PRALINE APPLE CAKE

Praline Apple Cake image

An extra-special apple cake; maybe the best I've ever had. Rich, though. I got it out of a fundraising cookbook put out by a Toronto school. I don't think I fiddled with it much; maybe I upped the apple content in my never-ending quest for truely apple-y apple cake. I haven't seen another apple cake with the praline topping.

Time 1h45m

Yield 12 serving(s)

Number Of Ingredients 12

1/2 cup butter
1 cup dark brown sugar (I use Sucanat)
2 eggs
1 3/4 cups soft unbleached flour
2 teaspoons baking powder
1 teaspoon vanilla
4 -6 large apples
1 tablespoon cinnamon
2 tablespoons sugar
2 tablespoons butter
1/2 cup sugar
1 egg

Steps:

  • Preheat the oven to 350°F Line the bottom of a 9" springform pan with parchment, and butter the pan.
  • Cream the sugar and beat in the eggs, one at a time, and the vanilla.
  • Sift the flour and baking powder into the butter and sugar.
  • Beat them in to form a smooth batter.
  • Scrape the batter into the prepared springform pan.
  • Wet your hands and pat it evenly into the pan.
  • Mix the cinnamon and sugar.
  • Peel the apples and cut them into thin slices.
  • Toss them in the cinnamon sugar and push them, on end, into the batter.
  • At first they will seem to be sticking very far out of the batter, but the apples will make the level rise as you go.
  • When all the apples are in- pack them in there- press them down slightly, so none stick out more than 1/2".
  • Sprinkle any remaining cinnamon sugar over the top.
  • Bake the cake for 45 minutes.
  • Meanwhile, cream the remaining butter and sugar, and beat in the remaining egg.
  • Spread this over the top of the cake and bake for 15 minutes more.

Time 1h10m

Yield 14

Number Of Ingredients 20

1 cup quick-cooking oats
1 ¼ cups boiling water
1 ⅓ cups all-purpose flour
1 (0.81 ounce) package instant vanilla pudding mix (such as Jell-O®)
2 teaspoons ground cinnamon
1 ½ teaspoons salt
1 teaspoon baking soda
½ teaspoon ground cloves
½ teaspoon ground allspice
1 cup packed brown sugar
1 cup white sugar
½ cup butter
2 eggs
1 cup shredded coconut
1 medium Granny Smith apple - peeled, cored, and diced
½ cup butter
1 cup packed brown sugar
4 tablespoons reduced-fat coconut milk
1 cup shredded coconut
1 cup pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Place oats into a bowl and cover with boiling water. Set aside.
  • Sift flour, pudding mix, cinnamon, salt, baking soda, cloves, and allspice together in a small mixing bowl. Set aside.
  • Beat brown sugar, white sugar, and butter together using an electric mixer until fluffy. Beat in eggs, 1 at a time, until combined. Stir in flour mixture and coconut until blended; stir in softened oats and apples until well blended, making sure not to overmix. Pour batter into the prepared pan.
  • Bake in the preheated oven until lightly browned on top and a toothpick or knife inserted into the center comes out clean, 35 to 40 minutes.
  • While cake is baking, melt butter in a medium saucepan over medium-high heat. Boil, stirring constantly, until butter begins to brown, 2 to 3 minutes. Reduce heat to low and stir in brown sugar and coconut milk until well blended; stir in coconut and pecans. Remove from heat.
  • Remove cake from the oven and immediately spread butter mixture over the top. Set an oven rack 2 to 4 inches from the heat source and preheat the oven's broiler.
  • Broil cake in the preheated oven until topping bubbles and browns, about 2 minutes, making sure not to burn. Remove pan from the oven. Let topping absorb into the cake before serving, about 10 minutes.

Yield makes an 8-inch tart

Number Of Ingredients 14

1/2 recipe Pate Brisee for Apple Praline Tart
1/2 cup all-purpose flour, plus more for work surface
1/2 cup dried apricots, cut into quarters
1/2 cup dried figs, preferably Calimyrna, cut into 1/2-inch pieces
2 tablespoon cognac
1/4 cup water
3 Granny Smith apples, peeled and cored (about 1 1/4 pounds)
Juice of 1 lemon
1/2 cup roughly chopped Almond Praline, plus more for garnish
3 large eggs
3/4 cup sugar
12 tablespoons unsalted butter
1 vanilla bean, split lengthwise, seeds scraped
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 350 degrees. Place an 8-by-1 3/4-inch cake ring on a parchment-lined baking sheet. Roll pate brisee on a lightly floured surface to a 1/8-inch thickness. Fit gently into ring, easing dough into corners and removing excess dough so the tart shell is flush with the top of the cake ring. Use a fork to pierce bottom of tart shell, and place in the freezer for 30 minutes.
  • Place apricots, figs, cognac, and water in a medium saucepan, and bring to a simmer over medium heat. Cook, stirring occasionally, until all the liquid has been absorbed and fruit is softened, about 4 minutes. Set aside to cool.
  • Cut apples into 3/4-inch cubes. Place them in a bowl, and combine with lemon juice, tossing to coat. Add dried fruit mixture and chopped praline, and stir to combine.
  • Combine eggs, sugar, and flour in a medium bowl, and whisk until smooth. Place butter and vanilla-bean pod and seeds in a saute pan, and cook over medium-high heat until butter begins to brown. Add to egg mixture, and whisk until fully incorporated.Remove pod, and discard.
  • Remove tart shell from freezer, and fill with apple mixture, making sure dried fruits are evenly distributed. Slowly pour egg mixture over fruit, letting it seep into all the gaps, until it is 1/8 inch from the top of the tart shell.
  • Place tart in oven, and bake until a tester inserted into the center comes out clean and the top is nicely browned, about 1 hour 30 minutes. Transfer to a wire rack to cool for 30 minutes before removing ring.
  • Serve warm or at room temperature, topped with vanilla ice cream and garnished with almond praline.

