APPLE BUTTER MUSTARD GLAZE

2 tablespoons neutral oil
2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

1/2 cup apple juice or cider
1/4 cup cider vinegar
1/4 cup coarse grain mustard
2 tablespoons olive oil
1 tablespoon brown sugar, packed
4 garlic cloves, minced
1-1/2 teaspoons soy sauce
black pepper to taste
4 large chicken breasts cut in half

Steps:

  • In a small jar, shake to combine all the marinade ingredients.
  • Skin chicken and cut in half.
  • Place in a zip top bag.
  • Pour marinade over chicken.
  • Let the chicken marinade for 4 hours.
  • Pre heat oven to 400 degrees.
  • Line a baking pan with foil and place a rack on top.
  • Pour marinade into a small saucepan.
  • Cook on medium heat for 20 minutes covered.
  • Place chicken on prepared baking pan and into the oven.
  • Baste chicken after 20 minutes, again at 30 minutes and again before the chicken is done.
  • Bake chicken a total of 40 minutes.

1/3 cup apple jelly
3 tablespoons unsweetened apple juice

Steps:

  • Place meatballs in a single layer in a greased 15x10x1-in. baking pan. Bake according to package directions., Meanwhile, combine the remaining ingredients in a large saucepan. Bring to a boil over medium heat., Transfer meatballs to sauce; stir gently to coat. Return to a boil. 1 ½ cups apple cider
¼ cup stone-ground mustard
1 teaspoon freeze-dried dill
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skin-on chicken thighs
8 ounces baby carrots
½ medium head cabbage, thinly sliced

Steps:

  • Whisk apple cider, mustard, dill, salt, and pepper together in a bowl. Add chicken thighs and stir until evenly coated. Cover and refrigerate for 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove chicken from the refrigerator.
  • Transfer chicken to a plate and pour marinade into a large skillet. Add carrots and cabbage and bring to a boil over medium-high heat. Reduce heat, cover, and cook until carrots have softened, about 30 minutes.
  • While carrots and cabbage are cooking, place chicken thighs on the preheated grill and cook until no longer pink at the bone and the juices run clear, about 20 minutes, flipping halfway through the cook time. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer chicken to a serving plate and let rest for 5 minutes. Serve with carrots and cabbage.
