Try this sharp, tangy remoulade as a side dish at a barbecue. The combination of apples, radishes, mustard and cornichons cuts through rich meats

4 Granny Smith apples
1 lemon , juiced
400g radishes
100g good-quality mayonnaise
50ml crème fraîche
1 ½ tbsp Dijon mustard
4 cornichons , finely chopped
pinch of sugar (optional)

Steps:

  • Peel and core the apples, then cut into matchsticks. Put in a large bowl and toss in the lemon juice so they are evenly coated and won't discolour. Thinly slice the radishes and add them to the bowl.
  • Mix in the other ingredients, season and, if too tart, add a pinch of sugar. Leave to sit for 30 mins at room temperature before serving.

4 radishes, thinly sliced
2 Red Delicious apples, cored, seeded and thinly sliced and tossed with 2 teaspoons lemon juice
1/2 red onion, thinly sliced
1 head romaine lettuce or red leaf lettuce, chopped
3 tablespoons red wine vinegar
2 teaspoons sugar
1 teaspoon salt
1/4 cup extra-virgin olive oil
1/2 cup sour cream
1 teaspoon poppy seeds
2 tablespoons chopped dill or 2 teaspoons dried dill

Steps:

  • Combine radish, apple (coated in lemon to retard browning) and onion with chopped lettuce. In a small bowl, combine vinegar with sugar and salt. Whisk in oil, stir in sour cream, poppy and dill. Drizzle dressing evenly over salad and serve.

This recipe is fun, easy, and a real crowd pleaser at the family dinner table. This recipe is very forgiving, and can be used for any kind of ribs. All measurements can be altered to change taste and yield results.

4 pounds pork spareribs
2 quarts apple juice
3 cups barbecue sauce
½ cup prepared horseradish
3 tablespoons Worcestershire sauce
1 teaspoon garlic salt

Steps:

  • Place ribs in a stock pot, and cover with apple juice. Bring to a boil, reduce heat, and simmer for 1 to 2 hours. Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together barbecue sauce, horseradish, Worcestershire sauce, and garlic salt. Stir in 3 tablespoons of the apple juice from the ribs.
  • Brush underside of ribs with 1/3 of the sauce. Turn them over, and place in roasting pan. Brush tops with remaining sauce.
  • Bake in preheated oven for 25 to 35 minutes, brushing occasionally with sauce.

1 large celery root (about 1 3/4 pounds), peeled and cut into large wedges
2 Granny Smith apples, peeled, quartered, and cored
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1/4 cup whole milk
2 tablespoons fresh lemon juice
1/3 cup toasted walnuts, roughly chopped
3 tablespoons chopped fresh parsley

Steps:

  • Using the large holes on a box grater or the grating disk of a food processor, shred celery root and apples and transfer to a large bowl. In a small bowl, whisk together mayonnaise, mustard, milk, and lemon juice. Pour dressing over celery root mixture. Add walnuts and parsley and toss to combine. Serve at room temperature.
