PULLED PORK SANDWICHES WITH APPLE BBQ SAUCE AND FENNEL APPLE COLESLAW
Apple BBQ Pulled Pork - no actual barbeque is used for our family favorite, succulent pulled pork that's slowly braised in apples and spices in the oven to form the incredible sauce.

Steps:
- Begin by dry rubbing a 5 to 6 pound pork shoulder roast with the dry rub mixture. Rub all over the surface of the roast, cover and let sit in the refrigerator for several hours or overnight.
- Heat 4 tbsp oil in a large heavy bottomed skillet over medium heat and brown the roast on all sides. Transfer the roast to a covered roasting pan.
- Add the onions and apples to the pan.
- Mix together the brown sugar, molasses, Worcestershire Sauce, Dijon mustard, cider vinegar
- hot sauce, salt, pepper, apple juice, ginger and five spice powder.
- Pour all over the roast, apples and onions in the roasting pan. Cover with aluminum foil then the lid of the roasting pan.
- Roast in a 300 degree oven for several hours ( approximately 4-5) until the meat is very tender and falling off the bone.
- Remove the braising liquid to a saucepan, skim all the excess fat and reduce the liquid until it slightly thickens. At this point you can puree the sauce with an immersion blender or in a food processor to smooth it out and incorporate the cooked onions and apples. Serve over the pulled pork.

APPLE PULLED PORK SANDWICHES
Apple flavoured BBQ pulled pork sandwiches, served on crusty rolls with apple slaw. Great Fall eating!

- Place pork shoulder in a large, heavy bottomed Dutch oven or pot on the stove-top. If necessary, cut the pork in to a couple of large chunks to fit. Add all the rest of the ingredients to the pot. Cover and turn burner on to medium. After 10-15 minutes, stir the mixture well and flip the pork over. Cover pot, reduce heat to medium-low and allow to cook for 3-4 hours, flipping pork and stirring several times during that period.
- For the Slow cooker, cook on high for about 4-5 hours or on low for 7-8 hours. If the roast is exposed on the top, I like to open the lid a couple of times during cooking and flip it over, but it isn't really necessary if it's not convenient. Cook for 20-30 minutes at the end with the lid off to thicken the sauce.
- When pork is tender enough to pull apart with a fork, remove the pork to a rimmed baking sheet. Remove and discard any bone. Using two forks, shred the pork, discarding any fatty pieces. Return the shredded meat to the pot with the sauce and stir well. Allow to simmer over low heat for about 30 minutes, or until the sauce thickened.
- For the apple coleslaw, combine all the coleslaw ingredients in a medium bowl and stir together well.
- Serve on buns, topped with apple coleslaw.

APPLE CIDER PULLED PORK WITH CARAMELIZED ONION AND APPLES
Tender, sweet, slow cooked pork makes a perfect pairing with sweet and tangy caramelized apples and onion. A perfect fall sandwich.

- Combine hard apple cider and 1/4 cup brown sugar in a slow cooker; mix until dissolved. Add pork tenderloin.
- Cook tenderloin on Low until very tender, about 6 hours. Shred pork with a fork.
- About 20 minutes for the pork is finished, melt butter in a large skillet over medium-low heat; cook and stir onion until well browned, about 10 minutes.
- Combine 1/2 cup brown sugar, cinnamon, and onion powder; season with salt and pepper. Stir apples and sugar mixture into cooked onion. Cover and cook until apples are tender and sauce has thickened, about 10 minutes more.
- Spoon pork and apple-onion sauce over rolls to serve.

- Mix first 5 ingredients. Place apples, onion, celery and cider in a 5-qt. slow cooker; top with roast. Sprinkle roast with seasoning mixture. Cook, covered, on low until tender, 6-8 hours., Remove roast; shred with 2 forks. Skim fat from cooking juices. Mix cornstarch and water; stir into cooking juices. Cook, covered, on high until thickened, 10-15 minutes; stir in pork. Serve on buns. If desired, top with apple slices. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

- 1. Preheat oven to 350 degrees. Place aluminum foil over a baking sheet. Spray generously with Pam. Grate cinnamon and nutmeg in a medium plastic container.
- 2. Add sugar and sliced apples. Shake until apple slices are evenly coated.
- 3. Bake 15 to 20 minutes until tender.
- 4. Warm pulled pork to room temperature in microwave or on stove top.
- 5. Assemble your sandwich by spreading pulled pork on bread slice. Top with red onion slices, spiced apple slices and white cheddar.
- 6. Spread butter on outside of sandwich. Grill with pork layer closest to the pan until golden. Carefully turn and grill until golden and cheese has melted.
