1 pound sliced bacon, cut into 2-inch pieces
3 medium onions, chopped
3 pounds boneless pork, cut into 1-inch cubes
3/4 cup all-purpose flour
Canola oil, optional
3 medium tart apples, peeled and chopped
1 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon pepper
1 cup apple cider
1/2 cup water
4 medium potatoes, peeled and cubed
5 tablespoons butter, divided
1/2 cup 2% milk
Additional salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 2 tablespoons drippings. Increase heat to medium-high. Add onions to drippings; cook until tender, 5-7 minutes. Remove with a slotted spoon; drain. Reduce heat to medium., Preheat oven to 350°. Toss pork with flour. Working in batches, brown pork in drippings, adding oil if needed. Remove with a slotted spoon; drain. Remove skillet from heat; discard drippings. Return pork to skillet. Add bacon, onions, apples, sage, salt, nutmeg, and pepper. Stir in cider and water., Bake, covered, until pork is tender, about 2 hours. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Preheat broiler. Drain potatoes. Mash, gradually adding 3 tablespoons butter, enough milk to reach desired consistency and salt and pepper. Spread potatoes over pork mixture. Melt remaining butter; brush over potatoes. Broil 6 in. from heat until topping is browned, about 5 minutes. If desired, sprinkle with parsley.

While looking through my aunt's old recipes a few years ago, I came across this interesting pork pie. Now whenever my brother comes to visit, this is the meal he requests.

CRUST:
1 cup all-purpose flour
1/4 teaspoon salt
2/3 cup shredded cheddar cheese
1/3 cup shortening
3 tablespoons cold water
FILLING:
1-1/2 pounds boneless pork, cut into 1/2-inch cubes
1 cup water
1/4 cup finely chopped onion
3/4 teaspoon dried sage
3/4 teaspoon salt
1/4 cup all-purpose flour
3/4 cup milk
1-1/2 cups thinly sliced peeled apples
1 tablespoon sugar

Steps:

  • In a bowl, combine flour and salt; mix well. Add cheese; toss to coat. Cut in shortening until mixture resembles coarse crumbs. Stir in water only until moistened. Form into a ball. Roll two-thirds of the ball into a 11-in. circle; place in a 9-in. pie pan, lining the bottom and sides. Roll remaining pastry into an 8-in. circle; cut into eight wedges. Chill pastry shell and wedges while preparing filling. , Brown pork in a skillet over medium-high heat. Add water, onion, sage and salt. Reduce heat; cover and simmer for 30-40 minutes or until meat is tender. Combine flour and milk to form a smooth paste; gradually add to pork mixture. Bring to a boil; boil and stir for 2 minutes. Spoon half into prepared shell. Top with apples and sprinkle with sugar. Spoon remaining pork mixture over apples. Arrange pastry wedges on top. , Bake, uncovered, at 450° for 10 minutes. Reduce heat to 350°; bake 30-40 minutes longer or until pastry is lightly browned and crisp.

3/4 cup butter
1 large onion, chopped
1 1/2 lbs boneless pork, diced
2 cooking apples, peeled and diced
1 teaspoon thyme
1 tablespoon A.1. Original Sauce
2 tablespoons parsley, chopped
1 tablespoon cornstarch
1/2 cup water
2 ounces dry sherry
1 9 inch pie shell, uncooked (Pillsbury-refrigerated)
2 large potatoes, peeled,cooked,hot
1/2 cup milk
salt and pepper
1 pinch nutmeg

Steps:

  • Preheat oven to 350^F.
  • Brown the pork with 1/4 cup of the butter and the chopped onion.
  • Reduce the heat and simmer for 30 minutes,covered.
  • Add the apples, thyme, A-1 Sauce and parsley.
  • Continue cooking for 15 minutes.
  • Combine the cornstarch and water to make a slurry and pour over pork.
  • Stir well, add sherry and remove from heat.
  • Pour into pie shell.
  • In a separate bowl, mash the hot potatoes with 1/4 cup of the butter and the milk.
  • Add salt, pepper and nutmeg.
  • Spread over the pork mixture to cover.
  • Dot the potatoes with the remaining butter.
  • Bake 25 minutes, until golden.
  • I like to use a pastry bag with a wide tip to pipe the potatoes onto the pork mixture.
  • It gives the pie a more attractive appearance when it comes out of the oven.

This is a remarkably tasty dish. Love to cook it in the fall. The combination of apples and pork can't be beat. It may take a little effort, but believe me it is worth it. This is a Taste of Home Recipe. Don't let the length of ingredients fool you, it's really not that bad, just assemble everthing you need first and it will go quickly. Also don't fret if you don't have an ovenproof 12 inch skillet, that just makes it more convient, just tranfer to baking dish.

