1 bone-in turkey breast (5 to 6 pounds)
2 garlic cloves, peeled and thinly sliced
1 tablespoon sliced fresh gingerroot
1/2 cup white wine or reduced-sodium chicken broth
1/3 cup reduced-sugar apricot preserves
1 tablespoon spicy brown mustard
2 teaspoons reduced-sodium soy sauce

Steps:

  • With fingers, carefully loosen skin from turkey breast. With a sharp knife, cut ten 2-in.-long slits in meat under the skin; insert a garlic clove slice and a ginger slice into each slit. , Place turkey in a large bowl; pour 1/4 cup wine under the skin. Secure skin to underside of breast with toothpicks. Pour remaining wine over turkey. Cover and refrigerate for 6 hours or overnight., In a small bowl, combine the preserves, mustard and soy sauce; set aside. Drain and discard marinade; place turkey on a rack in a foil-lined roasting pan., Bake at 325° for 2 to 2-1/2 hours or until a thermometer reads 170°, basting with apricot mixture every 30 minutes (cover loosely with foil if turkey browns too quickly). Cover and let stand for 15 minutes before carving.

Roasted Turkey Breast with Dried Fruits Pan Sauce image

1 skin-on boneless turkey breast, about 4 pounds
Kosher salt and freshly cracked black pepper
2 cups white wine
1/2 cup dried cranberries
1/2 cup dried apricots, diced the same size as the cranberries
1/4 cup canola oil
4 cloves garlic, smashed
2 sprigs fresh rosemary
5 tablespoons unsalted butter
2 shallots, minced
2 cups chicken stock
1 teaspoon cider vinegar
6 fresh sage leaves, minced
Zest of 1 lemon
Flaky sea salt, for garnish

Steps:

  • Season the turkey breast on both sides with kosher salt and pepper. Refrigerate, uncovered, for 24 hours on a metal rack in a baking sheet.
  • Bring the turkey breast to room temperature. Preheat the oven to 400 degrees F.
  • In a medium saucepan, bring the white wine to a boil. Pour over the dried cranberries and apricots in a large heatsafe bowl. Allow to cool and the fruit to absorb some of the liquid, about 1 hour.
  • In a large saute pan, heat the oil over medium-high heat. When the pan begins to lightly smoke, season the turkey with more kosher salt and pepper. Place the turkey in the pan skin-side down. When it begins to brown, flip the turkey, add the garlic, rosemary and 3 tablespoons of the butter and baste for 1 minute. Transfer to the oven and roast until the internal temperature registers 155 degrees F, 35 to 45 minutes depending on the size of the breast. Set the turkey aside skin-side up to rest for about 1 hour.
  • Return the pan to medium-high heat, add the shallots and dried fruit with the wine and cook until the liquid is almost evaporated, 2 to 3 minutes. Add the chicken stock and reduce by half, 10 to 15 minutes. Finish with the vinegar, sage, lemon zest and remaining 2 tablespoons butter. Season with kosher salt and pepper.
  • Slice the turkey, arrange on a large serving dish and pour the sauce over it. Garnish with flaky sea salt.

1 cup chopped fresh parsley
1 tablespoon chopped fresh sage
4 teaspoons lemon zest (from 1 lemon)
Coarse salt and ground pepper
3/4 pound sweet Italian sausage meat
6 tablespoons apricot jam, divided, plus more for serving
1/2 cup fresh breadcrumbs
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees. Place turkey skin-side up on a work surface. Using the palms of your hands and keeping skin intact, flatten turkey to an even thickness. Gently slide your fingers under skin to loosen it, creating a pocket.
  • In a small bowl, combine parsley, sage, and zest, and season with salt and pepper. Transfer half the mixture to a separate bowl and add sausage, 4 tablespoons jam, and breadcrumbs. Stir to combine. Spread sausage mixture under skin.
  • Flip turkey over and coat with remaining herb mixture. Fold short sides of breast into middle, flip, and place on a roasting rack set in a roasting pan lined with foil. Rub skin with oil and season with salt and pepper. Cover with foil and roast 1 hour and 30 minutes. Uncover, brush skin with remaining 2 tablespoons jam, and cook until skin is brown and an instant-read thermometer reads 165 degrees, 15 to 20 minutes more. Re-cover with foil if skin begins to get too dark. Transfer to a cutting board and let rest 10 minutes before slicing. Serve with additional jam.

This recipe was my spin off of another recipe that used chicken and topped with a berry sauce. Super tasty dish! Makes for a very nice presntation. I made this for our Thanksgiving dinner last year (there was only 2 of us). My husband loved the taste and presentation of the finished product.

