Ingredients

1 pound fresh fruit, such as cantaloupe, seedless watermelon, strawberries, pineapple or mango, peeled, seeded and cut into 2-inch pieces
1/4 cup sugar, plus more if needed
Pinch kosher salt
Fresh lime juice, if needed
Ice, for serving

Steps:

Put the fruit, sugar, salt and 1 cup cold water in a blender and puree until completely smooth. Taste and season with sugar to make it sweeter or lime juice to make it more tart if needed. Transfer to a large pitcher and stir in 4 cups cold water. Serve cold over ice.

3 slices cantaloupe, peeled and seeded
6 tablespoons white sugar
1 cup ice cubes

Steps:

Place water, cantaloupe, and sugar in a blender; blend until smooth. Divide ice into two glasses and pour cantaloupe mixture over ice.

Arrayan, also called satre guavas are small, tart guavas with a seed in the middle. I have had a hard time finding recipes with them so I created this, and it turned out great.

Ingredients

1 basket satre guava, rinsed
1/3 cup sugar
4 cups water
limes or mint (to garnish)

Steps:

Add water, sugar and arrayan to a pot on medium heat. Stir so that sugar dissolves.
Cover and bring to a boil. Then reduce heat to low and let simmer until fruit cracks open and the water turns yellow, about 25 minutes.
Transfer to a stainless steel bowl and use a stand or hand mixer on medium to separate the fruit from seed. (A food processor will not work because of all the seeds.).
Place a sieve in a large bowl and pour mixture through, using a spatula to get all the juice out.
Discard seeds.
Cover and refrigerate for at least 2 hours. Pour into a pitcher with ice and serve with lime or mint as desired.

7 1/2 cups water
6 tablespoons sugar
10 large limes
ice cube, to serve

Steps:

Pour water into a large pitcher, add sugar and stir until all the sugar has dissolved. Chill for at least one hour.
Using a zester or grater, remove the zest from all the limes, making sure to only get the colored zest and not the pith.
Squeeze the juice from the limes and add to the sugar water, along with the zest.
Stir well and chill until needed.
Serve over ice in a tall glass.
Garnish with lime slices.