1 lb bacon, cut into 2 inch pieces
3 medium onions, chopped
3 lbs boneless pork, cubed
3/4 cup flour

Steps:

  • Cook bacon in an ovenproof 12 inch skillet until crisp. Remove with a slotted spoon to paper towels to drain.
  • In drippings, saute onions until tender; remove with a slotted spooon and set aside.
  • Dust pork lightly with flour. Brown a third at a time in drippings, adding oil if needed.
  • To pork, add bacon, onions, apples, sage,nutmeg, salt and pepper. Stir in cider and water.
  • Cover and bake at 325 for 2 hours or until pork is tender.
  • In a saucepan, cook potatoes in boiling water until tender.
  • Drain, and mash with milk and 3 tablespoons butter.
  • Add salt and pepper to taste.
  • Remove skillet from oven and spread potatoes over pork mixture.
  • Melt remaining butter; brush over potatoes.
  • Broil 6 inches from the heat for 5 minutes or until topping is browned.
  • Sprinkle with parsley if desired.

2 tablespoons vegetable oil
½ cup chopped onion
4 raw chop with refuse, 113 g; (blank) 4 ounces (1/2-inch thick) pork chops
½ teaspoon salt
ground black pepper to taste
2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cloves
¾ cup hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.
  • Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.

6 (1-inch thick) boneless pork loin chops
1 ½ cups water
¼ cup margarine
1 (6 ounce) package pork stuffing mix
1 (21 ounce) can apple pie filling with cinnamon

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat vegetable oil in a large skillet over medium-high heat; brown pork chops in the hot oil, 3 to 4 minutes per side.
  • Bring water and margarine to a boil in a saucepan; add stuffing mix and cover. Remove saucepan from heat and let stand 5 minutes to absorb water. Remove cover and fluff stuffing with a fork.

2 1/2 cups all-purpose flour, more for rolling dough
1/2 teaspoon kosher salt
14 tablespoons unsalted butter, chilled and cut into pieces
6 tablespoons good-quality lard or vegetable shortening, chilled and cut into pieces
1/4 to 1/3 cup ice water, more as needed
3 tablespoons dry white wine
2 1/2 tablespoons dried currants
2 1/2 tablespoons extra virgin olive oil
1 medium onion, chopped
1 large garlic clove, minced
2 Granny Smith apples, peeled, cored and cut into 1/4-inch dice
1/2 teaspoon ground cinnamon
1 teaspoon kosher salt
3/4 teaspoon ground black pepper
3/4 pound ground pork
1/4 cup toasted pine nuts
1 tablespoon chopped fresh sage

Steps:

  • To make dough: In a food processor, pulse together the flour and the salt. Add butter and lard or shortening, and pulse until mixture forms coarse crumbs.
  • Add ice water, 2 tablespoons at a time, pulsing briefly between additions, until mixture just comes together; it should not be wet. Form dough into eight equal balls; tightly wrap each ball in plastic wrap, flatten into a disk and refrigerate while you prepare filling.
  • To prepare filling: Combine wine and currants in a small bowl and set aside. In a large skillet, heat oil. Add onion and garlic, and cook, stirring, until softened, 2 to 3 minutes. Increase heat to medium-high; add apple and cook until slightly softened, about 2 minutes. Stir in cinnamon, 1/4 teaspoon salt and 1/4 teaspoon pepper; cook 1 minute more. Add currants and wine, and cook, scraping up any browned bits, until liquid has evaporated, about 30 seconds. Let mixture cool slightly.
  • In a large bowl, mix pork with remaining salt and pepper. Stir in the apple mixture, pine nuts and sage.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil.
  • On a lightly floured surface, roll one ball into a 6-inch round. Mound 1/8 of the filling on half the dough. Fold other half over filling and crimp edges to seal. Transfer pocket to baking sheet. Repeat with remaining dough and filling.
  • Cut several slits into top of each pastry. Bake until crust is golden brown and filling is bubbling, 40 minutes. Let cool 15 minutes before serving.

2 1/2 cups (350 g) all-purpose flour
2 teaspoons dried sage, finely crumbled
1/2 teaspoon table salt
16 tablespoons (2 sticks; 255 g) chilled unsalted butter, cut into small cubes
3 ounces (85 g) sharp Cheddar cheese, finely grated
6 to 8 tablespoons (90 to 120 ml) ice water
1 egg blended with 1 tablespoon water
Fresh sage leaves for garnish (optional)
For the filling
1 1/2 pounds (about 3 large) firm-sweet apples (see Apple Notes), unpeeled, cored, and cut into 1/4-inch-thick wedges
1 1/2 pounds (about 3 large) firm-tart apples, unpeeled, cored, and cut into 1/4-inch-thick wedges
2 tablespoons vegetable oil
1 small onion, very finely chopped
2 pounds (900 g) ground pork (preferably 15 to 17% fat)
1 tablespoon firmly packed light brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3 1/2 tablespoons plain breadcrumbs

Steps:

