CLASSIC BREAD MACHINE DINNER ROLLS
This recipe produces a light and airy slightly-sweet dinner roll you can mix up in your bread machine. Shape by hand and bake in your conventional oven for the best of both worlds.

- Place 1 c milk (227 gr), 1 egg (50 gr), 3 T sugar (40 gr), 1 t salt (6 gr), ¼ c butter (57 gr, finely chopped), 3 c (360 gr) unbleached all-purpose flour, and 2 t (6 gr) instant yeast into your bread machine pan in the order listed. Select the DOUGH cycle and press START.
- Check the dough at least twice during the mixing and kneading phase by lifting the lid to take a peek. The first time, look immediately after the machine starts mixing to ensure the paddles are engaged correctly. The dough should start to form a ball. Look again 10-15 minutes into the DOUGH cycle to assess the consistency of the dough. For most recipes, the dough should stick to the side, then pull away cleanly.If your dough is too wet, add flour one tablespoon at a time.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right. - When the dough cycle finishes, the dough should be doubled in size. If not, leave the dough in the bread machine a few more minutes until you can punch two fingers into the dough and it fills in gradually. If it doesn't fill in, it has risen too much. If the dough bounces right back and the dough fills in immediately, then it needs to proof (rise) a little bit longer. (This may happen if your kitchen is cold.)
- Pull dough out of the machine and onto a floured surface. Lightly knead the dough to remove any large bubbles, and form it into one large ball. Divide in half, making 2 balls. Divide each of those balls into 8 equally-sized lumps.
- Make a ball from each piece of dough by pulling the dough toward the bottom while turning the dough (see video) or use whatever method works best for you.
- Arrange balls into 2 well-greased 8 or 9-inch round or square pans (non-stick is better) and cover with a tea towel or a cheap shower cap. Place in a warm spot until almost doubled. (I put mine in the microwave where I have already boiled a cup of water for 5 minutes to make it warm and steamy.)
- Heat your conventional oven to 350˚F.
- Bake in the oven until golden brown, usually about 12-15 minutes. Rotate to get even browning. The internal temperature should reach 190˚F.
- Within 5-10 minutes, dump baked rolls out of the pan and let cool on a rack or paper plate so they won't get soggy from the steam they produce. Brush with melted butter if desired.

BEST BREAD MACHINE DINNER ROLLS
Soft, fluffy and golden brown, these delicious bread machine dinner rolls are perfect for all occasions.

- Add all ingredients to bread machine in the above order, and press "dough" setting.
- When done, transfer dough to a lightly-floured counter top and shape into a ball.
- Cut ball in half, and then cut those two pieces in half and so on, until you have 16 pieces. (sprinkle more flour on your counter if dough starts to stick)
- Shape your pieces into round buns, and place in a sprayed 9 x 13 baking dish or 2 smaller dishes. Leave about an inch between buns.
- Brush buns with melted butter, and cover the baking dish with Plastic Wrap. Set in warm spot (about 80 degrees Farenheit) until buns have doubled in size - about 40 mins. (I usually heat my oven to about 200, and then turn my oven right OFF, and place the dish in there with the door open a crack.
- Once doubled, remove plastic wrap, and bake 12-15 minutes at 375 degrees.

EASY BREAD MACHINE DINNER ROLLS

- Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
- Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.
- Heat oven to 375 degrees F. Uncover rolls. Bake 15 minutes or until golden brown. Serve warm or cool completely on wire rack.

- In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide and shape into 24 balls. Roll each into an 8-in. rope; tie into a loose knot. Tuck ends under., Place 1-1/2 in. apart on greased baking sheets. - Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
- Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
- Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
- Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

SWEET DINNER ROLLS
This dough makes wonderful dinner rolls but can also be used to make cinnamon rolls. Mixing it in your bread machine but bake the rolls in the oven. They're light, soft and sweet.

- Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
- When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
- Bake in preheated oven for 10 to 15 minutes, until golden.

- Add water, 3 eggs, butter, salt, flour, 2 Tablespoons sugar and yeast to bread machine pan in the order suggested by manufacturer.
- Select dough/manual cycle. When cycle is complete, remove dough from machine to a lightly floured surface.
- If necessary, knead in enough flour to make dough easy to handle.
- Shape into rolls as desired.
- Cover and let rise in a warm, draft-free place until almost doubled in size, 20-30 minutes.
- Combine lightly beaten egg and 1 tablespoon sugar, brush onto tops.
- Bake at 375°F for 12-14 minutes or until done.
RICH BREAD MACHINE DINNER ROLLS
Adapted from a 1964 Betty Crocker Cookbook (my Grandmother's). This is one of our favorites, and making rolls in the bread machine is a snap! These can be shaped almost any way you like. Great dough for making sweet rolls, also!

Steps:
- Add all ingredients in order specified by your bread machine manufacturer.
- Press dough cycle and let run until finished.
- If you don't have a dough cycle, let the machine run through the first kneading and first rise and then remove.
- Take dough out of bread machine and put on lightly floured surface.
- Roll into thick log with hands and cut into 12 equal pieces.
- Shape as desired and put onto a greased cookie sheet or jelly roll pan.
- Cover with a clean towel and let rise in a warm area for 30 to 45 minutes or until doubled in size.
- (Hint: Turn oven on at 150 degrees for one minute, turn off and let rolls rise in warm oven) When ready, preheat oven to 400 degrees.
- Bake rolls at 400 degrees for 12 to 15 minutes or until golden brown.
