16 ounces dried apricots
2-1/2 cups orange juice
3/4 cup sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • In a large stockpot, combine apricots, orange juice and sugar; bring to a boil. Reduce heat; cover and simmer 30 minutes. Stir in lemon juice, cinnamon and ginger. Remove from heat and cool to room temperature., Rinse four 1-cup plastic containers and lids with boiling water. Dry thoroughly. Puree apricot mixture in a food processor or blender until smooth. Spoon into containers, leaving 1/2-in. headspace. Refrigerate up to 3 weeks or freeze up to 1 year. Thaw frozen jam in refrigerator before serving.

500g whole dried apricot , chopped
juice 3 large lemons
1 ½kg jam sugar

Steps:

  • Put the apricots in a large pan, add 1.5 litres water, cover and leave overnight to soak.
  • Next day, place a small plate in the fridge to chill. Put the apricots and water on the hob, then add the lemon juice and bring to the boil. Reduce the heat, then simmer for 30 mins or until the apricots are tender and starting to break up.
  • Remove from the heat and add the sugar, stirring until it dissolves. Return to the heat and boil rapidly for 20 mins or until setting point is reached. To check this, remove the plate from the fridge, put a spoonful of jam onto the plate and pop it back in the fridge for a few mins - the jam should wrinkle when you push it with your finger. A sugar thermometer will also give you the setting point of jam, which is 105C.
  • Carefully pour the jam into hot sterilised jars, top with a disc of wax paper or baking parchment, seal with a lid, then leave to cool and set. The jam will last for 6 months unopened in a cool, dark cupboard.

8 cups fresh apricots - peeled, pitted, and crushed
¼ cup lemon juice
6 cups white sugar
5 (1 pint) canning jars with lids and rings

Steps:

  • Mix apricots and lemon juice in a large pot; add sugar. Slowly bring to a boil, stirring until sugar dissolves. Cook and stir until apricot mixture thickens, about 25 minutes. Remove from heat and skim foam if necessary.
  • Meanwhile, prepare jars, lids, and rings by cleaning and sterilizing in dishwasher or boiling water bath. Leave lids in simmering water until ready to seal jars.
  • Ladle hot jam into hot sterilized jars, leaving about 1/4 inch of space on top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 (1.75 ounce) package powdered fruit pectin

Steps:

  • Stir apricots, lemon juice, and sugar together in a large pot over medium heat; add butter to reduce foaming. Bring apricot mixture to a rolling boil, stirring constantly. 1/3 cup fresh lemon juice
6 cups sugar
2 (3 ounce) envelopes liquid pectin

Steps:

  • Combine apricots and water.
  • Over medium heat bring mixture to a boil.
  • Reduce heat to a simmer gently for 5 minutes
  • Take pan off heat; skim and let set 30 minutes.
  • Sieve the apricots and strain juice from pulp (use pulp in apricot jam).
  • Line sieve with 4 layers of clean damp cheese cloth.
  • Strain; cover the juice and refrigerate overnight.
  • Ladle the juice from container, being careful not to disturb the sediment from bottom using 3 cups of juice.
  • To make the jelly, combine juices when they are warm add sugar.
  • Stirring constantly until sugar is dissolved, bring to a rolling boil.
  • Pour pectin in, bring to a rolling boil again, stirring constantly (apricot LOVES to burn) for 1 minute.
  • Remove pan from heat; skim off foam.
  • Ladle into hot jars, leaving 1/4 inch head space.
  • Water bath for 15 minutes.

Making jam is one of the best ways to harness the flavor of apricots during their short season, to enjoy during the colder months. In this recipe, we give the fruit's natural pectin a jump-start by macerating the apricots with sugar and lemon before cooking; the acid in the lemons activates the apricot's pectin, reducing the cooking time and preserving more flavor and color. We also added a touch of vanilla to coax out the mellow notes of the fruit and balance the mixture's tartness. Apricot jam tastes great with scones or slathered on rustic bread--or swirled into vanilla ice cream. It's also the classic choice for melting and brushing over pastries and fruit tarts.

2 pounds pitted, quartered apricots
1 3/4 cups sugar
Zest of 1 lemon plus 1 tablespoon lemon juice
1 teaspoon vanilla bean paste or 1/2 vanilla bean, split lengthwise and seeds scraped (see Cook's Note)

Steps:

  • Toss the apricots, sugar, lemon zest and juice and vanilla in a large saucepan to combine, then mash slightly to release some of the apricot juice. Set aside for 10 minutes to allow the apricots to macerate and the sugar to dissolve. Meanwhile, place a small plate in the freezer to chill; this will be used to test the doneness of the jam.
  • Place the saucepan over medium-high heat. (See Cook's Note for suggested add-in.) Bring the mixture to a boil and then reduce the heat to medium, stirring frequently. Continue to cook until the jam becomes thick and syrupy, about 35 minutes. To test doneness, place a small amount of the jam onto the chilled plate and freeze for 2 minutes. Drag your finger or a spoon through the jam. If it holds its shape and thickness, the jam is done; remove from the heat. If it's runny, continue to cook and test again in 5-minute increments. Once the jam has reached the right consistency, transfer to jars and cool completely before storing, tightly covered. The jam will keep in the refrigerator for up to 6 months.

