiling. Reduce heat to low and add apples. Simmer mixture until apples are cooked but slightly tender, 20 to 25 minutes.
  • Preheat griddle to 325 degrees F (165 degrees C).
  • Whisk eggs, milk, cinnamon, and vanilla extract together in a bowl. Dip bread slices into egg mixture until completely coated.
  • Grease heated griddle with frozen butter. Cook dipped bread slices on the hot buttered griddle until browned, 2 to 3 minutes per side. Repeat with remaining frozen butter and dipped bread. Serve French toast with apple mixture ladled over top.

2 large eggs
1/8 cup real maple syrup
1 cup whole milk
1 teaspoon vanilla extract
1/8 teaspoon fresh-grated nutmeg
1 pinch salt
3 tablespoons unsalted butter, for cooking
fresh berries, for serving
confectioners' sugar, for dusting

Steps:

  • First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
  • In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
  • Beat in the milk, vanilla, nutmeg and salt.
  • Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
  • Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
  • Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
  • You may have to cook in 2 batches if you use a smaller skillet.
  • Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.

1 cup sour cream, divided

1 1/2 cups half-and-half, 10% cream (or use full-fat milk)
