2 - 8oz. Blocks of Cream Cheese (Room Temp)
1 Cup of Shredded Cheddar Cheese
1/2 Cup of Apricot Preserves
1 Cup of Crushed Cheez-Its

Steps:

  • Mix first 3 ingredients together well and store in refrigerator for at least 2 hours. Remove from refrigerator and roll into a ball. Roll in crushed Cheez-Its. Store in refrigerator until ready to serve. Can be made a day in advance.

2 tablespoons honey
½ (8 ounce) package mild Cheddar cheese, shredded
1 (6 ounce) package dried mixed fruit, chopped
1 cup chopped pecans

Steps:

  • In a medium bowl combine cream cheese and honey; beat until smooth. Stir in cheese and chopped fruit; mix well.
  • Form into a ball and roll in chopped nuts. Chill for at least 3 hours.

  • Chop apricots in food processor.
  • Add remaining ingredients, except pecans, and mix well.
  • Roll ball and chill in plastic wrap at least one hour.
  • Roll ball in chopped pecans, chill until ready to serve.
  • Serve with crackers.

1-1/2 cups dried apricots
2 cups sweetened shredded coconut
2/3 cup sweetened condensed milk
Confectioners' sugar

Steps:

  • Place apricots in a food processor; cover and pulse until chopped. Transfer to a large bowl; add coconut and milk. Shape into 1-in. balls; roll in sugar. , Place on a baking sheet. Refrigerate until firm. Store in an airtight container in the freezer or refrigerator.

1 cup boiling water
1 cup dried apricots, chopped
3 tablespoons margarine
½ cup cream cheese, softened
1 cup white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup dates, pitted and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Pour boiling water over apricot pieces in a small bowl. Cool.
  • In another bowl, combine flour, baking powder, soda, salt, and dates.
  • In a large bowl, cream butter or margarine, cream cheese, and sugar. Beat in eggs, one at a time, until smooth. Stir in cooled apricots and water. Pour in flour mixture, and stir until moistened. Turn batter into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done. Let stand 10 minutes. Remove from pan to rack. Cool.
