This recipe is over 100 years old. My sister-in-law's grandmother said it was a no-fail recipe. It's the best I ever had.

Steps:

  • In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together with a pastry cutter until crumbly.
  • In a small bowl, mix egg with water. Blend into flour mixture. Chill in refrigerator until ready to use.

2 1/4 cups sifted flour
1 teaspoon salt
3/4 cup Crisco
6 tablespoons water

Steps:

  • In a mixing bowl; combine flour and salt (lightly mixing).
  • Use two butter knives and cut the crisco into the flour/salt mixture until the flour looks course like corn meal.
  • Sprinkle water (one tbsp at a time) over the mixture and lightly mix with a fork until (then add another tbsp of water and continue like this until) all flour is moistened but not doughy. Sometimes you may not use all of the water and sometimes you may need a touch more.
  • Handle the dough as little as possible for best results. Lightly form into a ball and roll out your crust. Place pie pan (face down) over the crust then flip over so the crust is inside your pan (quickly and gently fit crust into pan).

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups all-purpose flour
1 cup white sugar
⅓ cup milk
½ pound ground walnuts
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat together cream cheese and margarine until well blended. Add flour, mixing well. Shape into a ball, cover and chill for 2 hours.
  • In saucepan over medium heat, cook sugar and milk, stirring occasionally until milk boils and sugar is dissolved. Add the ground nuts. Remove from heat and let cool until mixture is of spreading consistency.
  • Roll out chilled dough on lightly floured surface to a rectangle about 18 X 12 inches. Cut in half lengthwise. Spread each piece with milk/nut filling and roll up like a jelly-roll, starting from the long side.
  • Cut each roll in half. Place seam side down on ungreased cookie sheets (two on a baking sheet). Leaving roll's shape intact, cut into slices 1/2 inch thick almost to the bottom of the roll.
  • Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes or till done. Remove from sheet and sprinkle with confectioners' sugar. Cool on racks. Cut cookies all the way through. Refrigerate or freeze. Re-sprinkle with confectioners' sugar before serving.
  • Variations: A) In place of milk/sugar/nut filling, spread with ground filberts and red raspberry preserves. B) Before rolling, sprinkle chopped chocolate chips over milk/sugar/nuts filling.

My perfect apple pie, this has always been my favorite pie which I am often asked to baked for family get togethers. The recipe is actually one that has been in our family for years and is my personal favorite. I like the level of cinnamon spicyness it has as well as the perfect crust which is my grandmothers recipe. This recipe is a sure thing for the perfect apple pie. I am from Texas originally, but have lived in Australia for 3 years now, since I cannot find the shortening here that the crust requires I substitute this with soft margarine spread. It works great as well, just keep all crust ingredients as cold as possible for a light flaky crust.

3/4 cup white sugar
1 -2 teaspoon flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon salt
4 -5 cups granny smith apples (cored, peeled and sliced)
1 tablespoon lemon juice
3 tablespoons butter
2 cups flour
1 teaspoon salt
2/3 cup shortening, chilled in freezer (Crisco)
6 tablespoons cold water (approximately)

Steps:

  • For Pie Crust:.
  • Sift flour, add salt & sift again.
  • Using two butter knives, cut in half of the shortening thoroughly or until mixture resembles course corn meal.
  • Cut in remaining shortening until roughly the size of peas.
  • *The secret to flaky crust is Ice Cold Water and very cold shortening.
  • Sprinkle water, 1 tablespoon at a time over small portions of the mixture, with a fork press the flour particles together as they absorb the water, do not stir.
  • Push aside pieces of dough in bowl as formed and sprinkle remaining water over dry portions, use only enough water to hold the pasty together. It should not be wet or slippery.
  • Press all together lightly with your fingers or wrap dough in waxed paper & press all together gently.
  • Bear in mind, the less the dough is handled the better the crust.
  • Place dough in refrigerator to chill while peeling & slicing apples.
  • Apple Pie filling:.
  • Pre-heat oven to 425f
  • Peel, Core and slice apples - 4-5 cups is about 5-6 apples.
  • Prepare pastry and roll out undercrust, fit into a 9 inch pie pan.
  • In a bowl: combine sugar, flour, cinamon, nutmeg, allspice and salt.
  • Spread half of this mixture over the pastry lined pan.
  • Add apples and sprinkle remaider of mixture over the apples.
  • Sprinkle apples with lemon juice and dot with butter.
  • Roll, fit and seal upper crust over the top of the apples, I like to cut little hearts and X's in the top crust too for air.
  • Bake on the lower shelf of a hot oven (425 f) 30-40 minutes.
  • * I also cover the very edge circle of the crust with foil to keep the edges from browning too much more than the rest of the pie while baking.

I failed miserably at making pie crusts until I found this one. It's the only one I've used since. The vinegar helps tenderize the dough with no aftertaste when it's baked. This dough makes enough for 20-30 crusts. For a smaller batch (4-6 crusts) recipe, see recipe #100064. This is the pie crust my mother used when she annually made hundreds of pies for the county fair pie booths of her church and the local Sr. Center. Time is for preparation only.

