A delectable fruit sauce makes this easy pork chop dish Sunday-special. It's an autumn favorite when the children and grandchildren gather at our place for dinner after church. The chops simmer to a wonderful tenderness in just an hour. -Bertha Johnson, Indianapolis, Indiana

6 pork loin chops (1/2 inch thick)
1 tablespoon butter
12 dried apricots
6 pitted dried plums (prunes)
1-1/2 cups apple cider or juice
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon curry powder
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • In a large skillet, brown pork chops in butter for 1-2 minutes on each side. Arrange apricots and plums over pork. Combine the cider, sugar, salt and curry; pour over fruit. Cover and simmer for 1 hour. Remove chops and fruit and keep warm. Combine cornstarch and water until smooth; add to pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork and fruit.

This is a fairly common autumn dish in Indiana. It always reminds me of local harvest festivals. Crimson and gold leaves under foot, hay rides, the crisp sweet smell of the air...comfort food, pure and simple. There are many variations, but this is the favorite in our home. To be honest, I've never measured the spices before I sat down to write this, so please feel free to adjust to your own tastes.

1 small yellow onion, thinly sliced
1 cup peeled and thinly sliced baking apples (preferably Cortland)
2 tablespoons olive oil, or as needed
1 tablespoon apple cider vinegar
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 pinch brown sugar, or to taste
3 pork chops
salt and ground black pepper to taste
1 pinch paprika, or more to taste
1 tablespoon apple cider vinegar
1 tablespoon olive oil

Steps:

  • Combine onion, apple, 2 tablespoons olive oil, 1 tablespoon vinegar, thyme, and rosemary in a skillet; cook and stir mixture over medium heat until onion is lightly browned and apples are softened, about 15 minutes. Sweeten with brown sugar to taste. Set aside and keep warm.
  • Arrange pork chops in a separate skillet; season with salt, pepper, and paprika. Drizzle 1 tablespoon vinegar and 1 tablespoon olive oil over pork chops. Cook pork chops over medium heat until no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Transfer pork chops to a serving dish and top with apple-onion topping. Serve immediately.

4 pork chops, 1/2-inch thick (about 2 pounds)
1 (10 3/4 ounce) can Campbell's condensed cream of celery soup (Regular or 98% Fat Free)
1/2 cup apple juice or 1/2 cup water
2 tablespoons spicy-brown mustard
1 tablespoon honey
generous dash ground black pepper
hot cooked medium egg noodles

Steps:

  • Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides.
  • Stir the soup, apple juice, mustard, honey and black pepper in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the pork is cooked through. Serve the pork and sauce with noodles.
  • SERVING SUGGESTION: Serve with a sauteed squash medley: zucchini and yellow squash with red onion and garlic. For dessert serve apple crisp.

1 tablespoon canola oil
2 cups shredded cabbage
2 tablespoons brown sugar
1 tablespoon minced fresh parsley
2 medium potatoes, peeled and sliced 1/4 inch thick
1 cup cut fresh or frozen cut green beans
1 to 1-1/2 teaspoons lemon-pepper seasoning
3/4 cup apple juice
1/4 cup seasoned bread crumbs
1 tablespoon butter, melted

Steps:

  • In a large skillet, brown chops in oil on both sides; remove and set aside. Toss cabbage with brown sugar and parsley; place in an 11x7-in. baking dish. Top with potatoes and beans. Arrange chops over vegetables. Sprinkle with lemon-pepper. Pour apple juice over all. , Cover and bake at 350° for 45 minutes or until the pork chops and vegetables are tender. Combine the bread crumbs and butter; sprinkle on top. Bake for 15 minutes longer.

1 teaspoon ground cinnamon
1 small acorn squash
1 large unpeeled red cooking apple
3/4 cup Original Bisquick™ mix or Reduced Fat Bisquick™ mix
1 teaspoon seasoned salt
1/4 teaspoon pepper
9 saltine crackers, crushed
1 egg
2 tablespoons water
6 pork boneless loin chops, 1/2 inch thick (1 1/2 pounds)

Steps:

  • Heat oven to 350°F. Mix brown sugar, butter and cinnamon until crumbly; set aside. Cut squash into 1/2-inch rings; remove seeds. Cut apple into chunks.
  • Mix Bisquick, seasoned salt, pepper and cracker crumbs. Mix egg and water. Dip pork into egg mixture, then coat with Bisquick mixture.
  • Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 6 to 8 minutes, turning once, until coating is brown.

3 boneless pork loin chops, 1/2 inch thick (3/4 lb)

Steps:

  • Heat oven to 350°F. In small bowl, mix brown sugar, margarine and cinnamon until crumbly; set aside. Cut squash into 1/2-inch rings. Cut rings in half; remove seeds. Cut apple into chunks.
  • In shallow dish, stir together Bisquick® mix, seasoned salt, pepper and cracker crumbs. In another shallow dish, mix egg white and water. Dip pork into egg mixture, then coat with Bisquick mixture.
