2 tablespoons olive oil
1 cup green onion, chopped
15 oz fresh spinach
4 cloves garlic, chopped
1 cup feta cheese
½ cup ricotta cheese
¼ cup fresh dill, chopped
¼ cup fresh parsley, chopped
1 teaspoon salt
1 teaspoon pepper
8 sheets phyllo dough

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large pan over medium heat, cook the green onions and garlic in the olive oil until soft.
  • Add half the spinach, giving time for some to cook down before adding the rest.
  • Once the spinach has cooked down, transfer to a medium mixing bowl to cool slightly.
  • Add the feta, ricotta, egg, dill, parsley, salt and pepper, and mix until evenly spread.
  • Set in refrigerator.
  • Lay out one sheet of phyllo dough on a dry surface. Using a pastry brush, coat evenly with olive oil.
  • Add another sheet of phyllo dough on top of the oiled sheet and repeat the oiling process. Continue until there is a stack of 4 oiled sheets. Repeat process on a new stack with remaining 4 sheets.
  • Cut your dough into 4 sections using a pizza cutter.
  • With a single section, add a spoonful of your spinach mix and begin folding over your pastry, brushing each fold with oil. Repeat this process for the remaining sections.
  • Bake in a preheated oven for 25-30 minutes or until golden brown.

Authentic Greek Spinach Pie called Spanakopita is a savory Greek pie made of crispy layers of phyllo dough and a delicious filling of spinach and feta cheese in the middle.

1 lb Filo dough
2 cups butter
1 cup olive oil
1 cup Feta
4 oz cottage cheese
6 eggs
1 onion (chopped)
3 scallions (chopped)
½ cup parsley (chopped)
¾ cup rice (cooked)
24 oz spinach (chopped)

Steps:

  • Wash spinach and cut stems into small pieces and put in a pot of cold water.
  • Leave for 2 minutes soaking then drain the spinach in a colander.
  • Place spinach in a bowl, mix 6 eggs to pour into the spinach and mix.
  • Put 2 tablespoon of butter and saute onions and parsley in a pan. Once it is translucent, pour over the spinach and mix.
  • Crumble the feta over the spinach mix, add cooked rice, then mix everything together. Add pepper as desired to the mix.
  • Melt the butter and mix with olive oil in a bowl.
  • Prepare a 9 ½" X 13" baking dish and brush the bottom and sides of the dish with butter mix.
  • To assemble, line the baking dish with two sheets of phyllo (fillo) letting them cover the sides of the dish then brush with butter mix. Add two sheets in the same way and brush them with the butter mix. Repeat until two-thirds of the fillo box is used.
  • Evenly spread the spinach and feta filling over the crust. Tap it down to make it nice and firm. Top with two more sheets, and brush with butter mix.
  • Continue to layer the phyllo (fillo) sheets, two-at-a-time, brushing with butter mix, until you have used up all the sheets. Brush the very top layer with butter mix.
  • Fold the flaps or excess from the sides and brush the folded sides well with the butter mix.
  • Puncture with a paring knife on the top a few times to let it vent while cooking.
  • Bake at 325 degrees for 45-60 minutes, or until the fillo crust is crisp and golden brown.
  • Remove from the oven and cut into squares and serve. Enjoy!

2 red onions, halved and sliced
1 spring onion, finely chopped (optional)
2 cloves of garlic, crushed
500g spinach, washed and roughly chopped (18 ounces)
a pinch of grated nutmeg
200g feta cheese, crumbled (7 ounces)
2 eggs, beaten
1-2 tbsps fresh dill, chopped (optional)
butter
salt and pepper to taste
300g all-purpose flour (10.5 ounces)
5 tbsps olive oil
1 tbsp red wine vinegar
1 tsp salt
130-150g water (1/2- 3/4 of a cup)

Steps:

  • To prepare this spanakopita recipe start by making the phyllo dough first. (For step by step instructions Homemade phyllo dough). Alternatively use commercial phyllo dough.
  • When done, heat the oven to 200C/fan 180C/gas 6.
  • To prepare the filling for this spanakopita recipe, sauté the onions in a large knob of butter until soft and turning golden. Add the garlic and cook for a couple of minutes. Add the spinach in batches and cook until wilted. Cool, then tip into a bowl (leaving behind any excess liquid from the spinach) and mix in the nutmeg, feta, eggs, spring onion and season.
  • For this spanakopita recipe you will need a non stick baking pan, about 25cm. Put the first sheet of filo in the pan and sprinkle with olive oil, letting the excess hang over the sides. Keep going with the rest of the sheets, turning a little before adding each additional pastry sheet and sprinkling with olive oil. Use 2-3 phyllo sheets, depending on how thick your phyllo is. Tip in the filling of the spanakopita and fold over the excess pastry to cover. If you like to prepare a larger pan of spanakopita for a big crowd, double the ingredients for the filling and use a 25*35 cm baking dish. Layer the 2-3 phyllo sheets to form the bottom of the spanakopita, tip in the filling and top with 2-3 more phyllo sheets.
  • Brush the top of the spanakopita with olive oil and scar with a sharp knife. Bake in preheated oven for about 60 minutes until the phyllo is crisp and golden.
  • Leave the spanakopita cool down for 10-15 minutes before cutting into pieces. Serve the spanakopita with Greek salad. Enjoy!

1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach, rinsed and chopped
½ cup chopped fresh parsley

½ cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
¼ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
  • In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.

Greek Spinach & Herb Pie (Without Cheese) A.k.a. Spanakopita image

Spanakopita can be made with or with out cheese. The no cheese version is as popular with Greeks as the version with cheese, and is a popular Lenten dish. Although the name for this dish is often used for the spinach pie with cheese, traditional spanakopita does not include cheese.**Cooking time does not include the 30 minutes it needs to sit before serving.**

2 lbs fresh spinach, washed
1/2 cup fresh dill, finely chopped
1/2 cup fresh parsley, finely chopped
1 garlic clove, finely chopped
4 spring onions, finely chopped
1/2 medium leek, finely chopped
Pam cooking spray
1/2 lb phyllo pastry sheet (approx. 14 sheets)
sea salt, to taste
fresh ground pepper, to taste

Steps:

  • Coarsely chop spinach and place in a colander. Salt lightly and let drain for 10 minutes. Press or squeeze to remove all excess liquid.
  • In a large mixing bowl, combine spinach, dill, parsley, garlic, onions, leek, pepper, and mix well until ingredients are well blended.
  • Preheat the oven to 350°F (175°C).
  • Spray 9" round or square pyrex plate with cooking spray. When laying the sheets in the pan, leave an overlap of phyllo outside the pan rim all the way around. Lay half the phyllo sheets on the bottom, spraying each one lightly with Pam cooking spray.
  • Spoon in the spinach mixture and spread evenly. Fold the extending phyllo in over the mixture. Lay the remaining phyllo sheets on top, spraying each with cooking oil except the top sheet. Tuck or tim eadges. I like to kind of ruffle mine.
  • Bake at 350°F (175°C) for 45-50 minutes in the middle of the oven. When done, remove from the oven and allow to cool 1/2 hour before serving.
