  • Place apples in pastry shell. Combine the sugar, flour and cream until smooth; pour over apples. Sprinkle with cinnamon. , Bake at 400° for 10 minutes. 1/2 cup heavy cream
2 tablespoons powdered sugar
1 (9-inch) refrigerated rolled pie crust (recommended: Pillsbury)
2 medium Granny Smith apples, peeled
1/4 cup granulated sugar
1 tablespoon ground cinnamon, plus extra for dusting

Steps:

  • Special equipment: a 3-inch round cookie cutter
  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with a silpat or parchment paper sprayed with vegetable cooking spray.
  • Unroll the pie crust out on a work surface. Using a 3-inch round cookie cutter, cut out 8 disks of pastry. Arrange the pastry disks on the prepared baking sheet. Using the tines of a fork, prick the pastry all over. Bake until brown and crispy, 8 to 10 minutes. Remove to a wire rack to cool completely, about 10 minutes.
  • Slice the bottom of the apples to create an even surface for cutting. Slice each apple into 6 (1/2-inch) slices. Cut each apple slice in half and remove any seeds or pieces of core. In a medium bowl, mix together the sugar and 1 tablespoon cinnamon. Add the apple slices and toss until coated. Shake off any excess mixture. Arrange the apple slices on the same baking sheet in a single layer. Bake until dark brown, about 12 to 15 minutes. Remove from the oven and let cool for 15 minutes.
  • In a medium bowl, using an electric hand mixer, beat the cream until thick, about 1 minute. Add the powdered sugar and continue to beat until the cream is very thick.

⅓ cup white sugar
1 large egg
½ teaspoon grated lemon zest

Steps:

  • In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. 1 tablespoon fresh lemon juice

  • Preheat oven to 425 degrees F (220 degrees C). Position an oven rack in the lower part of the oven and place a baking stone on it.
  • Place the apples into a large mixing bowl, and toss with the lemon juice.

8 Granny Smith apples - peeled, cored and sliced

3 tablespoons all-purpose flour, plus more for work surface
1 1/2 recipes Pate Brisee for Pear and Tart-Cherry Pie
1 large egg yolk
1 tablespoon heavy cream
3 pounds assorted apples, such as Macoun, Granny Smith, Cortland, Jonagold, or empire, peeled, cored, and cut into 1/4-inch-thick slices
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 tablespoon unsalted butter, cut into small pieces
Sanding sugar, for sprinkling

Steps:

  • On a lightly floured work surface, roll out one pate brisee disc into a 13-inch round about 1/8 inch thick. Fit dough into a 9-inch pie plate. With a sharp paring knife, trim dough flush with the rim. Freeze again until firm, at least 30 minutes.
  • Roll out remaining 2 discs of pate brisee to about 1/8 inch thick. Place on a parchment-lined baking sheet, and freeze until firm, at least 30 minutes. Remove from freezer; using a 2 1/4-inch leaf-shaped cutter, cut out about 65 leaves and place them in a single layer on baking sheet. Place in refrigerator until firm.
  • Preheat oven to 400 degrees. In a small bowl, whisk together egg yolk and heavy cream; set aside. In a large bowl, toss the apples with the lemon juice, granulated sugar, flour, cinnamon, nutmeg, and salt. Remove pie shell from freezer, and fill with apple mixture. Dot with butter.
  • Remove leaves from refrigerator, and score with a paring knife to make veins. Lightly brush the edge of the pie shell with water. Brush the bottom of each leaf with water; beginning with the outside edge, arrange leaves in a slightly overlapping ring. Repeat to form another ring slightly overlapping the first. Continue until only a small circle of filling is left uncovered in the center.
  • Carefully brush the top of the leaves and pie edge with the reserved egg wash, and sprinkle generously with sanding sugar. Freeze or refrigerate until firm, at least 30 minutes.
  • Place pie plate on a baking sheet, and bake until crust just begins to brown, about 20 minutes. Reduce oven temperature to 350 degrees and continue baking until crust is golden brown and juices are bubbling, 35 to 45 minutes. If the crust begins to get too dark, drape a piece of aluminum foil over the top. Transfer to a wire rack to cool.

