CRUSTED SIRLOIN WITH ROCKIN' PORTOBELLOS

Steps:
- Preheat the oven to 400 degrees F.
- Whisk together horseradish, mustard, garlic, 2 tablespoons black pepper, and 1/4 cup of olive oil in a small bowl. Stir in the panko bread crumbs and set aside. Season the steaks on both sides with coarse sea salt and black pepper. Brush the horseradish bread crumb mixture on 1 side of the sirloin steaks.
- In a large saute pan over medium-high heat, add 2 tablespoons of oil and 2 tablespoons of butter. Sear the steaks for 2 minutes, then turn over and cook for an additional 2 minutes. Remove the steaks to a quarter sheet tray with a rack. Drain the excess oil from the saute pan. Put the steaks in the oven and cook until the breading browns, about 15 to 20 minutes. Remove from the oven and let rest.
- In the same pan that the steaks were seared, add 2 tablespoons of the butter and the thyme. Turn the heat to high and add the portobello mushrooms. Add the salt and pepper and cook until the mushrooms are soft and slightly colored, about 3 to 4 minutes. Stir in a splash of red wine, the beef broth, and a splash of sherry vinegar. Reduce until the liquid just coats the mushrooms. Stir in the remaining 2 tablespoons of butter to give the mushrooms a creamier consistency. Arrange the steaks on serving plates and top with the mushrooms.

- In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes.
- Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Fry until golden brown on both sides. Drain on paper towels and serve hot.

ADOBO SIRLOIN
Juicy top sirloin marinated in a spicy chipotle chile sauce. This meat is great by itself, but could also make great fajitas!

- In a small bowl, mix the lime juice, garlic, oregano, and cumin. Stir in chipotle peppers, and season to taste with adobo sauce.
- Pierce the meat on both sides with a sharp knife, sprinkle with salt and pepper, and place in a glass dish. Pour lime and chipotle sauce over meat, and turn to coat. Cover, and marinate in the refrigerator for 1 to 2 hours.
- Preheat grill for high heat.
- Lightly brush grill grate with oil. Place steaks on the grill, and discard marinade. Grill steaks for 6 minutes per side, or to desired doneness.

ARIZONA CRAB SALAD

- Toss greens with Ginger Soy Vinaigrette. On a plate, place the hearts of palm into a triangle shape and place greens in the middle of the triangle. Place lavash cracker on top of the hearts of palm and the greens. Spoon Crab Salad onto the lavash, then spoon the sauce around the plate and garnish with fresh cilantro and wonton crisp.
- Combine garlic, ginger, and shallot in a pan and saute until caramelized. Deglaze the pan with soy/tamari and vinegar, then strain.
- Combine all ingredients in a mixing bowl and mix until the salad is fully combined.
GINA'S ARIZONA CITRUS SALAD
This recipe was inspired by a visit to a restaurant in Phoenix, Arizona. I loved it so much I ran back to my hotel room and wrote down everything I could remember was in it. It's a beautiful salad with a light dressing and has lots of texture and color. The dressing took some experimenting, but I think it turned out just right.

Yes. It's hot. A good steak deserves a good bite! Jalapenos peeps,..smoked..yes some will think it's hot, to me and fellow pepper heads this is just a starter course. If you can't handle the milder sets of peppers, I'd advise you not to try this. I don't want to hear any "It's too hot! Shenanigans) It's not like there is Habaneros, Ghost Peppers or Scotch Bonnets lurking in there. Cook times approx depending on personal taste.

- Finely chop the chile peppers and add to the mixture.
- Taste for heat and add some adobo sauce from the can, as desired.
- Puncture the meat with a sharp knife several times.
- Sprinkle with salt and pepper to taste.
- Pour sauce over meat, turning to coat evenly, cover and marinate in the refrigerator for 1 to 2 hours.
- Preheat an outdoor grill for high heat and lightly oil grate.
- Grill steak to desired taste.