5 cups prepared fruit (about 3-1/2 lb. fully ripe apricots)
1/4 cup fresh lemon juice
7 cups sugar, measured into separate bowl
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Finely chop unpeeled apricots. Measure exactly 5 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.
  • Stir pectin into prepared fruit in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Bring to full rolling boil and boil 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

1/2 cup fresh jalapeno pepper, stemmed, seeded, and cut up
1 large red bell pepper, stemmed, seeded and cut up
2 cups apple cider vinegar
1 1/2 cups dried apricots, chopped
6 cups granulated sugar
1 (3 ounce) package liquid pectin

Steps:

  • Place the jalapenos, pepper and vinegar in a blender (or food processor).
  • Pulse until small chunks remain.
  • Combine apricots, sugar and the pepper/vinegar mixture in a large saucepan.
  • Bring to a boil; boil rapidly for 5 minutes.
  • Remove from the heat; skim off any foam that forms.
  • Allow mixture to cool for 2 minutes.
  • Mix in the pectin.
  • Pour into sterilized jars, seal and cool.
  • (At this point I turn the sealed jars over several times as they cool for about 10 minutes at a time to keep the fruit nicely distributed in the jar).
  • * Note; It is an excellent idea to wear rubber gloves when working with hot peppers, they otherwise may make the hands burn. And don't rub your eyes!

3 lbs whole apricots ((roughly 8 c chopped, pitted and diced))
4 c sugar
1 very large lemon, (juiced (1/4 c of juice))

Steps:

  • Clean your lids and jars, and place lids and jars, upside down, in a 200F oven.
  • In a 3-4 qt soup pot, mix all of the ingredients. Heat over medium, stirring often, until the mixture begins to bubble and foam. (For us, this was about 20 minutes.)
  • Place the candy thermometer in the mixture and turn the heat to high. Continue to heat the mixture, stirring constantly. (At this point, you may want to put on an oven mitt. As the jam thickens it will begin to foam, sputter and spit. This is good; it means things are getting jammy. But, it's not too good if you get hit.)
  • Once the mixture reaches 220-222F, remove the jam from the heat. (For us, it took 8-10 minutes to reach the jamming temperature.)
  • Using oven mitts, remove the hot jars from the oven. Ladle the hot jam into the hot jars, filling to ¼" of the top. ( ¼" is roughly the width of then nail on your little finger.) Wipe the rim of the jar with a damp towel to remove any sticky spillage. Top the jar with a hot lid and band. Tighten the band as tight as you can. Repeat until all the jam has been jarred.
  • Process your jars using your preferred method. *
  • Whichever method you use to process your jam, remove the bands after the jam has cooled. Check the seal on your lids and refrigerate any jars that have not sealed. Wipe the jars down one last time to remove any sticky bits before placing the bands back on the jars and storing the jam.

A sweet and tangy homemade apricot jelly perfect for canning

5 lbs apricots, pitted
2 cups water
6 tablespoons bulk pectin (or 1 box of sure jell, regular pectin)
2 1/2 tablespoons lemon juice
7 cups sugar
1/2 teaspoon butter (prevents foaming)

Steps:

  • Combine the apricots and water in a large stock pot and bring to a boil.
  • Cook for 10 minutes, breaking the fruit apart with a wooden spoon or potato masher.
  • Strain through a fine mesh sieve to remove skins and chunks, this should yield 5.5 cups of juice. Press down on the fruit in the sieve to extract as much as possible.*
  • Wipe any chunks from the pan and return the juice to it. Add in the pectin, lemon juice, and if using, butter.
  • Bring to a boil over high heat, stirring frequently, until it's at a rolling boil that doesn't stop even as you stir.
  • Add in all the sugar at once, and stir continuously until the mixture returns to a full rolling boil that doesn't stop as you stir.
  • Time for 1.5 minutes exactly and don't stop stirring. When the timer goes off, remove the pan from the heat immediately. If canning, proceed with that!

1 1/2 cup sugar
1 tablespoon lemon juice

Steps:

  • Measure your apricots; to every cup of apricots, add 3/4 cup sugar and 1 1/2 teaspoons lemon juice
  • Stand, covered, for 12 hours at room temperature
  • Stir mixture in a heavy, non-reactive pan over medium high to avoid sticking to bottom of pot; boil until thick (5 minutes), continuing to stir
  • Ladle hot jam into in hot sterilized glasses; seal
  • Process as you would for any preserved jam, or freeze

  • Add yolks to a mixing bowl along with 1 cup of sugar. Turn on high and whip for 3 minutes until light and pale white. Add vanilla, cake flour, corn starch, and pinch of salt and continue whipping for 1 minute. Set aside until egg whites done. For egg whites place in another mixing bowl and turn on high. Whip for 1 minute and then add the 3 tbsp of sugar. Whip until the egg whites have stiff peaks. Fold the egg whites into the yolk mixture in 3 parts. The first part I add a third of the egg whites and stir in really good. I don't care about losing air on the first 3rd of the egg whites, my main purpose is to incorporate everything really good. The second 3rd of egg whites I use a little more care mixing it all together but I'm still trying to incorporate everything so it is really smooth. The last 3rd of egg whites I fold in really carefully trying to have a batter that is very light and fluffy. Once the batter is complete line a large sheet pan or two small ones with parchment paper. P
  • Meanwhile place heavy cream in a mixing bowl and whip on high. After 45 seconds add the powder sugar and vanilla. Whip until stiff peaks.
  • To assemble take another piece of parchment paper the same size as the sponge cake. Sprinkle a little powdered sugar over the parchment paper. Take the sponge cake and flip it over onto the new parchment paper sprinkled with powdered sugar. This helps with the sticking aspect. You should have the light yellow cake looking up at you and the golden brown side should be face down on the parchment. Take the apricot jam and spread evenly all over the sponge cake. Then take the whipped cream and spread an even amount all over the jelly roll but leave the edges clean so you have room to roll it up. Now starting from the bottom carefully roll up the sponge cake using the parchment paper as your tool or rolling mat. Continue to roll until you have it all the way rolled up like a cigar. Place in the refrigerator to cool for 20 minutes and this also helps it to set. When ready to serve dust powder sugar all over, slice, and enjoy!
