3/4 cup butter (185 g)
3/4 cup caster sugar (185 g)
3 eggs, beaten
1 1/2 cups self-rising flour (185 g)
1 pinch salt
1/2 cup strong black coffee
2 -3 teaspoons sugar
1 tablespoon rum, overproof
300 ml whipped cream
1/2 teaspoon vanilla essence
2 -3 tablespoons slivered almonds, toasted

Steps:

  • Preheat oven to 190 deg C (375 deg F).
  • Cream butter and sugar until light, beat in eggs gradually and fold in flour and salt with metal spoon, turn into greased ring mould cake tin (bundt) and bake 25 minutes.
  • Cool cake and after it is cool return to mould ready for pouring in coffee - sweeten coffee and flavour with rum and slowly pour over cake whilst in tin.
  • Turn onto plate and cover with whipped cream flavoured with vanilla and decorate with toasted slivered almonds.

1 cup flour
3/4 cup ground almonds
3/4 cup sugar
4 eggs
1 tablespoon strong black coffee (Mocha)
3/4 cup sugar
1/2 cup butter
3 egg yolks
1/2 cup strong black mocha-flavored coffee

Steps:

  • Directions for Cake:.
  • Separate the egg yolks and whites.
  • Beat the egg yolks and sugar together until creamy.
  • Add the ground almonds and the tablespoon of coffee.
  • Beat the whites to a stiff froth. Fold this in alternately with the flour, until the whole is stiff but quite light.
  • Grease 2 cake-tins and dust with flour.
  • Bake in a moderate oven (350) for about 30 minutes.
  • Fill AND cover with Mocha cream.
  • Directions for Mocha Cream:.
  • Beat the egg yolks with the sugar.
  • Add the coffee and stir well.
  • Put in a double boiler and cook until the mixture is like a creamy custard.
  • Allow to cool.
  • Beat the butter to a cream. Mix this in with the custard.
  • Spread the cream on top of the lower half of the Torte. Place the other half on top. Cover the top and sides with the remainder.
  • If you can get little imitation coffee beans in chocolate or sweets, they make a nice decoration. Otherwise, use real coffee beans.

  • Preheat the oven to 170°C/fan oven 150°C/325°F/Gas mark 3. Line two 20cm round sandwich tins with baking paper. Beat together all of the ingredients except for the coffee and walnuts. Ensuring that your butter is soft will make this task easier. Add the coffee and walnuts and beat further until the mixture is well combined.
  • The mixture should drop from the spoon when tapped on the bowl. If it doesn?t add a little more hot water. Divide the mixture evenly between the two prepared tins and bake for approximately 30 minutes or until a skewer comes out clean. Mine took 40 minutes.
  • While the cakes are cooking, make the syrup: place the coffee and sugar in a heatproof bowl and then add the boiling water. Stir until both the coffee and sugar have dissolved. You will need to stir briskly to ensure this.
  • When the cakes are cooked, leave in the tins, on a wire rack. Prick them all over while they are still hot ,and spoon the syrup over both sponges, trying to distribute it as evenly as possible.
