APPLE KOLACHES
A fellow home cook shared this recipe for a sweet, fruit-filled pastry. My son, who isn't a dessert fan, was disappointed when he came home to find his dad had polished off the last kolache in the batch. -Ann Johnson, Evansville, Indiana

Steps:
- In a large bowl, beat butter and cream cheese until light and fluffy. Gradually add flour and mix well. Divide dough into 2 portions; cover and refrigerate for 2 hours or until easy to handle., Preheat oven to 400°. In a small bowl, combine apples and cinnamon. On a lightly floured surface, roll 1 portion of dough into a 15x9-in. rectangle; cut into fifteen 3-in. squares. Place a teaspoonful of apple mixture in center of each square. Overlap 2 opposite corners of dough over filling; pinch tightly to seal., Place 2 in. apart on ungreased baking sheets. Repeat with remaining dough and apple mixture. Bake 10-12 minutes or until bottoms are lightly browned. Cool 1 minute before removing from pans to wire racks. Combine icing ingredients; drizzle over warm kolaches.

MAPLE PECAN KOLACHE
Steps:
- Preheat the oven to 360 degrees F.
- Mix cream cheese and granulated sugar in a mixer. Add egg yolk and mix to combine. Pour in powdered sugar, mixing on low speed, until there is none left, then increase the speed to high and beat until well mixed. Add maple syrup, mixing, then beat until the filling is fluffy.
- Cup a piece of dough in your hand to form a crater in the center. Fill the crater with a small portion of filling. Top the kolache with pecans in a star formation and sprinkle brown sugar over the top. Place on a baking sheet. Repeat with remaining ingredients.
- Bake, flipping halfway through, for 8 minutes. Cool and serve.
CLASSIC FRUIT KOLACHES

- In a large bowl, combine 3 cups flour, sugar, yeast and salt. In a large saucepan, heat milk, cubed butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg yolks; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Do not knead. Cover and let rise until doubled, about 45 minutes., Turn dough onto a floured surface; roll to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on lightly greased baking sheets. Brush with melted butter. Cover and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 350°. Using the back of a spoon, make an indentation in the center of each roll. Spoon a heaping teaspoonful of raspberry and/or apricot filling into each indentation. Bake 15-20 minutes or until golden brown. Remove from pans to wire racks to cool., Combine confectioners' sugar, butter, vanilla, salt and enough milk to achieve desired consistency. Drizzle over rolls.

HUNGARIAN KOLACHE (NUT ROLL)
I have been making this recipe for many years. Have given it to many of my friends who also make it. They have no problems with this recipe. Easy and good.

Steps:
- Dissolve yeast and sugar in warm water. Wait until it is activated before adding to dry ingredients.
- Mix together the flour sugar and salt.
- Stir in eggs, melted butter, sour cream and dissolved yeast.
- Mix well.
- Let dough rest for 10 minutes, covered with a mixing bowl with some flour underneath to prevent dough from sticking.
- Divide into 4 egual parts.
- Roll out separately onto a floured board into a 14 x 12 rectangle.
- Spread with 1/4 of nut mixture and cover dough to within one inch from the edge.
- Begin to roll up jelly roll fashion from the 12 inch side.
- Seal edge.Tuck ends under Put seam side down on cookie sheet covered with parchment paper.
- Cover with clean cloth.
- Continue to roll and fill dough covering each with cloth.
- Let rise for one hour or until double in bulk.
- You can place 2 rolls on one cookie sheet.
- Bake at 325 degrees for 30 to 35 minutes or until lightly browned.
- Transfer to a wire rack and cool.
- Can be frozen.
APPLE PECAN PIE
This mash-up recipe combines two holiday dessert favorites: apple pie and pecan pie. Delicious on its own, this pie also pairs well with vanilla ice cream or whipped cream.

- Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
- Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
- Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
- Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. (If crust and crumb topping brown too quickly, tent with foil.) Let cool completely on a wire rack before slicing and serving.
