Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Prepare pizza crust according to recipe or package instructions. Place on a pizza pan.
- Pour the liquid from the artichokes into a small skillet, and bring to a boil over medium heat. Cook for 1 minute, or until the liquid is almost gone. Add garlic, and cook, stirring, for less than a minute. Add artichoke hearts, stir to coat with garlic flavor, then remove from heat, and set aside.
- Spread spaghetti sauce over the prepared pizza crust. Sprinkle with cheese, then place the artichoke hearts and garlic over the cheese. Arrange tomato slices evenly over the top.
- Bake for 20 minutes in the preheated oven, until crust is puffed and golden, and cheese is melted.

- Preheat oven to 425°. In a large bowl, whisk 1-1/2 cups flour, baking powder, salt and dried herbs until blended. Add beer, stirring just until moistened., Turn dough onto a well-floured surface; knead gently 6-8 times, adding more flour if needed. Press dough to fit a greased 12-in. pizza pan. ROASTED GARLIC TOMATO PIZZA
There's nothing fancy about this appetizing entree. Its naturally good ingredients speak for themselves. The yeast crust provides a tasty base. We especially enjoy it in summer when the tomatoes and basil are fresh from our garden.

- In a large bowl, combine 1-1/2 cups flour, Parmesan cheese, yeast, sugar and salt. Add water and oil; beat just until moistened. Stir in enough remaining flour to form a stiff dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulb. Brush with 1 teaspoon oil. Wrap in heavy-duty foil. , Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze roasted garlic onto a cutting board and slice., Punch dough down. - Preheat oven to 425 degrees. Lightly grease 13-by-9-inch baking pan with cooking spray.

- 1. Place all the dough ingredients in a bread machine and process until the dough has risen once. If you do not have a bread machine, mix together all the dough ingredients in a large bowl and knead by hand for at least 10 minutes. Cover the bowl with a towel and let the dough rise for about 1 hour in a warm place. 2. After the dough has risen, turn it out onto a well-oiled 11-x-16-inch cookie sheet. Pat and stretch the dough to cover the bottom and sides of the sheet. 3. Press the garlic into a medium-size bowl. Add the oil, herbs, and salt, and stir to combine. Add the artichoke hearts and mix well. 4. Cut the tomatoes into slices 1/4-1/2 inch thick. Select the 12 biggest slices and set aside. 5. Spread the artichoke mixture evenly over the crust. Arrange the toma to slices in a layer over the artichoke mixture. Top with the grated cheeses. Place the pizza in a cold oven, then turn the heat to 375°F. Bake the pizza for 12 minutes, or until the crust is crispy and golden brown. (Lift the edge of the pizza to check the underside.) 6. To serve, cut the pizza into 12 squares, with 1 tomato slice per piece. Serve hot. *Vital wheat gluten is a wonderful addition to whole-grain breads because it helps them rise and attain a pleasingly light texture. It can be purchased at natural food stores.

ARTICHOKE SUN-DRIED TOMATO PIZZA
Mark loves this pizza, I make half this pizza and half the green pepper, onion, olive, and mushroom pizza. The herbs measurements are approximate, use to your own taste.

Steps:
- Mix water with yeast and sugar in a large mixing bowl, set aside for 5 minutes to let it bloom.
- Add the garlic, oil, salt and herbs.
- Add about 1 1/2-2 cups flour, mix well.
- Pour onto a floured board, add remaining flour as needed, knead for about 5 minutes (this dough is really soft).
- Cover with the mixing bowl.
- Let rise about 20-30 minutes or until doubled in bulk.
- Punch dough down, knead on lightly floured board, set aside.
- Coat your pizza pan with olive oil.
- Place the dough in pan, roll out in pan.
- Preheat oven to 425 degrees F.
- Spoon and spread the dough with the sauce.
- Sprinkle with the herbs and seasonings.
- Decorate with the artichokes, olives, onions, black olives,.
- and sundried tomatoes.
- Sprinkle with the cheese.
- Cook until bottom in golden, spray crust with the cooking spray, broil for about 1 minute to melt cheese and make it bubbly.
- Let stand 2 minutes, cut and enjoy.
- FYI, you can also make this pizza with some chopped, drained and defrosted spinach instead of the artichoke hearts and it is just as fantabulous.

- Preheat oven to 425* F. Stretch dough over a 12-inch greased pizza pan. Brush with olive oil and scatter garlic slices evenly over crust. Place in oven and bake for about 10 minutes or until just starting to turn golden brown.
- Meanwhile, place sun-dried tomatoes in a heat-resistant, non-reactive bowl (such as Pyrex). Pour enough simmering water over to completely cover tomatoes. Let soak about 5-10 minutes or until tender; drain liquid and slice into strips.
- When crust is ready, spread sauce over garlic slices (try not to shift them around any more than can be helped). Top with about 1 1/2 cups mozzarella, or to taste. Scatter strips of sun-dried tomatoes evenly over cheese. Place artichoke heart quarters evenly across pizza, then top with remaining mozzarella and the parmesan, if using.
- Return to oven and bake at 425* F for about 8-10 minutes, or until cheese is melted, bubbly, and turning golden brown in spots.
- Remove from oven and allow to rest 3-4 minutes to set up. Cut into slices.
- Top pizza slices with dollops of pesto and serve.

PIZZA WITH ARTICHOKES, ROSEMARY AND GOAT CHEESE

- Make the pizza dough. Combine the yeast with one-quarter cup of the water. Cover and leave until doubled in volume. If the mixture does not rise, throw it away and use a fresh package of yeast.
- If working by hand, combine the flour and salt and place on a smooth work surface. Make a well in the center and add the yeast mixture, two tablespoons olive oil and the remaining water. Gradually work the flour into the liquid using a wooden spoon. Knead until smooth and shiny, about eight to 10 minutes. Add more flour if the dough gets too sticky. If using a food processor, fit the bowl with a steel blade and put the flour, salt, two tablespoons olive oil, yeast mixture and remaining water into the bowl. Process until the dough forms a smooth ball, about 20 seconds. Place the dough on a smooth surface and knead for a couple of minutes, adding more flour if the dough is too sticky.
- Put the dough in an oiled bowl. Cover with plastic wrap and let the dough rise in a warm place for one hour, until doubled. Punch down and knead into a smooth ball. Let rise again for one hour. Freeze half the dough for a second pizza.
- Preheat the oven to 400 degrees.
- Trim the artichokes, cut them in half and saute until golden in the remaining olive oil. Remove from the frying pan.
- Saute the garlic, onions and rosemary until the onions are soft. Season to taste with salt and pepper.
- Spread the dough with the onion mixture. Top with the artichokes and sprinkle with the goat cheese and pine nuts. Bake for 18 to 20 minutes, or until the pizza is browned and crisp.

This has become one of my favorite pizzas to make at home. This is not a dry pizza by any means and believe me when I say meat lovers will eat it, it's that good.

Steps:
- Layer pizza crust with a light brushing of oil and crushed garlic.
- Sprinkle with cheese.
- Slice the roma tomatoes thin, laying them out flat on a cutting board and sprinkle liberally with fresh ground pepper. (I really "go for it but, I love pepper).
- Cover entire surface of pizza with tomatoes next add rings of onion over the top.
- Add the olives and Artichokes last.
- Sprinkle lightly with oregano if desired.
- Bake in oven at 425 for 10-13 minute to desired doneness.
