PEPPER JACK CHEESE STRAWS

- Preheat the oven to 325 degrees F.
- Put the softened cheese and butter in the bowl of a stand mixer. Using the paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
- Sift 1 cup of the flour together with the salt, garlic powder, black pepper and cayenne in a large bowl. Stir in the thyme. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press (you may not need to add all the flour).
- Lightly spray 2 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tip and press the dough onto the cookie sheets in long strips that run the length of the pans (see Cook's Note). Repeat with the remaining dough until the cookie sheets are full. Bake, flipping halfway through, until the straws are golden brown and crisp, about 20 minutes.
- With your hands or a sharp knife, break or cut the strips into 3-inch lengths. Use a flat, thin spatula or egg turner to remove the cheese straws from the pan. Allow them to cool on a wire rack. Once they are completely cool, serve or store in a tightly covered container.
PEPPER JACK POTATOES

- In a large bowl, combine potatoes and onion. Combine the butter and seasonings; drizzle over the potato mixture; toss to coat. Place half in a greased 13x9-in. baking dish. Sprinkle with half of the cheese; top with remaining potato mixture., Cover and bake at 400° for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Serve with salsa if desired.

- Place a cube of gorgonzola on top of a basil leaf. Roll up the basil around the cheese and stuff into a pepper. Repeat with the remaining ingredients.
PEPPERONI PUFFS
A co-worker brought these to a recent function, and they quickly disappeared from the table. I had to have the recipe. I'll probably add a pinch of dried red peppers or cayenne to this. I also usually 'nuke' pepperoni before cooking with it, to get rid of overabundant grease.

- Add pepperoni, and allow batter to stand for 15 minutes.
- Grease mini muffin pans and fill 3/4 full.
- Bake at 350-degrees for 25-30 minutes, or until golden brown.

- Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
- In a medium bowl, cream together butter and sugar until smooth. Beat in the vanilla. Grind pecans in a food processor or blender; toss with cake flour. Stir the pecan mixture into the creamed mixture until well blended. Roll the dough into tablespoon balls, then place them 1 inch apart onto the prepared cookie sheets.
- Bake for 25 to 20 minutes in the preheated oven, or until lightly browned. Roll warm cookies in confectioners' sugar. When they are cooled, roll them again.

PEPPER JACK CRACKERS

- Preheat oven to 375°F. and grease two baking sheets.
- In a food processor blend together butter and cheese until smooth. Add egg yolk, salt, and cayenne and blend until combined. Add flour and blend until mixture just forms a dough.
- Working in batches, transfer dough to a pastry bag fitted with a 7/8-inch-wide ribbon tip and pipe dough in long strips 2 inches apart on baking sheets. (Alternatively, working in batches, dough may be transferred to a cookie press fitted with a ribbon disk and pressed out in long strips 2 inches apart on baking sheets.) Dough strips may break in places but repairs are not necessary, as strips will be cut later.
- In a small bowl whisk together egg white and a pinch salt until just combined. Brush each strip of dough with some egg white and bake in batches in middle of oven until golden brown, about 10 to 15 minutes. While crackers are still hot, slice diagonally into 1 1/2-inch-long pieces and cool completely on racks. Crackers keep in airtight containers 5 days.

- Combine the beef, egg, breadcrumbs, onion, salt & pepper. Form into 6 oval shaped loaves.
- Roll each pattie in the pepper, so they are well coated.
- Brown each pattie in oil, set aside to cool.
- Cut each sheet of pastry in half. Wrap each pattie in 1 piece of pastry sheet, sealing all the edges. Brush with beaten egg, and bake at 200C for 20 minutes, or until golden brown.
