- Heat oil and garlic in a small saucepan over low heat until garlic becomes golden- several minutes (do not burn garlic); allow oil to cool.
- Bend asparagus gently at a natural point and when it snaps, discard end pieces.

This is by far my favorite asaparagus recipe. It's a great holiday side dish, or perfect for any meal because it's so quick and easy. My best advice is to pick thin asparagus stalks, as the thicker ones are often bitter and don't cook as well. Take care not to burn the garlic -the idea is to lightly toast it.

- Wash asparagus, cut and remove bottoms of stalks.
- Chop garlic into large pieces (I usually slice mine into pieces that resemble slivered almonds).
- Place butter in large skillet and drizzle oil over the butter.
- Heat butter and oil on medium-high heat---be careful not to let the butter burn.
- Once the butter is melted, add asparagus and toss to coat.
- Sautee for 2 minutes and then add garlic.
- Reduce heat to medium and tossing occasionally, sautee the mixture until the garlic is light brown in color.
- Remove from heat and add salt and pepper as desired.
- Serve and enjoy.

PAN-SEARED ASPARAGUS WITH CRISPY GARLIC
Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.

ASPARAGUS WITH ROASTED-GARLIC AïOLI

- Put oven rack in middle position and preheat oven to 400°F.
- Cut off and discard tops of garlic heads to expose cloves, then brush each head with 1/2 tablespoon oil. Wrap heads together in foil and bake until tender, about 45 minutes. Cool to warm.
- Squeeze garlic from skins into a food processor and purée with mayonnaise, vinegar, pepper, and salt. Transfer aioli to a bowl and stir in chives.

- In a 12-inch skillet, over medium, heat the oil.
- Add the garlic and cook until crisp and golden brown, about 5 minutes. Careful not to burn. Burnt garlic tastes bitter. Use a slotted spoon to transfer the garlic to a paper towel-lined plate. Set aside. Add the butter to the skillet and set over medium-high. When the butter has melted, add half of the asparagus with the tips pointing in one direction, and the remaining spears pointing in the opposite direction. (This improves browning.) Sprinkle the asparagus with 1/4 teaspoons salt; using tongs, arrange the spears in an even layer. (They won't quite fit into a single layer.)
