OLD FASHIONED APPLE CREAM PIE
A rich custard-like filling. The combined flavor of apples and cream cheese is mouthwatering. Strawberry jelly may be used in place of apricot preserves.

AUNT CAROL'S APPLE PIE
Everyone in the family has something that they're the best at making. I make the best cookies, my sister, Carol, makes the best pies in the whole world!...no competition in our family! This recipe includes an ingredient called free-flowing brown sugar. This is a non-clumping or caking version of ordinary brown sugar. It has a lower moisture content then the traditional one, which makes it free flowing much like granulated sugar. It is available at most specialty supermarket. If it is not available in your part of the world, use regular brown sugar and make sure it is broken up, free of clumps. Macintosh or Granny Smith apples are the best choices for apple pie because they are the least mushy apples.

Steps:
- Peel and slice apples. Toss with sugars, cinnamon and flour. Set aside.
- Roll crust to make slightly larger to fit 10-inch glass pie pan. Fit bottom crust in pie pan. Turn in apple mixture and dot with butter. Put crust on top and crimp edges of crust together.
- Preheat oven to 450 degrees F (230 degrees C).
- Wet hands with water and dampen top of pie. Sprinkle with additional sugar. Puncture top of pie with fork so the steam can escape.
- Bake for 15 minutes in preheated oven. Reduce heat to 350 degrees F (175 degrees C) and continue baking for about 45 minutes more, until crust is golden brown. It's a good practice to place a piece of aluminum foil slightly larger than the pie under the pie plate to catch overflows. Serve warm.

Steps:
- 1. In a small bowl, blend 1 tablespoon of each - flour, sugar and 1/4 tsp cinnamon. Sprinkle this mixture over the bottom of prepared crust. Set aside.
- 2. In another bowl, mix flour with 1/2 cup sugar. To this mixture whisk in honey, evaporated milk, 3/4 tsp cinnamon, cloves and nutmeg.
- 3. In a large bowl add sliced apples. Pour the honey mixture over the apples and toss to coat.
- 4. Preheat oven to 425 degree F. Arrange the coated apples in your pie crust. Pour any remaining sauce over the apples. Dot with butter & remaining 3/4 tsp cinnamon. Place into preheated oven and bake for 35 - 40 minutes or until apples are tender. Watch the crust carefully so as not to burn. If getting to dark, make guards out of foil and place around crust. Or use store bought crust guards if you have.
- 5. While pie is baking, make crumb topping. In a small bowl combine dry ingredients and then cut in the butter with a pastry blender, or I used my fingers.
- 6. After apples are cooked, reduce oven to 375 degrees and sprinkle evenly with crumb mixture.
- 7. Bake another 10 minutes, or until desired doneness is achieved. This pie is delicious served with ice cream. Enjoy!
~ CARAMEL PIE ~ AUNT LOUISES
My husbands Aunt shared this recipe with me years ago. My husband loves it about as much as my peach cobbler. So easy to make. It helps though if you have someone melt the sugar while you make the pudding type mixture. I serve mine with whipped cream & chopped pecans, she served hers with meringue. Either way is great! Enjoy!

Steps:
- 1. In a medium saucepan, start heating milk over low. In a bowl, mix yolks, 1/2 cup sugar, salt and flour until smooth. Once milk is hot and simmering whisk in the flour mixture, until smooth and remain stirring until thickened, which wont take long.( it should be the consistency of pudding, )
- 2. Melt the remaining sugar in a skillet, stirring often. Add this to the milk mixture, it will bubble, keep stirring until dissolved. Remove from stove and stir in vanilla.
- 3. Pour caramel mixture into baked pie crust. You can make meringue with the left over egg whites and bake until browned. I just add whipped cream as we don't care much for meringue. Chill well and serve.
