I am lucky enough to live in a small community whose school district still allows us to send home-baked goods with our children. My daughter is in 7th grade now, but her classmates still beg her to have her mom send this special treat. It's a beautiful quick bread your family, friends, and all the neighbor children will love.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts
3 cups apples - peeled, cored, and chopped
1 cup vegetable oil
2 cups white sugar
3 eggs, beaten
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2x4 1/2-inch loaf pans) with cooking spray.
  • Mix flour, baking soda, salt, walnuts, and apples in a large bowl. Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 eggs
2 cups white sugar
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups apples, peeled and diced
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cinnamon, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
  • Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1/2 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons buttermilk
1 cup grated peeled apple
1 cup chopped nuts
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. , Pour into a greased and floured 9x5-in. loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. 1/2 cup shortening
1 cup sugar
2 eggs
4-1/2 teaspoons buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup finely chopped tart apple
1/2 cup chopped walnuts

Steps:

  • In a bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in buttermilk and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixtures. Fold in apple and walnuts. Pour into a greased 8x4-in. loaf pan. This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

3 eggs
2 cups sugar
1 teaspoon vanilla
3 cups apples, diced
3 cups flour
1 teaspoon cinnamon

Steps:

  • Combine and set aside the oil, eggs, sugar, and vanilla.

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder

4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. 1 teaspoon vanilla

1 tablespoon sugar
1/4 teaspoon cinnamon

Steps:

  • Heat over to 350 and grease and flour loaf pan.

  • Stir in flour, baking powder, baking soda and salt until smooth.