  • 1. First make the crust: In a medium bowl, whisk together the flour, sage, and salt until well combined. Sprinkle the butter cubes over the flour mixture and use your fingers to work them in (you want to rub your thumb against your fingertips, smearing the butter as you do so). Do this until the mixture looks like cornmeal with some pea-sized bits of butter remaining. Stir in the cheese with a fork until evenly distributed. Sprinkle 6 tablespoons ice water over the mixture and stir with a fork until the dough begins to come together. If needed, add an additional tablespoon or two of ice water (you shouldn't need much more). Turn the dough out onto a lightly floured surface and knead three times. Gather the dough into a ball, then divide into two portions, making one slightly bigger than the other. Press each portion down into a disk and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  • 2. Make the filling: In a skillet over medium-low heat, cook the apples without any oil, stirring gently, until they just begin to soften, 5 to 7 minutes. Transfer to a dish and set aside. Add oil to the pan and increase the heat to medium-high. Add the onion, pork, brown sugar, salt, and spices. Cook, using a wooden spoon to break up the meat, until it is lightly browned, about 10 minutes. Let the meat mixture cool for 10 minutes, then transfer to a food processor. Add the breadcrumbs and pulse five times until the mixture has the texture of coarse sand. Set aside.
  • 3. Prepare the crust: Unwrap the larger disk of dough and put it in the center of a large sheet of parchment paper or wax paper. Cover the dough with a second piece of parchment. Roll out, working from the center, to a 13-inch circle. Peel off the top piece of parchment and transfer the dough to a pie plate, peeled side down. Peel off the remaining parchment and press the crust into the sides of the pie plate, draping any excess over the edge. Unwrap the smaller disk of dough and put it in the center of a large sheet of parchment paper. Cover the dough with a second piece of parchment. Roll out, working from the center, to an 11-inch circle. Set aside.
  • 4. Preheat the oven to 425°F and set a rack to the second-to-bottom position. Fill the pie: Pour the meat mixture into the bottom crust and gently smooth the top with a spatula. Arrange the cooked apple slices over the meat, pressing down to make the whole construction as smooth and neat as possible. Peel the top sheet of parchment off the top crust. Transfer, peeled side down, to the pie, then peel off the remaining parchment. Using a sharp knife, make two 3-inch slashes in the crust to allow steam to escape. Fold the edges of the bottom crust up over the top crust and crimp the edges to seal. Brush the crust with the egg wash and decorate with sage leaves, if desired. Bake at 425°F for 10 minutes, then reduce the heat to 375°F and bake until the crust is golden brown, 25 to 35 minutes more. Remove from oven and let cool 25 minutes before serving.

In 2013, at least, one of the great pie makers in New York City was Kierin Baldwin, the pastry chef at The Dutch in the SoHo neighborhood. This recipe is adapted from hers, for a plain apple pie. It benefits from heeding her advice to pre-cook the filling before baking. "Apple pies that have crunchy, raw apples in them are a pet peeve of mine," Ms. Baldwin said. Peel and core the fruit, cut it into slices, then macerate them in a plume of sugar. Cook these soft with a splash of acid (like lemon juice or cider vinegar) and a hint of cinnamon and allspice, then add some starch to thicken the whole. 2 1/2 pounds apples, peeled and cored, then cut into wedges (5 large honeycrisps will do it)

3/4 cup plus 1 tablespoon sugar
2 tablespoons all-purpose flour
2 teaspoons cornstarch
1 tablespoon apple cider vinegar
1 recipe all-purpose pie dough
1 egg, lightly beaten

Steps:

  • Melt butter in a large saute pan set over medium-high heat and add apples to the pan. Stir to coat fruit with butter and cook, stirring occasionally. Meanwhile, whisk together the spices, salt and 3/4 cup sugar, and sprinkle this over the pan, stirring to combine. Lower heat and cook until apples have started to soften, approximately 5 to 7 minutes. Sprinkle the flour and cornstarch over the apples and continue to cook, stirring occasionally, another 3 to 5 minutes. Remove pan from heat, add cider vinegar, stir and scrape fruit mixture into a bowl and allow to cool completely. (The fruit mixture will cool faster if spread out on a rimmed baking sheet.)
  • Place a large baking sheet on the middle rack of oven and preheat to 425. Remove one disc of dough from the refrigerator and, using a pin, roll it out on a lightly floured surface until it is roughly 12 inches in diameter. Fit this crust into a 9-inch pie plate, trimming it to leave a .5-inch overhang. Place this plate, with the dough, in the freezer.
  • Roll out the remaining dough on a lightly floured surface until it is roughly 10 or 11 inches in diameter.
  • Remove pie crust from freezer and put the cooled pie filling into it. Cover with remaining dough. Press the edges together, trim the excess, then crimp the edges with the tines of a fork. Using a sharp knife, cut three or four steam vents in the top of the crust. Lightly brush the top of the pie with egg wash and sprinkle with remaining tablespoon of sugar.
  • Place pie in oven and bake on hot baking sheet for 20 minutes, then reduce temperature to 375. Continue to cook until the interior is bubbling and the crust is golden brown, about 30 to 40 minutes more. Remove and allow to cool on a windowsill or kitchen rack, about two hours.