15 cups flour
1 tablespoon salt
1/2 cup sugar, plus
2 teaspoons sugar
1 (3 lb) can Butter Flavor Crisco, chilled (or other shortening)
5 tablespoons white vinegar
water
5 eggs

Steps:

  • Cut flour, salt, sugar and half of Crisco together until crumbly, then cut remainder of Crisco in until size of peas; set aside.
  • Put vinegar in a 2 quart liquid measuring cup.
  • Fill to 2 1/2 cup mark with cold water.
  • Add eggs and beat with fork.
  • Drizzle over dry ingredients; stir with fork.
  • Turn onto lightly floured board and knead approximately 5 times, until no longer "sticky".
  • Divide by 1/2-3/4 cup measure.
  • Roll out on a lightly floured surface, using as little flour as possible and handling as little as possible.
  • Bake empty shells at 400°F for 10-12 minutes on the bottom rack of the oven.
  • Cooking pies on the bottom rack of the oven will help prevent over browning of the top and soggy crusts on the bottom.
  • This dough freezes extremely well; simply flatten divided dough into a disk and put into a Ziploc bag, removing all air; thaw in fridge and roll out as directed.

AUNT MILLIE'S BREAKFAST CASSEROLE

This is a "make ahead" recipe and is quite easy on the budget. It can also be changed up for what you have on hand ... very user-friendly. My aunt in the mountains of West Virginia is a great cook and I adapted this to meet our tastes from her recipe. I've made this several times and always receive positive remarks, including one of my sisters-in-law who gave just one word ...."WOW!!".... which is one of the best compliments you can get from a family member! I normally make it with fresh/frozen vegetable ingredients, which is the recipe posted. My husband is a meat-eater so I'll make another smaller version with what he likes (I'll brown up or cook the selection of meat(s) and cut them up before adding to the first five ingredients.). This is quite a tasty, very filling and satisfying meal. Enjoy!

2 large russet potatoes, peeled and grated
12 large eggs (Substitution suggestion provided @ bottom)
1 cup milk
1 1/2 cups colby-monterey jack cheese, shredded, 1 cup reserved
1 teaspoon salt and pepper (to taste)
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1/2 cup white button mushrooms, cleaned and sliced
8 ounces frozen spinach, well-drained
1 medium tomatoes, seeded and diced
1 medium white onion, chopped
1/2 cup green onion, chopped

Steps:

  • Grease 13-in. x 9-in. baking dish.
  • Line baking dish with grated potatoes, pressing potatoes up the sides, into the corners, and no more than 1/4" thickness covering the bottom. You may salt and pepper the potatoes lightly if you wish, to taste.
  • Drain spinach in paper towel lined collander. Be sure to press as much of the water out as possible. Best way is to quarter-fold about three to four additional paper towels and press down onto the spinach in the collander. Replace the paper towel in the collander as needed until the spinach appears to be nearly "dry". Set aside.
  • Mix thoroughly together the eggs, milk, 1/2 cup shredded cheese, and all the vegetables including the well-drained spinach; Salt and pepper, to taste.
  • Pour egg mixture into potato-lined baking dish. Top with remaining shredded cheese. If not baking right away, cover dish with plastic wrap or lid; Refrigerate up to 24 hours.
  • When ready to bake, preheat oven to 350 degrees, remove cover and put dish in oven 30-45 minutes or until inserted knife comes out clean.
  • NOTE: If you're watching your figure, you may substitute 6 eggs with three 2-serving containers of Egg Beaters or use 1 carton Egg Beaters for all 12 eggs.

3/4 cup shortening, plus
2 teaspoons shortening (solid vegetable or lard)
1/3 cup cold water

Steps:

  • Cut shortening into flour with a pastry blender or with two butter knives until it resembles a coarse meal.
  • Add cold water gradually and mix until the flour/shortening comes together to form a ball that holds its shape and is not sticky. If necessary, add more water or flour.
  • Divide ball in two, and roll each separately into a circle large enough to fit your pie pan.
  • For a double crust filled pie, place one shell into pie pan. Add pie filling and top with other crust. Bake as directed on pie filling recipe.
  • For 2 single crust pies, place each shell into 2 pie pans, add filling and bake as directed on pie filling recipe.
  • For 2 single crust pre-baked shells, place each shell into a pie pan and bake at 400 degrees for 10 minutes or until golden brown. Cool before filling.

2 cups unbleached flour
1/3 teaspoon baking powder
1/2 teaspoon salt
1/2 cup Wesson Oil
1/4 cup milk
1 tablespoon milk
1 tablespoon sugar

Steps:

  • Preheat oven to 425°.
  • Mix together oil and milk.
  • Mix dry ingredients, whisk to combine.
  • Mix all ingredients well to form a soft dough.
  • Dampen table and put a strip of wax paper over the damp area.
  • Take 1/2 of dough and place another piece of waxed paper over the dough.
  • Roll to desired size and place in pie plate. Roll the second crust.
  • Add desired fruit filling, canned or fresh.
  • Top with second pie crust. Brush lightly with milk and sprinkle with sugar.
  • Make a few small slits with a knife. Trim off excess dough. cover with foil to prevent burning.
  • Bake for 20 minutes at 425°, remove foil.
  • Reduce oven temperature to 400° and bake 20 minutes longer, until crust is golden brown.

2 cups sliced peaches
2 cups raspberries

Steps:

  • Heat oven to 400 degrees F.
  • Fit piecrust into a 9 inch pie dish. Place fruit in pie crust and spread evenly.
  • Combine half and half, egg, sugar, flour, cinnamon and salt in a small bowl and mix until well blended. Pour over fruit.
  • Bake for approximately 50 minutes or until center is set. Cool completely before serving.