3 pounds apples, 2 or 3 different kinds, like Golden Delicious, Macoun or Cortland, but not Granny Smith or greenings
1/2 cup granulated sugar
1/2 cup apple cider or apple cider vinegar
1 1/2 teaspoons cinnamon
1/8 teaspoon salt
Several grindings black pepper
2 tablespoons flour
Cold pastry for a 9- to 10-inch double-crust pie
2 tablespoons unsalted butter
1 egg beaten with 1 tablespoon of water

Steps:

  • Preheat oven to 425 degrees. Peel and core the apples, and cut them into slices. Place in a large bowl. Add sugar, apple cider or vinegar, cinnamon, salt, pepper and flour. Mix well.
  • Line a deep-dish 9- or 10-inch metal pie pan with half the pastry, leaving a generous top edge. Prick the bottom of the pastry all over with the tines of a fork. Transfer apples to pie tin, mounding slightly in center. Cut butter into bits, and distribute over apples.
  • Cover apples with the other half of the pastry. Trim around edges, and pinch the top and bottom pastry together. Using a pastry brush, paint the top of the pastry with the egg wash. With a sharp knife make a small hole in the center of the pastry. Make five cuts, each about three-inches long, radiating from the center hole.
  • Put the pie pan on a baking sheet, and bake on the lower level of the oven for 10 minutes. Reduce the heat to 325, and bake for about 50 minutes longer, until the crust is deep golden brown. Remove to a rack, and cool. Serve warm or at room temperature with whipped cream, creme fraiche or ice cream.

3 tablespoons cornstarch
1/2 teaspoon salt
6 cups thinly sliced peeled Granny Smith apples
6 tablespoons maple syrup
1/4 cup heavy whipping cream
Dough for double-crust pie
1/2 teaspoon 2% milk

Steps:

  • Preheat oven to 400°. For filling, in a large bowl, combine 1 cup sugar, cornstarch and salt. Add apples; toss gently to coat. Combine maple syrup and cream; pour over apple mixture. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Add filling. Roll remaining dough to 1/8-in. thick. Cut out crust with a 1-1/2-in. leaf-shaped cookie cutter. With a sharp knife, lightly score cutouts to resemble veins on leaves. Place cutouts over filling. Brush cutouts with milk; sprinkle with remaining 1/4 tsp sugar., Cover edge loosely with foil. Bake for 20 minutes. Uncover; bake until crust is golden brown and filling is bubbly, 20-25. Cool on a wire rack. Refrigerate leftovers.

1 can sweetened condensed milk
2 cups heavy whipping cream
1 teaspoon cinnamon
¼ cup graham cracker, crushed
2 granny smith apples, diced
1 ½ teaspoons lemon juice
4 tablespoons unsalted butter
½ cup brown sugar
2 ½ teaspoons cinnamon
2 teaspoons nutmeg

Steps:

  • Apple Pie Filling:
  • Peel and core the apples, and dice them. Toss the apples in lemon juice and set aside.
  • In a saucepan over medium heat, melt the butter.
  • Add the brown sugar, cinnamon, and nutmeg and mix together.
  • Add in the apples and cook them down. This should take about 10 minutes or so. Remember to keep stirring the apple mixture occasionally.
  • Allow the filling to cool slightly, then cover it with plastic wrap and put it in the refrigerator to cool completely.
  • Ice Cream:
  • Using your stand mixer fitted with the whisk attachment, whip the heavy whipping cream until stiff peaks form. About 10 minutes.
  • Meanwhile, in a medium-sized bowl add the sweetened condensed milk, cinnamon, and crushed graham crackers. Whisk to combine.
  • Add the condensed milk mixture to the whipped cream and whisk to combine.
  • Fold the cooled apple pie filling into the ice cream, and store in an airtight container for at least 6 hours.
  • Serve.
