My aunt always made this for family get togethers and we always wanted to be the first in line when the desserts were brought out so we got some!

9 inches pie crusts, baked and cooled
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup water
1/2 cup sugar
1/4 cup flour
1/2 teaspoon salt
1 1/2 cups milk
3 egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon almond extract
8 ounces Cool Whip, thawed
1 cup coconut

Steps:

  • Soften knox gelatin in 1/4 cup water and let set.
  • Mix together in a saucepan the sugar, flour and salt.
  • Stir in milk; cook over low heat, stirring constantly until thick. Cook for 1 additional minute after mixture thickens.
  • Remove from heat, stir in gelatine mixture and cool.
  • Beat the 3 egg whites; add cream of tartar and the other 1/2 cup sugar. Beat until glossy. Add vanilla and almond extracts.
  • Fold in Cool Whip and coconut.
  • Put in baked pie shell and refrigerate.

4 cups all-purpose flour
1 teaspoon baking powder
1 tablespoon sugar
1 tablespoon butter, melted
2 cups milk, heated to boiling
hot fat (for frying)
powdered sugar (optional)

Steps:

  • In a bowl, combine flour, baking powder and sugar. Mix in the butter and hot milk until a stiff dough is formed.
  • Turn out onto a lightly oiled surface and knead until smooth and cooled.
  • Divide dough into four parts. Shape each into a ball. Divide each into 4 parts to make 16, then divide each of the resulting balls into 2 parts to total 32.
  • Cover baking sheets with waxed paper and dust the waxed paper lightly with flour.
  • On a lightly floured surface, roll out each part of dough to make a thin round about 8 inches in diameter. Place the rounds on the floured waxed paper. Chill 30 minutes.
  • In a skillet, heat 2 inches of fat to 375° to 400°F Vegetable shortening or corn or peanut oil may be used but the authentic fat is lard.
  • Fold the dough rounds, one at the time, into quarters, and, with a sharp-tipped knife, make little cuts and cut-outs in the dough. (Remember the paper snowflakes we cut out as kids?).
  • Fry the bread rounds, until golden brown, about 1 minute on each side. Remove and drain on paper toweling.
  • When cool, sprinkle with powdered sugar, if desired.
  • Store in an airtight container in a cool place or in the freezer until ready to serve.

This is a summer favorite from my childhood! Sliced strawberries, mixed with whipped cream and gelatin for texture, on top of a yummy graham cracker crust.

1 cup graham cracker crumbs
¼ cup white sugar
¼ cup butter, melted
1 tablespoon unflavored gelatin
¼ cup cold water
1 cup heavy whipping cream
½ cup chopped strawberries
⅓ cup white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
  • Bake in the preheated oven until the crust is lightly browned and smells toasted, about 12 minutes. Remove from the oven and cool.
  • Soak gelatin in cold water for 3 minutes. Heat the water and gelatin in the top of a double boiler set over simmering water, stirring frequently, until gelatin is completely dissolved.
  • Beat whipping cream in a chilled glass or metal bowl until soft peaks form.
  • Stir strawberries and 1/3 cup sugar together in a bowl. Pour gelatin mixture over strawberries. Gently fold in whipped cream until incorporated. Pour filling into baked pie shell and chill in the refrigerator until set, at least 2 hours.

This recipe has been in my husband's family for several generations. His aunt gave it to me when we were married 45 years ago. Everyone loves it.

1 (6 ounce) package lime flavored Jell-O® mix
1 ¾ cups boiling water
1 (8 ounce) package cream cheese, softened
½ cup chopped celery
1 ½ avocados, peeled and mashed
½ cup mayonnaise
½ teaspoon salt
1 teaspoon onion juice
6 butter lettuce leaves, rinsed
½ cup mayonnaise
¼ cup confectioners' sugar, or to taste
1 tablespoon lemon juice, or to taste
½ cup pecan halves, toasted

Steps:

  • In a medium bowl, dissolve the gelatin in the boiling water. In another bowl, mix together cream cheese, celery, avocado, 1/2 cup mayonnaise, and salt. Mix in onion juice, if using. Gradually stir in the gelatin mixture. Pour into an 11x7 inch glass baking dish, and refrigerate until set.
  • Cut the gelatin salad into squares, and serve each square on top of a leaf of butter lettuce. Make the salad dressing by mixing the 1/2 cup mayonnaise with confectioners' sugar and lemon juice to taste. Drizzle dressing over squares, and garnish with toasted pecans.

1 lb carrot, sliced
2 eggs
1/2 cup chopped onion
1 cup chopped celery
1 tablespoon chopped fresh parsley
3/4 cup butter or 3/4 cup margarine, melted
1 teaspoon salt
8 cups cubed day-old bread

Steps:

  • In a saucepan, add carrots and enough water to cover.
  • Bring to a boil and cook until carrots are tender.
  • Drain and mash carrots.
  • In a large bowl, beat eggs.
  • Add next 5 ingredients.
  • Stir into carrots.
  • Add bread cubes and mix well.
  • Pour into a greased 2-quart casserole dish.
  • At 350 degrees, bake, uncovered for 30-40 minutes or until set.

1 1/2 cups cooked, mashed sweet potatoes
1 stick butter
1 1/2 cups sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1 cup carnation evaporated milk
1 (9 inch) unbaked deep-dish pie shell

Steps:

  • Preheat oven to 350 degrees F. After your potatoes are done cooking and you've mashed them (make sure you mash them well or your pie will be stringy), add your butter mixing it until it melts.
  • Next take all your spices and mix them together in the smaller bowl. Add your vanilla to your spices and then add it to the potatoes. Beat your eggs well and mix them into your sweet potato mixture. Slowly begin to add your evaporated milk to the mixture. Be careful how much you add you don't want it to get to juicy. If you feel like you need to add more go ahead.
  • Pour mixture into your pie shell and put pies into preheated oven. Let bake 35 minutes.
