AUTHENTIC APFEL STRUDEL
This is a German authentic apfelstrudel recipe filled with fresh apples and rum soaked raisins, wrapped around with a hand made pastry dough.

Steps:
- Mix lukewarm water, oil, vinegar and salt in a big bowl.
- Stir in about half the flour with a spoon until well combined, then gradually add the remaining flour until it comes together and you can work it with your hands. Add more flour if it is too sticky.
- Knead the dough until smooth for about 10 minutes, either in the bowl or on a working surface. Slam the dough onto the worksurface a few times to enhance gluten development, yielding a very elastic dough.
- Shape the dough into two smooth balls. Brush a clean bowl with oil, put the dough into the bowl and brush it with oil.
- Cover the bowl with a lid or plastic wrap and let it sit for 1 hour at room temperature.
- Melt half of the butter in a pan over medium heat and add the breadcrumbs. Toast them, stirring constantly, until they are golden. You can also melt in the microwave, add breadcrumbs, and toast in an oven at 350 °F until golden brown. Make sure to keep an eye on it so they don't burn. Remove from the heat and let cool.
- In a bowl, mix sugar, cinnamon, cooled breadcrumbs and set aside.
- Soak the raisins in rum and set aside in a separate bowl.
- Wash and peel apples. Slice very thin, about ⅛ inch thick. Cover in lemon juice to stop browning. Set aside in a large bowl.
- Roll out each dough ball into a rectangle shape and make it as thin as you can without ripping.
- On half of the dough sprinkle the breadcrumb cinnamon sugar mixture on half of each dough.
- Next add apple slices and top it with rum raisins.
- Fold in the long sides first then start rolling up the short side starting with the part where all the apples are. Roll slowly to make sure the folded sides are not coming undone.
- Lay out each roll seam down on a baking sheet.
- Melt rest of butter and brush on top of the pastry roll.
- Bake at 350 °F for 20-30 minutes or until golden brown crust.
- Let cool and dust on powder sugar on top. Slice and enjoy.

APPLE STRUDEL RECIPE
Apple Strudel is much easier to make from scratch than you think and tastes amazing dusted with powdered sugar! Everyone will love this traditional Apfelstrudel that has a flaky crust and is filled with juicy spiced apples.

- In the bowl of a stand mixer fitted with the paddle attachment combine melted butter, flour, salt, and lukewarm water. Mix at medium speed about 1 minute until a smooth and elastic dough forms.
- In a small saucepan (with a lid) bring water to a boil then remove the pot from the heat, empty the pot and dry it with a dish towel. Line the pot with a sheet of parchment paper, put the dough into the pot and put the lid on. Let sit for 30 minutes at room temperature.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Meanwhile, in a small bowl combine raisins and rum. Let sit for 30 minutes. Then discard the rum.
- Peel, core, and cut the apples into small stripes (batonnets, see image above). Combine apples with lemon juice. Add cinnamon, sugar, raisins, almonds, and vanilla extract. Set aside.
- Lay a thin kitchen towel preferably with a pattern flat on the counter. Sprinkle with flour. Roll the dough out as thin as you can. Brush it with a little bit of melted butter.
- Then use your hands to carefully stretch it until it is about 18x12 inches (45x30 cm) big and you're able to see the pattern of the dish towel through the dough.
- Brush half of the melted butter over the rolled out dough.
- The long side should be facing you. On the right side of the rectangle, leave a few inches space, then sprinkle the breadcrumbs top to bottom over the dough in a 6-inch thick line. Leave a 2-inch margin at the top and bottom of the strip.
- Pile the apple filling on top of the breadcrumbs. Use a slotted spoon so the liquid stays in the bowl.
- Fold the 2-inch margin at the top and bottom of the dough over onto the filling then roll up the strudel from the short side with the help of the towel. Tuck the ends.
- Carefully transfer the Strudel to the prepared baking sheet, seam side down. Brush with a little bit of melted butter.
- Bake for about 50 minutes in the lower third of the oven, until lightly golden on top. Brush strudel with remaining melted butter every 20 min while in the oven.
- Let cool for 10 minutes then sprinkle with powdered sugar and serve warm.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. Arrange apple filling down the middle of the pastry lengthwise. Fold the pastry lengthwise around the mixture. Seal edges of pastry by using a bit of water on your fingers, and rubbing the pastry edges together. Whisk egg and milk together, and brush onto top of pastry.

- NOTE: I find that rolling out the puff pastry on a lightly floured sheet of parchment paper is ideal. This helps with the rolling of the strudel and for the transferring of the filled strudel onto a baking sheet a breeze! Filling: Peel and remove the core. Slice the apples thinly. NOTE: I invested in an apple peeler, corer, that makes this process so easy to do. I simply attach the apple to the fork, turn the crank and my apple is peeled, cored and sliced thin very quickly! I also drop the prepared apples in a bowl of cold water, with the juice of half a lemon (to prevent browning). If using Clearjel thickener, add it to the sugar and mix together. Add the sugar, lemon juice, golden raisins, boiled apple cider** (if using)and cinnamon to the apples and mix to combine. Set aside. **Boiled cider is a heavily concentrated cider that has been boiled down and reduced to a very thick syrup. I use this to enhance my apple pies, crisps and strudels. It's also a great way to make apple juice, or pour it over pancakes. Gently roll the sheet of puff pastry out to smooth out the fold marks into a rectangular shape. Brush an even layer of melted butter onto the pastry. I "plop" about 3 tablespoons of sour cream right down the center and spread it evenly, leaving at least a 2-inch border all the way around. The apple mixture might become watery, as the apples begin to release their juices. So, use a slotted spoon (or clean hands) to add half of the apple mixture into the center of the pastry sheet-- leaving at least a 2-inch border. Lift up one side of the parchment paper to cover the center filling. Lift up the other side to cover the fruit entirely. Pinch together the long seam and both ends, to seal the pastry. Tuck the ends over the top and gently press to seal. Lift the parchment paper over a parchment lined baking sheet and gently roll the strudel on to the sheet, with the sealed side down. Repeat the process with the second puff pastry sheet. At this point, you can refrigerate the strudel until you are ready to bake it (within a few hours). Preheat the oven to 400°F. Brush the egg wash over each strudel and sprinkle with coarse sugar (if using). Using a sharp knife, make diagonal slices across the top 2-3-inches apart. Bake between 35 to 40 minutes, or until golden brown. Allow to cool on a baking rack, for at least five minutes. The strudel is best served warm or at room temperature, and is best eaten on the day that is is baked. If desired, you can whisk powdered sugar all over the top right before serving. Fresh whipped cream is a lovely garnish, as well.

- Place flour in a mixer bowl; beat in 1/4 cup oil (mixture will be slightly crumbly). In a small bowl, slowly whisk warm water into beaten egg; add to flour mixture, mixing well. - Portion the dough into 3 equal sized pieces. Either with help of a kitchen scale or you can eyeball it.
- Shape each piece into a smooth ball, brush it with vegetable oil and wrap it with cling film. You can prepare this the day before and store the dough in the fridge. (The dough will be even easier to work if you place it into a small bowl and cover it with sunflower oil for about 30 min.)
