ROSEMARY GIN FIZZ

3/4 cup sugar
4 rosemary sprigs
1/4 cup gin
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
About 1/4 cup seltzer
1 small rosemary sprig

Steps:

  • For the rosemary simple syrup: Combine the sugar, 3/4 cup water and the rosemary sprigs in a small saucepan over medium heat. Bring to a simmer and cook, stirring and muddling the rosemary with a wooden spoon, until the sugar has completely dissolved, about 1 minute. Take off the heat and cool to room temperature. Strain into a small container. The syrup can be kept refrigerated in an airtight container up to 2 weeks.
  • For the rosemary gin fizz: Combine the gin, lemon juice, lime juice and 2 tablespoons simple syrup in a cocktail shaker filled with ice. Shake vigorously, then strain into a rocks glass filled with ice. Top off with the seltzer and garnish with the rosemary sprig.

A classic gin fizz with the addition of some Summery flavors of sweet apricot and woodsy aromatic rosemary. It's like walking in an apricot farm surrounded by pine trees!

2 oz gin, 4 tbsp
1 oz lemon juice, 2 tbsp
3/4 oz apricot rosemary simple syrup*, 1.5 tbsp, see below
1 egg white**, optional
1 oz club soda, or ginger beer
8 apricots, pitted and cut into smaller pieces
1/4 cup fresh rosemary, roughly chopped
1 cup sugar, 200g
1 cup water, 250ml
1 tablespoon fresh ginger, optional

Steps:

  • Discard pits from apricots and cut the apricots into smaller pieces, 8 ish. No need to peel them. Roughly chop rosemary.
  • Add sugar and water to a medium saucepan, give it a stir. Add in the rest of the ingredients and let it simmer for 15-20 minutes, stir occasionally and press the apricots into the syrup.
  • Once done, remove from heat and strain the mixture, pressing the apricots gently into the sieve.
  • Let the syrup cool to room temperature. Once cool, add into clean glass bottles and store in the fridge for 1 month.
  • Add all ingredients to a shaker and shake vigorously for 15 seconds. Add ice and shake a little more.
  • Run a rosemary sprig around the edges of a whiskey or Tom Collins glass. Strain the drink into the glass.

  • Add ice to lowball glass. In cocktail shaker with ice, shake gin, simple syrup and lemon juice until blended. Pour into glass, straining out ice. Add club soda to fill glass. Garnish with lemon slice and rosemary.

2 slices peeled cucumber, plus 1 unpeeled slice for garnish
6 fresh mint leaves
2 sprigs fresh cilantro
2 teaspoons turbinado sugar
1 ounce fresh lime juice
2 ounces cucumber-infused gin (such as Hendrick's)
3 to 4 ounces club soda

Steps:

  • Place the peeled cucumber slices, mint, cilantro and sugar in a cocktail shaker and muddle. Add the lime juice and gin. Fill the shaker halfway with ice and shake vigorously for 1 to 2 minutes (this seems like a long time, but it's essential).
  • Fill a cocktail glass with fresh ice. Strain the drink into the glass, top with the club soda and garnish with a cucumber slice.
