This brown sugar apple bran oatmeal combines the sweetness of grated apples with the nutty flavor of bran and oatmeal. Easy and delicious!

1 small to medium apple, grated (large, not too fine)
1/3 cup oats
1/4 cup bran cereal (All Bran or Raisin Bran)
1 cup water
sprinkle of cinnamon
pinch salt
2 tsp. brown sugar
additional butter, sugar, milk or honey for topping

Steps:

  • Cook the oats with the water and salt in the microwave for 1:30.
  • Add the bran and cook another 30 seconds.
  • Add grated apple and cinnamon. Microwave another 20 seconds if it's not warm enough for you (I like mine hot)! Stir in the brown sugar.
  • Top with butter, honey, cream or any combination of toppings that you like!

1/2 cup plus 2 tablespoons whole wheat flour
1/2 cup oat bran
3 tablespoons brown sugar
1-1/4 teaspoons baking powder
1/8 teaspoon baking soda
Dash salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg white
1/2 cup buttermilk
1 tablespoon canola oil
2/3 cup grated apple

Steps:

  • In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

2 eggs
1 scant cup buttermilk
1 large apple, grated (about 1 cup)
1/2 cup melted butter
1 teaspoon vanilla extract
1 1/3 cup plain, unsweetened bran cereal
1 cup unbleached all purpose flour
1/2 cup oat bran or coarsely pulsed oats, plus more for topping
1/2 cup natural cane sugar
1/3 cup muscavado sugar (or brown sugar), plus more for topping
1/2 cup chopped pecans
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh ground nutmeg
Salted butter, room temperature, for serving

Steps:

  • Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
  • Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
  • While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
  • Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
  • Slice with a serrated knife and serve with butter on the side.
  • Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
  • Mix bran cereal and buttermilk together in a bowl; let sit for 10 minutes.
  • Beat brown sugar, applesauce, egg, and vanilla extract together in a bowl until smooth; stir into bran cereal mixture. Stir flour into bran cereal mixture until batter is well mixed; fold in walnuts and dried cranberries. Spoon batter into the prepared muffin cups.

½ cup brown sugar
½ cup applesauce
¼ cup canola oil
1 egg
1 teaspoon vanilla extract
¾ teaspoon salt
1 cup whole wheat flour
1 cup natural wheat bran

½ teaspoon baking powder
1 cup milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.

1 cup all-purpose flour
1/4 cup plus 1 tablespoon sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt

1 cup unsweetened applesauce
3 tablespoons canola oil
3 tablespoons fat-free milk
1/4 cup raisins
1/4 cup chopped walnuts
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the oat bran, flour, 1/4 cup sugar, baking powder and salt. In another bowl, beat the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. Fold in raisins., Fill muffin cups coated with cooking spray three-fourths full. Combine the walnuts, cinnamon and remaining sugar; sprinkle over batter. Steps:

  • Preheat oven to 325°F.
  • In a medium bowl, combine the cereal, flour and brown sugar.
  • With a pastry blender, cut in the butter until the mizture is crumbly; set aside.

  • Dump the apple mixture into a 2 quart baking dish.
