APPLESAUCE TURNOVERS....SORT OF
I had made up a batch of Applesauce, just chopped up 4 red and 4 green apples, skins and all, sprinkled with cinnamon,cooked in the microwave and blended until smooth, and a batch of yogurt cream cheese, mixed that with some yogurt butter and had some crescent rolls on hand.....turned out way yummy and wanted to share. This is NOT a sugary sweet treat...unless you want it to be

Steps:
- Preheat oven to temperature called for on crescent rolls tube.
- Crack open the tube of crescent rolls and separate into 8 rolls on cookie sheet.
- Mix together until smooth the cream cheese and butter. Evenly spread 1 TBSP of Cream Cheese, topped with 1 TBSP Applesauce.
- Roll up from the pointy end - loosely.
- Combine egg white and water, mix well, and brush over the rolled up crescents.
- Mix Sugar and Cinnamon and sprinkle over egg washed crescents, as much or as little as you desire. ( I had enough left over to make another batch, so might add more next time).
- Follow directions on the crescent rolls, keeping an eye on them them. Mine came out of the oven golden brown at the time recommended,375 degrees, 11 - 13 minutes.
THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
CLASSIC APPLESAUCE
Cooking the apples with their skins on adds a beautiful rosy blush to the finished sauce.

- Combine apples, cinnamon stick, lemon juice, salt, and 1/4 cup water in a large Dutch oven or other heavy pot. Scrape in seeds from vanilla bean and add pod. Cover pot and cook over medium-low heat, occasionally stirring with a wooden spoon and checking to make sure apples are not scorching (add a splash of water if they are), until apples are soft and falling apart, 35-45 minutes. Uncover pot and let apples cool slightly.
- Working in batches, pass apples through food mill fitted with a medium disk into a large bowl; discard solids. If sauce is watery, return to pot and simmer over medium heat until thickened.
- Do Ahead:
- Applesauce can be made 4 days ahead. Let cool; cover and chill.

CLASSIC APPLESAUCE

- In a medium-size, heavy saucepan, combine apples, sugar & water & bring to a boil.
- Cover & simmer over medium-low heat until the apples are tender & broken down, about 15 minutes, stirring once or twice.
- Raise the heat to medium-high & cook, uncovered, until liquid is slightly reduced, about 5 minutes longer, then stir in lemon juice.
- For a smooth sauce, stir frequently or puree in a food processor.
- Serve warm or cold.
- Will keep, tightly covered, in the refrigerator for up to 1 month, or in the freezer for 2 months.
