1/4 cup olive oil
1/2 cup chopped walnuts
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh rosemary
1 loaf (12 ounces) focaccia bread
8 thin slices prosciutto
1 medium apple, sliced
6 ounces Brie cheese, rind removed and sliced

Steps:

  • In a blender, combine the oil, walnuts, cheese and rosemary; cover and process until blended and nuts are finely chopped. With a bread knife, split focaccia into two horizontal layers. Spread rosemary mixture over cut sides of bread. , On bottom of bread, layer the prosciutto, apple and Brie; replace bread top. Cut into quarters. , Cook on an indoor grill for 2-3 minutes or until bread is browned and cheese is melted. To serve, cut each wedge in half.

½ teaspoon white sugar
½ teaspoon ground cinnamon
8 tablespoons creamy peanut butter
8 slices whole wheat bread
¼ cup unsalted butter

Steps:

  • Mix cinnamon and sugar together in a small bowl. Spread one tablespoon of peanut butter onto one side of 8 slices of bread.
  • Arrange apple slices on 4 slices of bread. Sprinkle the cinnamon/sugar mixture evenly over the apples. Top with the remaining 4 slices of bread, peanut butter face down.
  • Melt the butter in a large skillet over medium heat. Fry sandwiches until browned, about 1 to 2 minutes on each side.

1 tablespoon sour cream
8 thin slices of good quality white bread
1/2 pound thinly sliced prosciutto
1/4 cup each finely chopped fresh tarragon, Italian flat-leaf parsley, and basil
3 peaches, pitted and chopped
1/8 teaspoon red pepper flakes
1/4 cup honey
1 tablespoon water
Kosher salt and freshly ground black pepper

1/2 cup cream cheese

Steps:

  • In a large sauce pan, combine the peaches, red pepper flakes, honey, water, and salt, and pepper, to taste and place the pan over medium heat. Bring to a simmer, then lower the heat and simmer slowly for 30 minutes, stirring occasionally. Let the mixture cool, then blend it in a blender or food processor until smooth.
  • In a small bowl, stir the cream cheese and sour cream together until well combined.
  • Divide the cream cheese mixture among 4 slices of bread, reserving a little bit of cream cheese for garnish. Spread the peach jam on the other slices of bread. Top the cream cheese slices with a few slices of prosciutto and top with the slices with jam. Slice in half.
  • In a small bowl, blend the chopped tarragon, parsley, and basil then spread them out on a plate.
  • Spread a light coating of reserved cream cheese on the exposed sliced end of each sandwich half and dip in the chopped herbs. Arrange the sandwiches on a plate and serve.

1 piece ciabatta sandwich bread, about 4 1/2 inches long
2 large slices havarti cheese, sliced thin
3 large slices prosciutto
1/2 Fuji apple, cored and sliced into half-moons 1/8 inch thick
1 1/2 teaspoons butter

Steps:

  • Split ciabatta, and place one slice of cheese on one half. Top with prosciutto, followed by apple slices, the second slice of cheese and the other half of the bread.
  • Melt butter in a 9-inch skillet over medium-high heat. When it froths vigorously, transfer sandwich to skillet. Place a grill press or a cast iron skillet on top of sandwich, and apply gentle pressure for about 2 1/2 minutes. With a spatula, carefully flip sandwich, replace grill press, apply pressure and grill 2 minutes more. Let cool. Place in sandwich bag, and store in refrigerator.

8 tablespoons (1 stick) unsalted butter, room temperature
2 baguettes, halved horizontally
4 tablespoons Scallion Oil for Prosciutto Sandwich
6 ounces very thinly sliced prosciutto di Parma

Steps:

  • Smear 4 tablespoons butter over the bottom half of each baguette. Drizzle with oil. Divide prosciutto evenly between the baguettes. Place the top halves over the prosciutto. Cut each baguette crosswise into 4 pieces. Serve immediately.

Steps:

  • In a small bowl, combine the mustard and honey. Set aside.
  • To assemble the sandwiches, lay 1 slice of cheese on each of 4 slices of the bread. On top of each cheese slice, layer 1 slice prosciutto, 2 slices apple, and 1 more slice cheese. Grind pepper on top of the cheese, if desired.
  • Spread 1 tablespoon of the honey mustard on each of the remaining 4 slices of bread and lay them, honey-mustard side down, on top of the cheese slices.
  • Heat a large skillet over medium heat and put the sandwiches in the pan. Cook until the cheese has melted and the bread is golden brown, about 3 minutes per side. Serve warm.
