MAPLE PEPPER PECANS

Maple Pepper Pecans image

I cannot, just cannot, allow myself to have even one of these as I'm setting them out, or I know there will be none left for the party. They're best eaten still a little warm (though be careful that they're not hot or everyone will have a burnt mouth) though still very good cold and, as with the olives, make a good present, bunged into a jar and tied with a ribbon or somesuch.

Provided by Nigella Lawson : Food Network

Categories     appetizer

Time 35m

Yield 3 1/3 cups

Number Of Ingredients 5

1/2 stick unsalted butter
1/2 cup maple syrup
1 1/2 teaspoons table salt
1 teaspoon cayenne pepper
3 1/3 cups pecan halves

Steps:

  • Melt the butter with the syrup, salt and cayenne pepper in a pan over a gentle heat. Add the pecans and stir to mix, leave them on the heat for 2 to 3 minutes. Spread the pecans on a silicon pad, parchment paper, or piece of foil to cool. Arrange the sticky pecans in bowls to serve.

Damn Hot Peppers image

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 7

1/2 cup extra-virgin olive oil
7 green peppers, halved, seeded, and cut into 1-inch square pieces
1 pound jalapenos, sliced 1/8-inch-thick
Gray salt

Small bunch basil leaves
1/4 cup red wine vinegar

Steps:

  • Heat the oil in a very large pot. Add the peppers, and allow to sweat for 2 to 3 minutes. Add jalapenos, and salt to taste. Cook over medium-high heat for about 20 minutes, or until the peppers have softened and are partially tender. There will still be some liquid left in the pot.
  • Add the tomatoes and the basil leaves. Lower the heat and continue to cook for about 30 minutes, until the peppers are tender. Add additional salt, if needed. Remove from the heat.
  • If canning, add the vinegar, place in canning jars, and process according to the manufacturer's instructions. Or, store in the refrigerator for up to 4 days.
