Maple Pecan Waffles image

This is a nice light and fluffy waffle--great for overnight guests. Or, make it for dessert and top it with fresh fruit and whipped cream. I found this in My Great Recipes. I didn't have any pecans so I substituted walnuts. For the maple flavoring I threw in a few squirts of maple syrup. If you have any left (might want to double the recipe), wrap in plastic and freeze. To reheat, just put the frozen waffle in the toaster (move over L'eggo My Ego).

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 egg yolks
2/3 cup milk
1/4 cup vegetable oil
2 egg whites
3/4 cup pecans, chopped
1/2 teaspoon maple extract
fresh strawberries, for garnish

Steps:

  • Preheat waffle iron.
  • Sift flour with baking powder and salt.
  • In mixing bowl, beat egg yolks, milk, and oil until combined.
  • Gradually add flour mixture, beating after each addition and beat only until smooth.
  • Beat egg whites until stiff peaks form.
  • Fold whites into batter.
  • Stir in pecans and maple extract.
  • For each waffle, pour 1/2 cup batter into center of waffle iron or until it spreads to 1 inch from edges.
  • Cook until waffle iron stops steaming.
  • Waffle should be crisp and golden.
  • Serve hot with warmed maple syrup and melted butter and sliced strawberries.

3/4 cup pecans
1 1/2 cups all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 large egg
1 cup whole milk
1/2 cup buttermilk
2 teaspoons vanilla extract
2 tablespoons unsalted butter, melted and cooled, plus more for brushing and topping
1/4 cup vegetable shortening, melted and cooled
Maple syrup, for topping

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans on a baking sheet; bake until toasted, 5 to 7 minutes. Let cool, then chop. Reduce the oven temperature to 200 degrees F.
  • Whisk the flour, sugar, salt, baking powder and baking soda in a large bowl. Whisk the egg, milk, buttermilk and vanilla in a separate bowl until combined. Stir the egg mixture, melted butter and shortening into the dry ingredients until just combined. (The batter will be lumpy.)
  • Preheat a waffle iron and brush with melted butter. Ladle some batter into the iron (about 1/2 cup, depending on your waffle iron); sprinkle with 2 tablespoons toasted pecans. Cook until golden brown, then transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter. Top the waffles with butter and maple syrup.

Steps:

  • For the bacon pecans: Add butter to a skillet over medium-high heat until melted. Then add the brown sugar, pecans, bacon and vanilla. Cook until a caramel texture, 2 to 3 minutes.
  • For the waffles: Spray a waffle griddle with nonstick cooking spray. Heat the griddle on medium heat.
  • Whisk together the pancake mix, milk, oil, cinnamon, sugar and vanilla in a large bowl. Ladle the waffle batter into the waffle griddle and close. Cook until golden, 1 to 2 minutes. Repeat with remaining batter.
  • Remove and serve with the bacon pecans poured directly over the waffles.

  • Heat a well-seasoned or non-stick waffle iron until hot and brush lightly with oil. Pour half of batter into iron and cook waffle according to manufacturer's instructions. Transfer waffle to a baking sheet and keep warm, uncovered, in oven. Make another waffle with remaining batter in same manner.
  • Serve waffles with syrup.