Number Of Ingredients 10

4 boneless skinless turkey breast halves (pounded flat to 1/4-inch thickness with a mallet)
1 (4 ounce) package boursin cheese, ail with fresh herbs, cut into 4 chunks
1/2 cup pine nuts, finely chopped
4 leaves fresh spinach (or several leaves of baby spinach)
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1/2 cup dry white wine
1/4 cup low fat balsamic vinaigrette salad dressing (homemade or purchased)
1/4 cup apricot jam
fresh herb, garnish (optional)

Steps:

  • Preheat oven to 350F and grease baking pan.
  • Pound turkey breast, to be 1/4" thin.
  • Bring a small saucepan of water to a boil.
  • Using tongs, briefly dip spinach leaves one at a time into the boiling water to blanch- just a few seconds per leaf or they will get soggy- they should still be mostly raw. Pat dry and set aside on a plate.
  • Place chopped pinenuts onto a small plate and roll each chunk of boursin cheese in the nuts to coat and set aside.
  • Lay pounded turkey breasts on top of a sheet of wax paper on your counter and season both sides of each breast with salt& pepper (to taste).
  • Set dried blanched spinach leaves on top of each piece of turkey.
  • Next, place a nut coated cheese chunk on top of each turkey piece in the center.
  • Fold turkey ends up over the cheese to make a bundle, securing with toothpicks if needed.
  • Set turkey bundles in a greased baking pan and cover with foil.
  • Bake at 350F oven for 30 minutes or until the turkey is tender and cooked all the way through.
  • Meanwhile, combine white wine, vinegrette dressing, and abricot jam in a small skillet. Cook over medium-high heat until reduced by half (this may take several minutes).
  • If the sauce is ready before the turkey, simply remove from burner and reheat slightly before pouring over the cooked turkey bundles.
  • Place a cooked turkey bundle onto each serving plate, with apricot sauce ladled over the top. If you like, decorate each plate with a few sprigs of fresh green herbs.

1/4 cup apricot preserves
2 teaspoons lemon juice
4 sprigs fresh rosemary

Steps:

  • Heat grill for indirect cooking as directed by manufacturer. If ribs and backbone of turkey breast are attached, cut off with sharp knife or scissors so breast will be stable on grill. Loosen skin from turkey breast.
  • In small bowl, mix preserves and lemon juice until blended. Spread half of preserves mixture over meat under skin. Slide rosemary and garlic under skin.

Steps:

  • Combine apricot nectar, preserves, ginger, and honey in a small saucepan and bring to boil. Reduce heat to medium-low, and simmer until thickened and reduced to 1-1/4 cups, about 15 minutes.
  • Blend 3/4 cup unsalted butter at room temperature, 3 tablespoons chopped fresh sage, salt, and pepper in small bowl. Set aside.
  • Melt 2 tablespoons unsalted butter in a large heavy skillet over medium heat. Add onions and shallots; saute until very soft and light brown, about 20 minutes.

  • If stuffing turkey, spoon stuffing loosely into main cavity; it will expand as it cooks. Tie legs together loosely to hold shape of turkey.
  • Roast turkey for 30 minutes in the preheated oven. Reduce oven temperature to 325 degrees F (165 degrees C), and continue roasting 1 hour 30 minutes, basting occasionally with pan drippings. Tent turkey with aluminum foil; roast 45 minutes longer.
  • Add onion mixture, 1 cup broth, thyme, and 1/2 teaspoon chopped fresh sage to the roasting pan. Roast 15 more minutes before brushing 1/2 cup apricot glaze over turkey. Place turkey on a platter, and tent with foil. Let stand 30 minutes. Reserve mixture in pan for gravy.
  • Pour contents of roasting pan into a strainer set over a large bowl. Skim fat from pan juices using a large spoon. Transfer the onion mixture to a blender. Add 1 cup pan juices, and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency. Transfer sauce to a large saucepan, and bring to a boil. Cook until color deepens, skimming off any foam, about 5 minutes. Season with salt and pepper.

Steps:

  • For Glaze:
  • Combine all ingredients in heavy small saucepan and bring to boil. Reduce heat to medium-low and simmer until thickened and reduced to 1 1/4 cups, about 15 minutes.

Place turkey on platter, tent with foil. Let stand 30 minutes. Reserve mixture in pan for gravy.
  • For Gravy:
  • Pour contents of roasting pan into strainer set over large bowl. Spoon fat from pan juices in bowl. Transfer onion mixture in strainer to blender. Add 1 cup pan juices to blender and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency. Transfer sauce to heavy large saucepan and bring to boil. Cook until color deepens, skimming off any foam, about 5 minutes. Season with salt and pepper.
  • Serve turkey with gravy.

1/2 cup chopped dried apricots
1/4 cup sweetened dried cranberries
1/4 cup real maple syrup
1/2 cup cream sherry or apple juice
2 tablespoons soy sauce
6- to 7-pound frozen bone-in whole turkey breast, thawed
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup cornstarch
2 tablespoons water
4 medium green onions, sliced (1/4 cup)

Steps:

  • Melt butter in 10-inch nonstick skillet over medium heat. Cook apricots and cranberries in butter 2 minutes, stirring occasionally. Stir in maple syrup, 1/4 cup of the sherry and the soy sauce. Cook 2 to 3 minutes, stirring occasionally, until mixture is reduced slightly. Cool 5 to 10 minutes. (Mixture will thicken slightly.)
  • Remove skin from turkey breast. Sprinkle turkey with salt and pepper. Place in 6-quart slow cooker. Spoon maple syrup mixture over turkey breast.
  • Cover and cook on low heat setting 5 to 6 hours or until juice of turkey is no longer pink when center is cut.
  • Remove turkey from cooker; cover to keep warm. Mix remaining 1/4 cup sherry, the cornstarch, water and onions; stir into mixture in cooker. Cover and cook on high heat setting 10 to 15 minutes or until mixture thickens slightly. Serve sauce with turkey.