JIM'S APPLE RAISIN POUND CAKE WITH PRALINE GLAZE

Jim's Apple Raisin Pound Cake with Praline Glaze image

This is a very moist cake. With all the grated apples, raisins and pecans, it could stand alone without a topping; however with the praline glaze....well, you be the judge!

Time 1h50m

Yield 20

Number Of Ingredients 17

3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground allspice
1 teaspoon salt
1 ½ cups vegetable oil
2 cups white sugar
4 eggs
3 cups apples - peeled, cored and shredded
1 cup chopped pecans
1 cup raisins
½ cup white sugar
½ cup light brown sugar
½ cup half-and-half cream
¼ teaspoon salt
½ cup butter, softened
1 cup chopped pecans
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt pan. In a bowl, whisk together the flour, baking soda, allspice, and 1 teaspoon of salt.
  • In a large bowl, mix the vegetable oil, 2 cups of sugar, eggs, apples, 1 cup of pecans, and raisins. Mix the flour mixture into the wet ingredients, and pour the batter into the prepared Bundt pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out with moist crumbs, about 70 minutes. Let the cake cool in the pan for about 10 minutes, then turn out onto a rack to finish cooling.
  • For glaze, mix 1/2 cup of white sugar, the brown sugar, half and half, and 1/4 teaspoon of salt in a saucepan. Bring to a boil, reduce heat to medium-low, and boil, stirring constantly, until the mixture thickens to a syrup, 5 to 10 minutes. A candy thermometer will read 220 degrees F (105 degrees C). At that point, stir in butter, 1 cup of pecans, and vanilla extract. Continue to cook and stir until the syrup reaches 234 degrees F (110 degrees C). Allow the glaze to cool for 5 minutes, then spread the warm glaze over the cake.

2 tablespoons cognac
1/4 cup water
3 Granny Smith apples, peeled and cored (about 1 1/4 pounds)

12 tablespoons unsalted butter
1 vanilla bean, split lengthwise and scraped
Vanilla ice cream, for serving
1 1/2 cups sliced almonds
1 tablespoon unsalted butter, room temperature
2 cups sugar
1/2 cup water
Juice of 1/2 lemon (1 tablespoon)
(makes one 10 x 15-inch sheet)

  • Preheat the oven to 350°F. Place an 8 × 1 3/4-inch cake ring on a parchment-lined baking sheet. Roll the pâte brisée on a lightly floured surface to 1/8-inch thickness. Fit gently into the ring, easing the dough into the corners and removing excess dough so the tart shell is flush with the top of the cake ring. • Serve warm or at room temperature, topped with vanilla ice cream and garnished with almond praline.
  • Preheat the oven to 350°F. Place the almonds on a baking sheet, and toast until golden brown and fragrant, about 10 minutes. Set aside to cool.
  • Butter a 10 × 15-inch rimmed baking sheet. Spread the toasted almonds in an even layer on the pan. Place the sugar and water in a medium saucepan; stir to combine. Place over medium-high heat; bring to a boil, brushing down the sides of the pan with a pastry brush dipped in water to prevent crystals from forming. Once the sugar is dissolved, cook without stirring until the sugar is a deep amber color.
  • Add the lemon juice; immediately pour mixture over almonds, coating with a thin layer. If the caramel doesn't cover all the nuts, tilt the pan slightly to distribute, or stir in the nuts with a wooden spoon, being careful not to touch the caramel or the hot pan. Cool completely.
  • Gently twist the pan to release the praline. Break into pieces. Store in an airtight container for up to 1 week.

APPLE PRALINE PIE

Apple Praline Pie image

An apple pie loaded with the sweet flavors of brown sugar, spices and pecans.

Provided by By Betty Crocker Kitchens

Categories     Dessert

Time 2h15m

Yield 8

Number Of Ingredients 14

2 2/3 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 cup shortening
7 to 8 tablespoons cold water
1 cup granulated sugar
1 cup chopped pecans
1/3 cup Gold Medal™ all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon salt
8 cups thinly sliced peeled tart apples (7 medium)
3 tablespoons butter or margarine
1/4 cup packed brown sugar
2 tablespoons half-and-half

Steps:

  • In medium bowl, mix 2 2/3 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide in half; shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 10-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
  • In large bowl, mix granulated sugar, 2/3 cup of the pecans, 1/3 cup flour, the cinnamon, nutmeg and 1/4 teaspoon salt. Add apples; toss to coat. Spoon into pastry-lined pie plate. Cut butter into small pieces; sprinkle over apples. Trim overhanging edge of pastry 1/2 inch from rim of pie plate.
  • Roll other round of pastry into 11-inch round. Fold into fourths and cut slits so steam can escape. Unfold pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
  • Bake 50 to 60 minutes or until crust is brown and juice begins to bubble through slits in crust, removing foil for last 15 minutes of baking.
  • In 1-quart saucepan, place brown sugar, remaining 1/3 cup pecans and the half-and-half. Cook over low heat, stirring constantly, until sugar is melted. Spread over hot pie. Serve warm.
