MEDITERRANEAN ARTICHOKE STEW

Mediterranean Artichoke Stew image

A zesty, hearty dish that is delicious both hot AND cold. Artichokes, lemon, and some spices make up the base of the flavor, and the addition of potatoes and garbanzo beans (chickpeas) add substance. Wonderful served with just a fresh green salad. I adapted this from a Madhur Jaffrey recipe from "World Vegetarian" ("Artichokes Stewed with Potatoes," labeled as Moroccan) by adjusting the spices a little bit and adding the chickpeas.

Provided by DaphneM

Categories     Stew

Time 27m

Yield 3-4 serving(s)

Number Of Ingredients 10

2 medium red potatoes
1 (9 ounce) package frozen artichoke hearts (I use Bird's Eye)
1 (14 ounce) can chickpeas (or larger as desired)
1/4 cup extra virgin olive oil
1 lemon
2 cups water
1 teaspoon ground cumin
1 teaspoon paprika
1/4 teaspoon cayenne pepper (or to taste)
salt and black pepper

Steps:

  • Peel and dice potatoes into 1" or so chunks. Put in a medium (3 quart or so) pot along with the frozen artichokes.
  • Drain and rinse the can of chickpeas and add to the pot. Halve the lemon and either squeeze it on a juicer, or pick out as many seeds as possible and squeeze directly into the pot. Add olive oil, spices, and water (you want it to just barely cover the solid ingredients).
  • Stir ingredients in pot and bring to a boil. Once boiling, reduce heat to a simmer.
  • Cook for about 20 minutes, either covered or uncovered - if you want it to be soupier, cover the pot, but if you want a lot of the liquid to evaporate and be more like a stew, leave it uncovered. Stir occasionally. You can always cook it longer than 20 minutes if you like your potatoes very soft, and they will absorb more flavor the longer you cook. Really, it is hard to overcook this dish.

STEAMED GLOBE ARTICHOKES WITH PECORINO VINAIGRETTE AND FRIED GARLIC CHIPS

Steamed Globe Artichokes with Pecorino Vinaigrette and Fried Garlic Chips image

Globe artichokes, nature's most intriguing pull-apart delicacy, pair well with robust Italian flavors. Serving the artichokes with a zesty pecorino Romano vinaigrette and toasty slivers of garlic is a lighter alternative to stuffing them with breadcrumbs.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Yield Makes 6

Number Of Ingredients 7

3 lemons, 2 halved and 1 zested and juiced (3 tablespoons juice)
6 large globe artichokes
1/2 cup extra-virgin olive oil
3 garlic cloves, thinly sliced
1 stick unsalted butter
3/4 cup finely grated pecorino Romano cheese
Freshly ground pepper

Steps:

  • Fill a medium bowl with water. Juice 1 lemon into water, and add rind. Trim artichoke stems to 1/2 inch, and remove tough outer leaves. Trim pointy tips of artichoke leaves using kitchen shears. Spread leaves apart to remove inner chokes by scraping with a small spoon. Transfer artichokes to lemon water as you work to prevent discoloration.
  • Fill a large pot with 2 inches water. Juice 1 lemon into water; bring to a simmer. Fit pot with a steamer-basket insert. Place artichokes upright in steamer. Simmer, covered, until artichokes are very tender when pierced with a paring knife, about 30 minutes.
  • Combine olive oil and garlic in a small saucepan over medium heat. Cook until garlic is pale gold. Strain garlic; reserve oil. Transfer garlic chips to a paper-towel-lined plate to drain.
  • Add butter to saucepan, and melt over medium-low heat. Whisk in reserved oil, the cheese, and lemon zest and juice. Pour a pool of vinaigrette into center of each artichoke, and drizzle remainder over tops. Sprinkle with garlic chips, and season with pepper.

Number Of Ingredients 6

2 lemons, halved
4 artichokes (about 10 ounces each)
3/4 cup extra-virgin olive oil
3/4 cup grated pecorino Romano cheese
1 1/2 teaspoons cracked black pepper
3/4 teaspoon salt

Steps:

  • Squeeze juice from lemon halves into large bowl of cold water; add squeezed lemons. Cut off stem and top 3/4 inch of 1 artichoke and discard. Using scissors, trim sharp tips from leaves. Place artichoke in lemon water until ready to cook. Repeat with remaining artichokes. Drain artichokes and cook in large pot of boiling salted water until base of each is tender when pierced with knife and leaves pull away easily, about 25 minutes. Drain artichokes well. (Can be prepared 8 hours ahead. Cover and refrigerate. Steam artichokes 10 minutes to rewarm before continuing.)
  • Mix extra-virgin olive oil, grated pecorino Romano cheese, 1 1/2 teaspoons black pepper and 3/4 teaspoon salt in small bowl to blend. Gently press artichoke leaves outward from center to open artichokes slightly. Pull out small purple-tipped leaves, then scoop out fibrous choke. Place 1 artichoke on each of 4 plates. Sprinkle artichoke cavities with salt and pepper. Drizzle 1 tablespoon cheese dressing over each artichoke. Divide remaining cheese dressing equally among 4 small ramekins; serve dressing with artichokes.

ARTICHOKE STEW WITH PECORINO ROMANO

ARTICHOKE STEW WITH PECORINO ROMANO image

Yield 6 servings

Number Of Ingredients 13

1 1/2 pounds small boiling potatoes, cut into small bite-size pieces
2 pounds medium artichokes, cleaned and cut up, about 4 artichokes
1/4 cup olive oil, divided
1/2 cup water
1/2 teaspoon salt
2 cloves garlic, minced
1/4 teaspoon dried red pepper flakes
2 sprigs fresh thyme
1 sprig fresh rosemary
1/2 pound cremini mushrooms, cut into small bite-size pieces
2 teaspoons minced fresh mint
2 tablespoons chopped green olives
1 ounce pecorino Romano cheese

Steps:

  • 1. Steam the potatoes over rapidly boiling water in a tightly covered pan just until tender, 15 minutes. Remove from the heat; set aside. 2. Combine the artichokes, 3 tablespoons of the olive oil, the water, salt, garlic, red pepper flakes, thyme and rosemary in a large skillet. Cover tightly and place over high heat. Cook until the artichokes are just tender, 5 to 7 minutes. Remove the lid and continue cooking over high heat until all the liquid has evaporated and the artichokes begin to make a sizzling sound from frying in the oil. Stir frequently to keep the artichokes from sticking. Add the potatoes and reduce the heat to low. 3. In a separate skillet, heat the remaining 1 tablespoon of olive oil over high heat. When hot, add the mushrooms and cook, tossing frequently, until they have given up their liquid and are browning, 3 to 5 minutes. 4. Add the mushrooms to the potatoes and artichokes and stir in the mint and the olives. Season to taste with additional salt. Remove the thyme and rosemary sprigs. Divide the stew evenly among 6 pasta plates or shallow bowls and garnish with the cheese by using a vegetable peeler to shave off thin strips over each bowl. Serve immediately.
