- In a large bowl combine ½ cup butter and the cream cheese, and let come to room temperature. Add 2 cups of flour and blend well. Chill. Roll out half of the dough and place in a 9 inch pie plate. Reserve the remaining dough for the top crust. In a saucepan combine the remaining ingredients and bring to a boil. Pour the mixture into the crust. Roll out the remaining crust and place over the filling. Cut slits in the top crust to allow steam to escape. Bake in a 350℉ (180℃) oven for 45 minutes.

Everyone in the family has something that they're the best at making. I make the best cookies, my sister, Carol, makes the best pies in the whole world!...no competition in our family! This recipe includes an ingredient called free-flowing brown sugar. This is a non-clumping or caking version of ordinary brown sugar. It has a lower moisture content then the traditional one, which makes it free flowing much like granulated sugar. It is available at most specialty supermarket. If it is not available in your part of the world, use regular brown sugar and make sure it is broken up, free of clumps. Macintosh or Granny Smith apples are the best choices for apple pie because they are the least mushy apples.

Steps:
- Peel and slice apples. Toss with sugars, cinnamon and flour. Set aside.
- Roll crust to make slightly larger to fit 10-inch glass pie pan. Fit bottom crust in pie pan. Turn in apple mixture and dot with butter. Put crust on top and crimp edges of crust together.
- Preheat oven to 450 degrees F (230 degrees C).
- Wet hands with water and dampen top of pie. Sprinkle with additional sugar. Puncture top of pie with fork so the steam can escape.
- Bake for 15 minutes in preheated oven. Reduce heat to 350 degrees F (175 degrees C) and continue baking for about 45 minutes more, until crust is golden brown. It's a good practice to place a piece of aluminum foil slightly larger than the pie under the pie plate to catch overflows. Serve warm.

AUNT BEE'S GRAPEFRUIT PIE
Of course, you know Aunt Bee. She lives in Mayberry, USA, the aunt of Sheriff Andy Taylor and his son Opie. this recipe comes direct from a paperback collection of Aunt Bee's favorite recipes. This will be very refreshing when the weather starts to heat up! You may use either pink or white grapefruit, but you may want to add a little sweetening to the white grapefruit.

- In a saucepan, melt the quartered marshmallows and 1/4 cup grapefruit juice. Cool.
- Peel grapefruit down to the flesh cutting away all the white part which is bitter. Insert your knife along the membranes and cut out each section. Save any juice that falls. Keep doing this till you have 2-1/2 cups segments.
- When the marshmallow mixture is cool,fold in the grapefruit sections, 1/4 cup of any juice that has acrued, and the whipped cream.
- Pour mixture into the crumb pie shell and refrigerate 3 hours.
- To serve, sprinkle with shredded coconut, if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Cut the apples into 1/4 inch slices.
- In a mixing bowl, combine sugar, cinnamon, flour, nutmeg (or apple pie spice), and salt; mix thoroughly. Pour the spice mix over the apples and stir until the apples are coated.
- Line one crust in a 9 inch deep dish pie pan. Place the apples in the pie crust. Dot the apple filling evenly with butter. Fit the top crust over the apples. Press the crust down gently and cut 3 or 4 slits in the top crust to allow steam to escape while the pie bakes
- Bake in the preheated oven 50 minutes, or until the crust is golden brown. Check the pie after the first 30 minutes of cooking: if the crust is already browned reduce the heat to 350 degrees F (175 degrees C) to allow the apples to cook without the crust burning.
