This mint salad dressing recipe is refreshing, delicious and easy to make! You'll need fresh mint, lemon juice, olive oil, Dijon mustard, and honey or maple syrup. Recipe yields a little over 1 cup.

1/2 cup extra-virgin olive oil
1/2 cup lemon juice (about 2 lemons)
1/4 cup packed fresh mint (spearmint) leaves (about half of a 2/3 or 3/4-ounce package)
3 tablespoons honey or maple syrup
1 tablespoon Dijon mustard
2 cloves garlic, roughly chopped
1/4 teaspoon fine sea salt
10 twists of freshly ground black pepper

Steps:

  • In a food processor, combine all of the ingredients and blend until smooth. Taste, and add more salt and/or pepper if necessary. Use as desired!
  • This dressing will keep well, covered and refrigerated, for up to 1 week.

¼ cup chopped fresh mint
3 tablespoons lemon juice
⅓ cup extra-virgin olive oil
2 tablespoons red-wine vinegar
1 teaspoon honey
½ teaspoon kosher salt

Steps:

  • Combine mint and lemon juice in a small saucepan. Bring to a boil and remove from heat. Let steep for about 10 minutes. Strain into a large bowl, pressing on the leaves to extract all the liquid. You should have about 3 tablespoons liquid after straining. Add oil, vinegar, honey and salt; whisk until well combined.

FRESH FRUIT AND MINT SALAD



Fresh Fruit and Mint Salad image

1 papaya or mango
1 cup strawberries
2 kiwis
1 banana
2 navel oranges
3 tablespoons honey
1 tablespoon Grand Marnier, optional
3 to 5 sprigs fresh mint
1 cup raspberries or blueberries

Steps:

  • Peel and dice the mango or papaya, and put in a medium bowl. Trim the strawberries' stems and half or quarter, if large. Add to the bowl of fruit. Peel and dice the kiwi, add to bowl. Peel and slice the bananas, add to bowl.
  • Cut the top and bottom off the oranges just deep enough to expose the inner fruit. Following the curve of the fruit cut the skin and pith off the orange in panels. Holding the orange over the bowl cut between the membranes to free the citrus segments. Let them fall into the bowl as they are cut free. By hand, squeeze all the juice from the remaining membrane over the fruit, then discard. Repeat with the other orange.
  • Lightly stir the honey and Grand Marnier, if using, into the fruit. Strip the mint leaves off the stem, tear, or chop into smaller pieces, and stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours.
  • Serve.

3/4 cup canned papaya nectar
2 tablespoons rice wine vinegar

1 tablespoon sugar

Assorted fresh fruit, sliced
1 bunch mint, chopped fine (reserve some whole leaves for garnish)

Steps:

  • In a blender, combine papaya, nectar, vinegar, ginger and sugar, and blend until smooth. With motor running, pour in olive oil in slow, steady stream until incorporated. Pour into a bowl, stir in mint and refrigerate, covered until ready to use. Pour over fresh fruit and garnish with mint leaves.

1 cup water
1 cup loosely packed mint sprigs
2-1/2 cups chopped apples
2-1/2 cups chopped ripe pears

1 cup mayonnaise

  • In a large saucepan, bring sugar and water to a boil. Reduce heat; simmer, uncovered, for 4 minutes. Remove from the heat. Add mint; cover and steep for 20 minutes. Strain and discard mint. This is a simple, delightful dressing that comes together in less than 2 minutes. You can serve it immediately or allow the flavours to meld together. Mix it either into your fruit of choice or have it along the side, for friends to dip their fruit slices into or add the volume they want. This recipe is for 2 servings.

6 ounces greek plain yogurt, your brand choice. (I use Nostimo brand yogurt)
1 tablespoon of strongly flavoured honey (Tupelo or Buckwheat are incredible! Regular honey can also be used)
1 tablespoon of chopped mint (I use either Pineapple mint or Peppermint)

Steps:

  • Place the 6 ounces of Greek yogurt into a bowl or container deep enough to stir vigorously. Stir to break up the yogurt.
  • Add chopped mint. Mash mint leaves with the back of a spoon, into the yogurt, to release the flavour. Stir well to combine.
  • Add tablespoon of honey. Stir to combine.
  • Allow to rest or serve immediately. This can either be stirred directly into chunks of fruit, or places on the side of fruit, to be stirred in when you eat it.
  • A favourite combination of Summer fruit that I serve this mixed into, is fresh peach chunks and blackberries! Also great over bananas and strawberries.
