Steps:
- Brush one side of each tortilla with shortening.
- Place one tortilla, shortening side down on work surface. Spread chipotle sauce evenly on one tortilla.
- If chicken was not freshly grilled, then microwave chicken approximately 45 seconds, then distribute evenly on top of sauce on tortilla.
- Evenly put Quesa Filling on top of chicken. Then, cover with the other tortilla, shortening side up.
- Brown on griddle or in non stick pan evenly on both sides until internal filling is thoroughly heated.
- Use shredded lettuce, sour cream, green onion and salsa as accompaniments. I like to add crumbled bacon on top.

Steps:
- Heat oil in skillet over medium heat. Rub chipotle spice over chicken breasts and cook in skillet to a 165º internal temperature.
- While cooking, begin preparation of salad by thoroughly cleaning and sanitizing sink. Rinse and wash all vegetables in cold, 40º water with 1/2 cup of salt and 1/2 cup of white vinegar. Drain.
- Clean and sanitize cutting board and knife. Chop salad greens into 1X1" squares. Trim peppers, onions, celery and dice into 1/4" cubes and place into large mixing bowl. Add greens, corn, black beans, tortilla strips and dressing and gently mix with a spatula.
- Mound salad onto plate and top with pepper jack cheese. When chicken is thoroughly cooked, dice into 1/2" cubes and add to top of salad just prior to serving.
APPLESAUCE BARS
Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
- In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.
