APPLE BROWNIES
This was my Mom's recipe. Easy and quick to make. Apples and walnuts are packed into a cinnamon spiced blonde brownie. Always a hit when I bring it to parties. Very moist and great to make in the fall when apples are plentiful.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
- In a large bowl, beat together the melted butter, sugar, and egg until fluffy. Fold in the apples and walnuts. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Stir the flour mixture into the wet mixture until just blended. Spread the batter evenly in the prepared baking dish.
- Bake 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

Loaded with fall flavor, apple brownies mix up as quickly as the chocolate version -- just the thing for a school bake sale. - Preheat oven to 350 degrees with rack in center position. Generously butter an 8-by-11-inch baking dish.
- Whisk together flour, cinnamon, baking powder, salt, and baking soda in a medium bowl. In a separate bowl, beat together butter, sugar, and egg with a mixer until pale, about 2 minutes. Add walnuts and apples, and stir by hand until combined. Add flour mixture, and stir until combined, about 30 seconds more.
- Spread batter in pan, and bake until golden brown and slightly firm, about 40 minutes. Let cool on a wire rack 30 minutes, then cut into 12 bars.
APPLESAUCE BROWNIES

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square cake pan.
- Melt butter and chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Beat eggs in a bowl until light and lemon-colored; gradually beat in sugar. Stir chocolate mixture into egg mixture and beat rapidly for 1 minute.
- Whisk flour, baking powder, and salt together in a bowl; add to chocolate mixture and stir to combine. Stir walnuts, apples, and vanilla extract into chocolate mixture until batter is combined. Spoon batter into prepared cake pan.
- Bake brownies in the preheated oven until set, about 40 minutes.

I like maple syrup. And walnuts. Brownies too. I REALLY like these Maple Walnut Brownies from the King Arthur Flour Baker's Catalogue. These dense, chewy bars are a nice change of pace from the usual pumpkin- and apple-based fall desserts.

- Preheat oven to 350°F Lightly grease an 8" square pan.
- Whisk together flour, salt, and baking powder; set aside.
- Melt butter and brown sugar together in the microwave or over a burner; remove from heat and stir in the syrup. Allow the mixture to cool to lukewarm (I let it sit for about an hour).
- Stir in the eggs one at a time, then the maple flavor.
- Stir in the dry ingredients, and finally the walnuts.
- Pour into prepared pan, and bake 25 minutes, just until the edges pull away from the sides of the pan. Remove from oven and cool before cutting and glazing.
- To make the glaze: Whisk all three ingredients together, adding more liquid if necessary to make a pourable glaze.

Whether you're having a dinner party, last-minute guests, or just want a spur-of-the-moment treat, always having homemade cookies on hand--instead of a box of store-bought cookies that will be stale within a week--is just about the coziest thing ever.

- Preheat the oven to 350 degrees F.
- In a large bowl, combine the flours, oats, baking soda, baking powder, salt, and cinnamon.
- Using a stand mixer or hand mixer, beat the butter and honey on medium speed for 1 minute, or until creamy. Add the egg and vanilla and beat on medium speed until smooth, about 1 minute.
- Slowly add the dry ingredients to the wet, mixing to incorporate as you go. Stir the apple and walnuts into the batter.
- Drop 1 tablespoon of dough at a time onto a baking sheet lined with parchment or a silicone baking mat, keeping space between the cookies (see Cook's Note). Bake for 12 minutes, or until golden. Remove to a cooling rack and serve.
