This is one of my Aunt Vera's recipes that has been passed down and is an oft requested dish from my kids because Aunt Vera used to make it for them to have after school. It is simple, quick and delicious. You can serve this hot or at room temperature and it is REALLY good with a dollop of peach ice cream or some Cool Whip.

3 cups fresh peaches, peeled and cut into chunks
1/2 cup butter
1 cup Bisquick
1 cup milk
1 cup sugar
2 teaspoons almond extract

Steps:

  • Preheat oven to 350 degrees.
  • In a 9 x 13 inch baking pan, place the stick of butter and put it in the oven to melt.
  • While the butter is melting, mix the Bisquick, milk, sugar and almond extract.
  • Once butter has melted, pour the liquid mixture over the butter and place the chunks of peaches on top of the batter.
  • Return this to the oven and bake for 45 minutes at 350 degrees.

7 slices white bread, crusts removed
1-1/2 cups sugar
2 tablespoons all-purpose flour
1/2 cup butter, melted
1 egg
Topping:
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream

Steps:

  • Place the peaches in a greased 11x7-in. baking dish. Cut each slice of bread into four strips; place over peaches. , In a bowl, combine the sugar, flour, butter and egg; mix well. Spread over bread. Combine sugar and cinnamon; sprinkle over the top. , Bake at 350° for 40-45 minutes or until golden brown. Serve warm with ice cream.

1/2 cup (1 stick) butter
1 cup self-rising flour
1 cup sugar

Homemade Whipped Cream, recipe follows
2 cups whipping cream, chilled in the fridge
4 tablespoons sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
  • Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!

2 cups peach juice
1 heaping tablespoon cornstarch
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Kosher salt
4 tablespoons unsalted butter, at room temperature, plus 8 tablespoons unsalted butter, melted
1 1/2 teaspoons pure vanilla extract
4 cups chopped peaches or other stone fruit (plums, apricots) or apples
1 1/2 cups whole milk or cream, at room temperature
1 large egg
2 cups plus 2 tablespoons all-purpose flour
1 tablespoon baking powder
Whipped cream or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, combine about 1/2 cup of the peach juice with the cornstarch and whisk until smooth. Pour in the remaining peach juice and whisk to blend. Transfer the mixture to a small saucepan and heat over medium heat. Add 1/2 cup of the sugar, 1 teaspoon of the cinnamon, the ginger, nutmeg and a pinch of salt. Cook, whisking, until the sugar dissolves and the mixture thickens, 3 to 4 minutes. Remove from the heat. Add the room temperature butter and stir until melted. Pour into a medium heatproof bowl and combine with the chopped peaches. Add 1/2 teaspoon of the vanilla and gently toss to combine. Transfer to a 9-by-13-inch baking dish.
  • In a large bowl, whisk together the milk, egg, remaining 1 1/2 cups sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla and a pinch of salt. Add the flour and baking powder and gently whisk until incorporated, then gently whisk in the melted butter until combined. Pour the batter over the fruit and peach juice mixture. Don't overfill the dish-leave room for the cobbler batter to rise, about 1/2 inch.
  • Bake until golden blonde on top, 30 to 35 minutes, then rotate the baking dish, raise the oven temperature to 400 degrees, and bake until the top of the cobbler is golden brown, 5 to 8 more minutes.
  • Let cool on a cooling rack and serve with whipped cream or ice cream.

1/2 cup plain bread crumbs
2 store bought refrigerated pie doughs
1/4 cup all-purpose flour
Canola oil spray
1 pint vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large saucepan, add peaches, 1 stick of butter, 1 cup of sugar, cinnamon, and nutmeg and bring to a simmer. Add bread crumbs and stir. Using a sprinkle of flour, roll out both pie crusts; 1 will be used for the top of the cobbler and 1 for the bottom.
  • Spray a 10-inch square pan with canola oil and place 1 layer of dough into the baking dish. Place a few chips of butter, as well as a dusting of the remaining sugar, on the bottom crust. Pour the peach mixture into the baking dish. Cut the top layer of dough into strips and arrange them on the top of the peaches in a lattice pattern. Top with 3 or 4 chips of butter and bake for 25 to 30 minutes or until the crust is brown and the peaches are bubbling. Serve warm with vanilla ice cream.

It was an instant hit on the first day Paula Deen offered this dessert at The Lady & Sons, and remains so today. This delicious cobbler can be found on their dessert trays at both lunch and dinnertime. It's so easy to make you won't believe it! COOKS NOTES: If they are available by all means use fresh peaches. In a saucepan, mix two cups fresh peach slices with one cup sugar and one cup water. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, stirring occasionally. An almost equally good product is frozen peach slices. Simply follow the instructions for the fresh peach slices. NOTE: This is an adopted (late in 2006) recipe and there was already some discussion about the amount of butter necessary in reviews made previous to my inheriting this recipe: Now that I have made it myself, I can say that for me at least, 60 grams (1/4 cup) of butter was fine, (by all means use a little less if you prefer) and my dumplings didn't turn out doughy at all... what I DID mess up was using a larger can of peaches (non-metric sizes of canned fruit don't translate perfectly into metric ones), so I thought that the extra wouldn't matter much, mine was swimming rather a lot in the juice at the bottom and next time I will use all the peaches but only half or 3/4 of the juice from my metric sized can..
