1 pound fresh, frozen or canned whole baby carrots
Water
2 tablespoons butter
1/4 cup brown sugar

Steps:

  • Cook carrots in a small amount of water until tender. Drain. In a saucepan, combine butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through.

2 bags (16 oz each) ready-to-eat baby-cut carrots
1 medium onion, cut in half, sliced
1/4 teaspoon salt
1/3 cup honey
1/3 cup apricot preserves
2 tablespoons chopped fresh parsley

Steps:

  • In 4- to 5-quart slow cooker, place carrots and onion. Sprinkle with salt.
  • Cover; cook on Low heat setting 9 to 10 hours.
  • Discard liquid in cooker. In small bowl, mix honey and preserves; pour over carrots in cooker. Increase heat setting to High. Cover; cook 10 to 15 minutes or until hot. Sprinkle with parsley before serving. Carrots will hold on Low heat setting up to 2 hours; stir occasionally.

Kosher salt
1 pound baby carrots, tops removed but with a little green left attached (it's cute)
4 tablespoons butter
3 tablespoons brown sugar
1/2 lemon, juiced
1 clove garlic, smashed
3 sprigs thyme, picked
Pinch cayenne pepper

Steps:

  • Bring a pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Blanch the carrots in the boiling water. When they are cooked but still have some crunch, plunge them immediately into the ice water. When cool, use a clean tea towel to rub the skin off the carrots. Reserve.
  • To a large skillet add the butter, sugar, lemon juice, garlic, thyme, cayenne and about 1/2 cup of water. Bring the pan to medium heat swirling occasionally. When most of the water has reduced and the mixture seems homogenous, removed the garlic and add the carrots and stir until they are coated. Cook for another 2 to 3 minutes or until the carrots are completely coated and hot.
  • So good for my eyes!

APRICOT-MUSTARD GLAZE

2 tablespoons apricot jam or preserves
2 teaspoons stone-ground mustard
2 teaspoons apple cider vinegar
Freshly ground black pepper

Steps:

  • Combine the apricot jam, mustard, vinegar and lots of black pepper in the jam jar or a mason jar. Shake until well blended.
  • Use the glaze like you would a BBQ sauce. Brush on or pour over pieces of grilled or pan-seared chicken, pork chop or salmon just before it's done cooking and let cook for an additional 1 to 2 minutes.

The apricot glaze is simple to prepare, if you wish, some ginger to taste could be added to change the flavor.

3 to 4sprigs fresh Italian parsley 3strips lemon zest (3x½-inches), bitter white pith removed, cut into ½-inch pieces 1½teaspoons kosher salt, divided 6tablespoons good quality apricot preserves 3tablespoons fresh lemon juice 2tablespoons unsalted butter, at room temperature 2 baby carrots, fresh tops trimmed to 1-inch, peeled 16dried apricots, cut into ⅛-inch slices

Steps:

  • Remove the leaves from the parsley and place in the Cuisinart® Food Processor fitted with the metal "s" blade. Pulse to chop. Remove and reserve. Add the lemon zest and ½ teaspoon of the salt to the work bowl. Pulse to chop, then process continuously until zest is chopped. Add the apricot preserves, lemon juice, and unsalted butter. Process until smooth, about 30 to 40 seconds. Remove and reserve. Place the prepared carrots with the remaining salt in a 12-inch skillet and add water to cover. Bring to a boil and cook over medium high heat until crisp-tender about 6 to 8 minutes, water will evaporate as carrots cook. Add apricots and reserved apricot preserve mixture. Cook, stirring, until apricot mixture has thickened and carrots are glazed. Sprinkle with reserved fresh parsley. Serve immediately.

  • Drain thoroughly, return to saucepan.
  • Combine butter, jam, lemon juice, salt and mace.
  • Pour over cooked carrots.
  • Cook, stirring constantly until carrots are evenly glazed and heated through.

2 lb carrots, cut on diagonal
3 Tbsp butter or margarine
1/3 c apricot preserves
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 - 1 tsp freshly grated orange peel
2 tsp fresh lemon juice
parsley, for garnish

Steps:

  • 1. Cook scraped and cut carrots in salted water until just tender, about 20 minutes. Drain.
  • 2. Melt butter and stir in preserves until blended. Add nutmeg, salt, orange peel and lemon juice.
  • 3. Toss carrots with apricot mixture until well coated. Garnish with parsley and serve at once.
  • 4. Note: Good with Poultry or Pork.

1 cup water
1 cup apricot preserves
2 tablespoons cornstarch
¼ cup sliced, dried apricots
¼ cup golden raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Bring carrots and water to a boil in a saucepan over high heat. Reduce heat to medium, cover, and steam until the carrots are just tender, about 5 minutes.
  • Meanwhile, stir together the apricot preserves, cornstarch, dried apricots, and raisins in a saucepan. Place over medium heat, and cook until the mixture bubbles, thickens, and turns clear, 2 to 3 minutes.
  • Once the carrots have cooked, drain, and stir into the apricot preserves. Pour into a baking dish, and bake in preheated oven until the sauce has thickened further, and turned light brown, about 15 minutes.
