AVOCADO TOAST
Avocado toast is creamy, crisp and so satisfying. It's a delicious and simple breakfast, snack or light meal! It's best consumed immediately, since the avocado browns over time. Recipe as written yields 1 slice of basic avocado toast; multiply as necessary.

Steps:
- Toast your slice of bread until golden and firm.
- Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it's as smooth as you like it. Mix in a pinch of salt (about 1/8 teaspoon) and add more to taste, if desired.
- Spread avocado on top of your toast. Enjoy as-is or top with any extras offered in this post (I highly recommend a light sprinkle of flaky sea salt, if you have it).

- Mash the avocado with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.
- Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

AVOCADO TOAST "CINNAMON" ROLLS
You could be trendy and put fresh avocado on toast... or you could slather your avocado on a warm, cheesy "cinnamon" roll.

- In the bowl of a stand mixer, whisk to combine milk, melted butter, eggs, egg yolk, sugar, garlic powder, onion powder, salt, pepper and yeast. Add 1/4 cup parmesan cheese and flour, then place on a mixer with dough hook attached. Mix on low for about 5 minutes until dough is smooth and elastic.
- Coat a large bowl lightly with olive oil. Transfer dough to bowl, cover with plastic wrap and place in a warm draft-free place to rise until doubled, about 1 1/2 to 2 hours.
- Preheat oven to 350 degrees F. Coat a 13x9 inch baking pan with olive oil. Dust counter liberally with flour and roll dough out into a large rectangle, about 16x12. The longest edge should be parallel with the edge of the counter. Spread the cream cheese over the dough, then top with 1/2 cup grated parmesan cheese, shredded mozzarella, pinch red chili flakes and 2 tablespoons chives. Roll the dough into a tight cylinder, then cut the dough into twelve 1 1/2-inch rounds. Place them side by side, cut side down, in prepared baking dish.
- Uncover, brush with egg wash and bake rolls until golden and cooked through, 30-35 minutes.
- In a medium bowl, gently mash avocados with lime juice and salt, leaving some larger pieces of avocado. Spoon onto the baked rolls and spread to cover. Top with pinch chili flakes, chopped chives, drizzle of olive oil and flaky sea salt.

- Make the dough:
- In the bowl of a stand mixer fitted with a paddle attachment, add flour, yeast, and sugar. Mix on low speed until well combined. Add eggs and mix on low to combine. In a small pot, heat milk, butter, and cinnamon over medium-low heat until butter is melted and mixture is between 120 and 130°F (use a thermometer).
- Add warm milk mixture and salt to stand mixer. Beat on low speed 2 to 3 minutes, occasionally scraping down sides of bowl with a spatula. Beat on medium speed until smooth and elastic, 2 to 3 minutes. Dough will be very sticky.
- Lightly oil a large bowl with cooking spray. Form dough into ball and transfer to bowl, turning to coat. Cover bowl with plastic wrap then kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 2 hours.
- While dough rises, cut 2 pieces of parchment to fit 2 9-inch round cake pans. Butter pans, line with parchment, and butter parchment.
- Make the filling:
- Mix brown sugar, cinnamon, nutmeg, and salt in medium bowl.
- Make the glaze:
- In a medium bowl, whisk together the powdered sugar, milk, vanilla, and salt.
- Assemble and bake:
- Preheat to 375°F and position rack in center of oven. Punch down dough and transfer to floured work surface. Roll out to 16-by-12-inch rectangle. Spread butter over dough, leaving 1/2-inch border on the long sides. Sprinkle filling mixture evenly over butter, then add pecans. Starting at a long edge, roll dough toward you into a log, pinching gently to keep it rolled tightly. With seam side down, cut dough crosswise with a thin sharp knife into 16 equal slices.
- Divide rolls between baking dishes, arranging cut side up; rolls will be touching. Cover baking dishes with plastic wrap then kitchen towel. Let dough rise in warm draft-free area until almost doubled in volume, 40 to 45 minutes.
- Bake rolls until tops are golden, 18 to 20 minutes. Remove from oven and invert immediately onto rack. Cool 10 minutes. Turn rolls right side up. Drizzle glaze over rolls and serve immediately.
AVOCADO TOAST
It may seem silly to give a recipe for avocado toast, but there is an art to it, as with most things that are both simple and perfect. Here, you want to make sure of a few things: that the bread you use is sturdy and has some taste; that there's enough salt and citrus to bring out the avocado's flavor; and that you use a good olive oil to bring it all together.
