Momma Callie's Banana Nut Bread with Honey Butter image

1 stick butter, at room temperature, plus more for loaf pan
1 1/2 cups all-purpose flour, plus more for pan
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 large very ripe bananas*
1 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract
3/4 cup chopped pecans
Honey Butter, for serving, recipe follows
1 stick salted butter, softened
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
  • In a large bowl, whisk together the flour, baking soda, baking powder and salt.
  • In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
  • In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
  • Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
  • Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.

3 tablespoons melted and cooled coconut oil, plus more for the loaf pan
3 very ripe bananas
1 large egg
3/4 cup unsweetened almond milk
3/4 cup coconut sugar
1/3 cup roasted almond butter
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 cup almond flour
1 cup rice flour
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/2 cup bittersweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
  • In a large bowl, mash the bananas with the back of a fork until only a few lumps remain. Add the egg and mix until smooth. Using the fork, whisk in the almond milk, sugar, almond butter, coconut oil, vanilla and salt until smooth and incorporated. Add the almond flour, rice flour, baking soda and cinnamon and stir until combined with a rubber spatula. Stir in the chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle the walnuts on top. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs, 1 hour 5 minutes to 1 hour 10 minutes. Allow to cool for 30 minutes in the pan resting on its side. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature or can be sliced and frozen for up to 1 month.

2 large eggs, at room temperature
1/2 cup plain Greek yogurt
1 cup coconut sugar or granulated sugar
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 cup chopped hazelnuts, optional
1/2 cup bittersweet chocolate chips
1/3 cup chocolate hazelnut spread, warmed if needed to make spreadable

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
  • Mash the bananas with the back of a fork in a large bowl until only a few lumps remain. Add the eggs and mix until smooth. Using the fork, whisk in the coconut oil, yogurt, sugar, salt and vanilla until smooth and incorporated. Add the flour and baking soda and use a rubber spatula to stir until combined, being careful not to overmix. Fold in the hazelnuts, if using, and the chocolate chips.

It's from an old and yellowed recipe clipping (50 plus years old) from my local newspaper that my great aunt had written her own success notes beside. My aunt was a caterer, and she writes that this banana bread was her most requested treat for her teas and luncheons.

4 medium bananas
2 cups flour
1 teaspoon baking soda

  • Add unbeaten eggs.
  • Beat well.
  • Blend in well-mashed bananas.
  • Add flour in which soda and salt have been sifted together.
